Santos Fuegos came highly recommended by several on the island and it did not disappoint. There are meals and then there are experiences…this was truly an experience. It’s very intimate, outdoor covered dining experience…the aroma of the wood-fired oven begins the experience before you enter. Mario began as our waiter, but by the end of the night we ended as friends. His level of detail, knowledge, passion and guidance through the menu was a level of service that is second to none. Our sharing of stories, vulnerable conversation and his genuineness made him more than a server…truly an individual who glows from within.
Back to the food…the toughest decision was what NOT to order. The attention to detail in every dish, the freshness and flavor of every bite…there is magic somewhere in the flames of the wood-fired oven. The drink menu was equally difficult to narrow as everything sounded intriguing. The blessing in disguise was there were only two dessert option, both were so unique and a perfect cap to such a dining experience.
I was able to experience one Michelin star restaurant on the island…there could easily be two.
