My grandfather and I stopped in here on a little winery hopping adventure on our road trip from Utah to Alabama. We were NOT disappointed with this stop. Sommelier John was so personable and had wonderful recommendations. This was the only winery where we actually bought a bottle. Also, they have the best potato chips from Spain with super tasty flavors. Thanks John!

Great winery to visit, growing and making their own wine from unusual varietals. Experimenting with flavors (a toasted oak malbec!) and pushing the envelope with their reds. Sparklet wines are fun and well done. Winemaker gave us a great introduction to what he's doing. A+

My husband and our little one stopped in the Sauvage Spectrum winery in Palisade on a Tuesday afternoon in late January and loved our time here - visiting during the off season is amazing!! Much less crowded and you get to spend more time with the winemakers; we chatted with co-founder, Patrick, for quite a while and loved learning about the wines (and all the cool stuff they’re doing with natural wines like pet nats and bourbon barrels) and the winery and vineyards’ history. Also we had learned Patrick has Midwestern roots, so we had to go pay a visit. I loved that I could do a custom tasting flight - I tried a ‘sparklet’, a pet nat and 2 reds. My husband did the red flight and really enjoyed it. One of the best Malbecs we had - and the Mourvèdre had some amazing color and tasting notes (I got a lot of smoke, my husband didn’t - though everyone has different receptors so it might taste different for everyone!). Would love to come back and check out their outdoor area in the spring! (Though we did happen to visit on a gorgeous sunny day, we were just enjoying talking with the team too much!).

The everything was delicious. The service was excellent, so kind helpful and pleasant to talk with. In al honesty I’m writing this with a small buzz still because I could not stop trying all the amazing and unique things they had. We had the pet-nat tasting, red wine tasting, lilikoi bomb cocktail, tried the piquette, and had some jamon iberico chips. The pet-nat skins was our favorite wine and the Malbec was also amazing. We ended up leaving with two more bottles of wine and two packs of the piquette, which was very unique. We also were lucky enough to be visited by a neighboring dog who made the experience even better. If you’re going to check out a place to do a wine tasting in palisade i can’t recommend it more.

We love Sauvage Spectrum. Everyone working there is absolutely amazing. We were their first wedding there. They worked so hard to make our day special. Their wine is fantastic!
