The people serving us were lovely, and the wine selection was incredible. The food was interesting and enjoyable for sure, but some elements could be improved to take it from nice to really great—enhancing flavors with using more concentrated ingredients or adding things like extra salt, heat or citrus, for example. A few dishes fell short: the Guinea fowl ragu contained organ meat (not advertised, which some may dislike), and my partner’s pork belly was 90% fat and next to no meat. With some refinement in details and flavors, this could be really outstanding.
