100% must see winery! The vibe is unmatched & they have fantastic tasting wine. The slushes are my favorite and a perfect way to cool down on a hot day. Can’t wait to come back soon! My grandfather and I stopped in here on a little winery hopping adventure on our road trip from Utah to Alabama. We were NOT disappointed with this stop. Sommelier John was so personable and had wonderful recommendations. This was the only winery where we actually bought a bottle. Also, they have the best potato chips from Spain with super tasty flavors. Thanks John!

Great winery to visit, growing and making their own wine from unusual varietals. Experimenting with flavors (a toasted oak malbec!) and pushing the envelope with their reds. Sparklet wines are fun and well done. Winemaker gave us a great introduction to what he's doing. A+

The everything was delicious. The service was excellent, so kind helpful and pleasant to talk with. In al honesty I’m writing this with a small buzz still because I could not stop trying all the amazing and unique things they had. We had the pet-nat tasting, red wine tasting, lilikoi bomb cocktail, tried the piquette, and had some jamon iberico chips. The pet-nat skins was our favorite wine and the Malbec was also amazing. We ended up leaving with two more bottles of wine and two packs of the piquette, which was very unique. We also were lucky enough to be visited by a neighboring dog who made the experience even better. If you’re going to check out a place to do a wine tasting in palisade i can’t recommend it more.

Love, love, love the wine slushy! Every wine I tasted here was absolutely delicious too. Beautiful outdoor seating. The staff were so nice and knowledgeable.

Great party atmosphere. Live music and cool place. Nice folks. However, they created a modern miracle. Somehow, they turn wine into water. Out of the 10 tases from flights, we could not find a wine with any complexity. Two were questionable as being water (the red was obviously colored, but the white might have been water with a splash of vinegar). We left most of the wine behind. As a cool place to hang out this is great. I don't recommend as a place to enjoy wine. I cannot say they actually make or sell wine.

This place had a fun party vibe when we were there. It was very busy, they had fun drinks, and the DJ was playing. It was very loud, so at least when I was there it was not a chill place to hang out, but it was fun.

Sauvage Spectrum Estate in Palisade, Colorado, is a standout among the local wineries. This is our FISRT STOP when we get in town. Their wine slashes, especially the Sangria, are the best we've tried. I would put it in comparison to the wine slashes we've had in Seattle at the Pikes Place Market, "Truffle Queen". The unique flavors and refreshing taste make this a must-visit spot for anyone touring Palisade's wine country. On the back they've got a patio misters that make your time there even more enjoyable on the summer hot days in the Valley. Nowadays you can find their products in a can on the shelves at the liquor stores.

Our favorite winery in Palisade! Great vibes in the tasting room and there are lots of fun yard games for the kids to play in the shaded backyard area. Wonderful service from the staff. Definitely try the wine slushees and the sparklet!

Really cool winery in Palisade with good views of the surrounding area. We were there as part of a trolley tour and got a limited white wine (All Day Verde) that was somewhat carbonated, and a bottle of their red blend. Both reasonably priced! Ample parking here and lots of well behaved doggos.

The frozen sangria is amazing. A group of us went and had a great time tasting all different red white and rose wines. We had to forgive the owner for being an FSU fan. Lol It is a great place and we loved this place

Visited here in December and it is an excellent choice for a winter winery as there is tons of indoor seating. The owner was there and was really helpful, recommending wines and just generally chatting with us. The inside is very industrial but it is neat to sit among the barrels of wine. Wide selection of wines and of the flight of 6 I tried there was not one that I did not like. Great winery to check out if you are in the area.

Great wine options for a moderate price! Bought a bottle and drank a glass on the patio! There was benga and other games on tables to play while drinking wine. They specialize in some sparkling wines as well!

We stopped by Sauvage Spectrum during our bike ride on the fruit & wine byway, and it was hands down the most hopping winery of the bunch -- all of the outdoor tables were filled, people were enjoying games, there was a food truck, etc. This was a nice change of pace, as at every other winery we stopped at, we were the only people there! We went with the sparklet flight (3 tasters for $8). I generally love sparkling wines and think they are fun! We enjoyed the sparklet rose the most. The sparklet candy red was a bit too extreme for me, although I had never had a sparkling red prior, and appreciate the creativity! Definitely worth the stop if you are in the area and are a sparkling/effervescent wine fan.

Almost missed this winery during our trip! If you enjoy sparkling wines this is a must try! Great flavors and they offer several options for flights. We tried the Per Nat flight. My favorite was Per Nat Skins loved the orange flavor and not too sweet. Plenary of outdoor and indoor seating!

This is my favorite winery in the area. It is newer and run by a local couple that are very kind and knowledgeable. We got two flights and every single wine was unique and delicious. It's rare that I get samplings of so many wines and actually enjoy them all. They have a great selection of sparkling wines too. The place is in a warehouse though it has a homey feel. They also have a great outdoor space, though it was too cold for us to utilize. They wave the tasting fee if you get 3 bottles. The wine tastes just as good when you get home. I will totally be back :)

What a fun stop for wine tasting! I ended up being here twice because my cousin liked it so much ... Then I ended up buying another bottle too! Their sparkling wines were a highlight of the wineries we visited in Palisade. One of the farmers happened to be there on our second visit so we chatted with him a bit. He offered us some donut peaches, which was a thrill for me. Super nice people, vegan wines, fun garage style tasting atmosphere. Would definitely visit again!

Love this place! The staff here are so friendly and accommodating. We were in palisade for a girls weekend and started off here. They have a nice selection of Colorado grown sparkling wines that were really impressive. The Sparklet Rose was one of our favorites! We loved the industrial feel of being inside the production area of the winery, and being able to walk around the property with vines all around us. Highly recommend stopping here on your trip!

My husband and I spent some time in Palisade a few weeks ago and were pretty disappointed with this winery. I think this was the 7th winery in the region that we visited and every place we had been prior to here exceeded our expectations. We were greeted in a friendly way and did a tasting. The tasting room wasn't as nice as other places we had been; you're basically sitting in a large garage with basic outdoor tables. The sparkling wine and other wines were good. We decided to buy 3 bottles and were trying to decide which ones. My husband asked for another taste of a varietal we were considering. By this point, a different person was helping us and not the person we started with. She gave us another taste and then we picked 3 bottles to purchase. There is always an option now to tip using a credit card and my husband tipped 20%. The woman behind the counter said under her breath, "only 20%" and had an attitude. My husband didn't tell me until we were in the car driving away. Had I known, I would have told them to keep their 3 bottles and get no tip. It was a terrible way to end the experience. We tip well when we get outstanding service. This service was not outstanding; it was okay. And then sub-par when we checked out. A true disappointment.
