This is one of my favorite AYCE hotpot places overall, and within the NY area. Have been here many many times over my time in NY, and I plan to sneak a visit any time I'm in the area. Strengths of the Spring are obvious, it has a near unbeatable selection of veggies, fish ball products, noodles, and a great/diverse sauce bar; I appreciate the very consistent service I've had over the years and the vanilla/green tea soft serve to boot - all at a competitive affordable price.
First thing to note, it is AYCE for everything except for meat and select items like dumplings/sausage. As always, drinks are also extra.
Second, there is an adjacent parking lot to the plaza at this location. I usually make a day of it and park a skyview mall simply for convenience/laziness, but it can be pricey.
Service: as above very consistent and tentative to water/broth refills. Even when the place gets pack with what looks like in the 100s, the service is excellent.
Food:
Overall their strength is selection/diversity, I'd say each individual item/broth/meat isn't crazy high quality/memorable.
Buffet bar-wise, consists of a wide diverse selection (just going to list what I frequent) of veggies that showcases eggplant, yams, carrots crown daisy. Enoki mushroom is usually there seaweed, black fungus, tofu, tofu skin.
Fish cake wise, love getting their CHEESE FISHCAKE. Other than this they have a variety of other fish balls, fish ball with roe.
Noodle selection is wide with glass noodle, vermicelli, and green tea noodle as favorites
Sauce bar-wise, the best selection I've seen. i always get the shacha (sometimes at the bar it can be on the oily side) and a house mix sauce they have with ponzu. Their in house mix sauces are pretty nice.
Broth-wise, I normally get their chinese mala which is a typically porkbone based spicy broth. A little too much on the mild side and somewhat oily but enjoyable nonetheless.
Meat-wise, can't go wrong with beef ribeye, lamb, beef top blade, and pork belly. Quality is pretty good and consistently fresh.
Dessert-wise, they have softserve which is nice. They have green tea, vanilla, and mixed.
