Sapphire Restaurant

Very good establishment and very respectful staffing and intelligent. Food was presented wonderfully and nice. I had trout cakes for appetizer and burger with side of mashed potatoes. I was very pleased and it’s pretty here and clean !

We went to Sapphire for a couples birthday dinner. With a reservation in advance we were seated immediately. Our driver was on a Monday night and the restaurant wasn't very busy. We ordered the Brisket Tacos for our appetizer. The corn tortillas with cheese grilled onto the outside are tasty. The brisket was shredded and moist without dripping. We both agreed the brisket needed something extra. Some kind of sauce, be out a smokey barbecue or a hot sauce would have definitely elevated them though! We ordered the Lamb Shank Pot Pie (which is deconstructed but that's not mentioned on the menu). The lamb was cooked perfectly. It was very tender and had good flavor. The "pot pie" was a flakey pastry served in decorative fashion with the lamb bone passing through it. The sauce in the dish was not the highlight. It had a base potato flavor to it, but seemed like it needed salt or something. We also ordered the Hanger Steak. This was served medium rare as requested and was pre-sliced. It had a great char on the outside which contrasted well south the beefy soft interior of each slice. The Truffled Ruffles are essentially thinly sliced potato ribbons fried into potato chips. I'm neutral on these. Basically just potato chips. The dish was served with broccolini which was well cooked with a medium to strong minced garlic flavor. I'm a broccoli fan and consider broccolini to be "fake broccoli", since it's not actually broccoli. But this was some of the best broccolini I've had. Overall our meal was very good. Not amazing. But good. Service was great though! Our waitress was attentive and very friendly. The atmosphere was quiet, well lit, and comfortable. It's a very nice and clean space.

Unsure why the kitchen was unable to make an adjustment for an anaphylactic allergy. Clams swapped for seasoned vegetables, paying the original price, seemed like a reasonable request. Other than this hiccup, all food I tried was delicious! I look forward to returning to try their dinner menu! 10/10 for flavor and friendly service from the server.

My family has been to The Sapphire 3 times. First time was absolutely amazing! Delicious food and above and beyond service, which made us come back a second time. Second time was just as fabulous and matched the quality of food and service that we had the first visit. The third time we went it was my mother’s birthday. The food was excellent and the service was absolutely awful. It ruined the whole entire meal. Kiley K was our server and needs to have more training. We had to ask for bread 3 times, did not deliver share plates with our mussels (there were four of us and two orders of mussels), had to ask her two times to open the bottle of wine we brought as we wanted to enjoy it with our entrees, and she asked us what we wanted for dessert and never gave us a dessert menu, so how would we know what we wanted for dessert. For the price point of this restaurant I expect way better service. First two times we went we had excellent servers, Kiley K needs more training as she is not suitable for fine dining waitressing.

Don’t bother looking anywhere else, eat here! What amazing food!! We shared a starter of dates that were bursting with savory flavor. I had the tenderloin and my husband had the trout. It was out of this world! The truffle sauce that was drizzled over the steak was perfect. The trout had a bit of a kick that my husband really enjoyed. And the chocolate cake with the raspberries was the delicious, rich but not overly so and the fruit was fresh and a refreshing complement to the oozy chocolate. And the bartender we had (we sat at the bar) was very friendly and fun. We will definitely be back!

This evening, we had the pleasure of visiting a restaurant in Darby that we had not previously known about. Upon arrival, we noticed a significant number of cars, which led us to believe that it was a newly opened establishment. We decided to investigate further and were warmly welcomed by a courteous woman at the door. She explained that the restaurant was still in the process of testing its menu items for friends and family and was not yet officially open. However, she kindly offered to check if they could accommodate us, and upon her return, she invited us to sit and assured us that the management would be happy to serve us. The menu was truly exceptional, and the food we were served was outstanding. We were impressed by the restaurant's gracious staff and exceptional cuisine. If you're ever in Darby, MT, we highly recommend visiting Sapphire Restaurant.

This little gem is worth the trip to Darby. They feature creative menus for lunch and dinner. Priced at the higher end here in Montana, this is a fine choice for a memorable meal in a nice environment with terrific views. Our server, Wade, was attentive and knowledgeable but not pretentious. We ordered the beef bone in short rib which was cooked and seasoned to perfection as was it's accompanying Parmesan polenta. Our friend who doesn't care for polenta didn't leave a morsel as it was so good. I had the lamb shank pot pie. This humble dish was raised to a stunning and satisfying delicious meal. Both people who ordered the petite filet said theirs was spot on. The dessert menu looked promising but we were satiated and had a performance to attend, so we'll try their desserts next time. We made a reservation and we're seated immediately when we arrived. If you're looking for a special meal or have a special occasion, consider Saphire in Darby. Our next outing will be to try their lunch menu.

