Visiting Shunpanro Shimonoseki is a profound culinary journey. As the first licensed fugu establishment in Japan, it offers a refined experience that balances tradition with exceptional quality.
Atmosphere: We had lunch in a private room on the 3rd floor, which was flooded with natural midday light. The panoramic view of the Kanmon Strait provided a serene and open backdrop for our meal.
Fugu Sashimi: The plating is a work of art, with slices so translucent they reveal the intricate patterns of the porcelain plate beneath. The meat is remarkably firm and resilient, offering a clean, sophisticated umami that lingers on the palate. Rolling it with the local "Yasuoka-negi" scallions and fugu skin creates a perfect harmony of crispness and gelatinous texture.
Fugu Tempura: A highlight of the course. The batter is gossamer-thin and perfectly crisp, encasing exceptionally tender and moist meat. It possesses a delicate silkiness reminiscent of premium frog legs but with the pure, sweet essence of high-quality deep-sea fish.
Sake Selection: I highly recommend exploring the local Yamaguchi sakes. The Tenbi offers a soft, grape-like sweetness that complements the raw courses, while the Toyo Bijin has a crisp, aromatic profile that cleanses the palate.
Fugu Zosui (Rice Porridge): The meal concludes with this soul-soothing egg and rice porridge. The broth is a pure concentration of fugu essence—warm, delicate, and incredibly comforting.
Notable Detail: The baked curry featured small purple sweet potatoes that were surprisingly sweet and velvety, showcasing the chef's attention to seasonal ingredients.