I love to explore new places and I am so glad our daughter suggested this one. I didn't know what to expect because every nice restaurant in the bitterroot valley has not been what it's hyped up to be. This place did not disappoint! The atmosphere when you walk in is almost a country club vibe but also a welcome to everyone vibe. We just came from a nice hike and were dressed as such. We were welcomed with the everyone is welcome here and we want everyone to feel it too. Loved it. Our food was very good to say the least. I'm a very picky person when you post pics of fine dining.... I want the Pic on my plate if you know what I mean. My son ordered the lamb and it just fell off the bone. The flavor was perfectly even with just a hint of game to let you know what your eating and a beautiful rounded seasoning throughout the rest. I ordered a ribeye to see if this place could cook one the way I want it and not destroy it with seasonings. First time I have ever got my steak perfectly med-rare... the only way in my opinion to eat a steak. The red wine reduction drizzled on it was perfect. All in all, appetizers and meals were great! The only thing I would have them change is the ice quantity in the drink. I asked for light ice and apparently they only do a full glass of ice. Drink was still good though. I highly recommend this restaurant to anyone in the area, even if you just got done hiking. Good people, good vibes, personable. Thank you for tge experience! I will be back!

Ambiance is great. Nicest place in n the south Bitterroot I have dined at. Father's Day dinner. Old fashions are amazing. House salad amazing. I had the rib eye. Amazing. Service amazing. My nicest dining experience in the bitterroot thus far.

Idk where to start.... Had a reservation made weeks in advance and when we got there at 4 we were walked through the restaurant, past the patio to a few picnic tables outside in the sun. It was almost 90 degrees and there was no shade, no effort to even make it look like they tried to have a table ready for us. Keep in mind it's 4 and maybe the hottest part of the day and early enough to beat the dinner rush. We had several people in their 70's in our party and sitting in the sun and paying $50+ per person to dine is absurd. Restaurant wasn't even half full even after a hour of us being there keep in mind. Server was ok.... Probably could've got our food order sooner. Took our drink order but didn't ask if we wanted appetizers or were ready to order. After 20 minutes we received our drinks and we had to ask if we could order something. Soups, salads and apps came out sporadically. Some salads came as starters even though they were ordered as a meal. Had to ask several times for a refill or another cocktail. Probably would've had a 3rd drink since we were there 2:30 hours but I was never asked. The FOOD! Wow what to say. It's not hard to take the pits out of dates before you wrap them in bacon. Steaks were either under cooked or over cooked, more over than under. Veggies like brussels sprouts, broccolini, and asparagus all basically raw. They were vibrant with color but clearly not cooked enough and were under seasoned. Creamed Brussels was probably the biggest miss for me. Honestly this place had a good atmosphere but the FOOD NEED A LOT OF WORK and so does the FOH and how the handle reservations. *edit they were definitely still date pits in our dates not almonds.... Maybe you missed a batch but it definitely wasn't an almond in there

We love this place! The bartenders and servers are all on point and the food is the best in the valley. Top notch and always consistent. The bartender, John, is a definite standout! We highly recommend this restaurant and it's at the top of our list on our referrals for our guests at Hannon House.

They nailed it! You will find a diverse menu with many choices from steaks and chops, pasta, trout, salads and the best burger you will ever have. The atmosphere is elegant and casual at the same time nodding to the Montana style. The staff is professional yet friendly, and the owners exhibit a non intense presence in both the front and back of the house. They make a point to stop by your table and see how things are. The meals are fairly priced and plentiful. The bar is crafty, well stocked, wine too and has a great vibe to it. We sometimes dine at the bar.

Had an incredible dinner (and view) last night! One of the best fine dining" spots we've been to in the Bitterroot. We had the lamb pot pie (fell off the bone melt in your mouth!) and the tenderloin (probably top steak we've had in the bitterroot). Service was impeccable, cozy atmosphere inside, and incredible patio which also allowed pups at the picnic tables! Tammy was our server and was exceptional.

Beautiful building, great ambiance, amazing food, friendly staff. Definitely going to be a regular! Worth traveling just for the meal!

Reservations are a must most nights. Food was excellent and staff are very friendly. Beautiful new restaurant with amazing views. I suggest that all staff taste everything the restaurant has to offer. Several of them had not tasted everything offered on the menu, but this could be because they are a very new restaurant. Still, the staff needs to know everything about all dishes, including taste. Food presentation was amazing. Very beautifully done. Just a bit of a wait between courses, so be patient. All in all, an extremely wonderful addition to Darby.

The food was delicious, the staff was friendly and the ambiance was delightful! I loved dining at this new restaurant. The architecture of the building is open and light. It's a pretty place!

Had the rib eye with the cowboy potatoes. Everything was perfectly cooked with great taste. Atmosphere is laid back not too fancy. Service was ok. Wasn't the worse but wasn't the greatest either. Would of been five stars if we had better service

The food was AMAZING!! We had the patty melt and the brisket tacos! Both to die for!! Even the side salad was perfection! Our waitress Nicole was ON IT! She was prompt and kind and did a wonderful job! We wish we loved nearby! And really would contemplate a trip back to Montana just to eat here!!

We have been to The Sapphire twice since my last review. Quality of their meat has dramatically improved. Happy to see a new restaurant with this overall quality in the South Bitterroot.

A great evening. The Sangria was outstanding. The Brie appetizer was delicious. I had the beet salad which was outstanding. My hubby had the ribeye steak and it was tender and delicious. I had the trout. I would rate that as a 3. Not much taste. We all had the vanilla crème brûlée for desert and it was one of the creamiest and most flavorful I've ever had. Service was very good. Loved the setting and ambiance. Can't wait to go back. Five star

Wonderful food, incredible atmosphere. I loved chilling out on the patio in the afternoon sun. Our server Cali, was attentive, professional and easy to talk to. We enjoyed the phyllo-Brie starter followed by the Sapphire cheesesteak and Asian chopped salad. Sweet potato fries could have been hotter. The sticky chocolate dessert was unnecessary but awesome.

we paid $300 for a delicious dinner, but 5o% of our choices were not available at the early hour of 6pm. The owners are lovely, but the kitchen is very late, food not available. servers charming but so slow.. all for $300. not going back until they improve.

We had the most amazing lunch here. It was better than very expensive restaurants in major cities. The price and service were also great. It is a quiet beautiful place to enjoy great food

Food service and ambiance excellent... casino after dinner sucked - only folks in there and when we put the $10 in machine it jammed - took manager forever to come in and then she couldn't get into machine when she did she saw my $10 but couldn't reset machine - we finally just left - no credit no refund mentioned !!

We arrived a little early for my wife's birthday dinner and they found us a seat and we had drinks right away. The food was delicious and my wife had the trout and a side that was a pear and blue cheese, it had a sauce that was to die for. The service was great and our waitress was very pleasant.

Everything was better than expected. The phyllo wrapped Brie was amazing - definitely recommend. Our bill was $144 with tip for two people but we got appetizers, cocktails (good but small for the $), sides and split an entree. Service was good.

While we haven't eaten at this establishment yet we have been to two other restaurants that they owned and operated in Utah. Good people, excellent service and great food. This restaurant looks awesome and welcoming. You won't be disappointed. We plan to go there soon. It's worth the trip even from Camano Island. See you there!

You have something here. It's a nice place with a good atmosphere. I had the lamb. I don't recommend it. It's way too over seasoned but other things looked good and the Brie appetizer was excellent. You're too high end of a restaurant to be charging a dollar for lemonade as a mixer. I ordered a vodka soda with a "splash" of lemonade, not a vodka, lemonade, but a splash of lemonade and got charged for lemonade. It's not the cost it's the principal, that's just dumb. Be better! The only place I've been charged for a mixer is in Mexico or Europe when we travel there. Dumb, again be better...

Two of three steaks were all ordered medium rare. two were at best medium well. complained to waitress, she said we are very sorry but didn't offer any reimbersment which we were not looking for. Never an offer to refill my soft drink. asked for another cocktail, took fifteen minuted so we said to late, don't want it. our bill was $260.00 feel like things should have gone extremely better

The atmosphere in the Sapphire Restaurant is warm. The staff were exceptionally welcoming during our visit, and the food was delicious! I highly recommend.

Food is amazing. It's creative and fresh. The restaurant is warm and inviting. Will be going back.
