Subo easily provided the best dining expertise I have had in Newcastle. The 7 course menu was diverse and landed well as a set. The quality, serving size, and presentation were what is expected for the name and price. The menu changes twice seasonally so my photos will soon be replaced with their next amazing creations. Well done team, keep up the amazing work. I will see you next time.

We were looking forward to coming here based on the amazing reviews but was unfortunately disappointed with the food. Service was great though and staff very attentive. Of the set menu, the tomato consomme and flank were particularly underwhelming. The tomato consomme was cold and flavours very mild and watered down. The flank was a little overcooked and probably not a great cut for the dish. The standout was the pecorino brulee as texture was amazingly smooth. Would probably not go back but could have just not been to our taste.

My partner and I came here for our first date night after the most recent lockdown and the first fine dining experience in Newcastle since returning to our home town in late 2020. Firstly, the service was some of the best we've ever had. The staff were exceedingly friendly and knowledgeable, taking the time to answer our questions and exquisitely describe each dish as it arrived. Our location in the Glass House area at the rear of the restaurant was brilliant. In what I assume used to be the back yard, we found ourselves seated in a greenhouse surrounded by night; the glass reflecting the nearby candles and low interior light to create a delicate and warm atmosphere. The food was not only immaculately presented, but also divine in taste as well. There were several combinations I was dubious about when contemplating and pleasantly surprised upon consuming. Sweet mixed with savoury on many occasions to produce unexpectedly pleasant flavours that absolutely blew me away. I cannot speak more highly of Subo, its staff, and the Chef. We will definitely be returning several times in the coming years to treat ourselves to their ever-changing seasonal menus and I suggest you do the same as well.

Suzie, Beau and the incredible staff turn out amazing food. It is our favourite restaurant in Newcastle and they never disappoint us. My partner does not eat gamey meats or seafood and they are happy to substitute for her. Regular changes to the menu mean we return over and over again!

My partner and I came here for our anniversary and they really went above and beyond for us. They take the time to explain each meal right down to the origin of the ingredients. You can tell they love what they do. All of the drink recommendations were personal and were chosen based on what they thought we would love and it was perfect every time. The food was to die for.. We had the end of autumn menu, absolutely divine, we will 100% be back.

Amazing service and great wine list. Food overall was fantastic. A big focus on local ingredients which I loved. I personally found the fish flavour in Torton overpowered the other ingredients in the dish, but other than that everything was amazing. Will definitely be back.

Dined at Subo last night and the service from Tracie was phenomenal matching the perfect wines to every course. The food was absolutely amazing to say the least, do yourself a favour and book in to try this experience for yourself!

Welllll, let me tell you! Husband and I visited Subo for our 10 year anniversary, we chose the degustation with matching wines and it was incredible. It was one of the most amazing dinners we’ve ever had. The staff altered any seafood dishes for me at a last minute request as if it was no hassle.

Pros - stays open late - nice decor - good noise level (not too loud that you can't talk) - lovely staff - pre-chosen food and wine menu (love not having to make any decisions!) - lots of small servings (fun!) - incredible lamb and fish Cons - they really need to improve their drink game. We ordered one of all the cocktails and they just weren't good. - it pains me to criticise the food but it didn't blow me away. Some of it was lacking in flavour. The final dessert course was not nice. But don't get me wrong, it was still very good and we had a great night. The menu changes so I would go back for sure!

Our first time to Subo. So many people said it was great & we weren't let down. Great food & wine. But book early.

Late arrival on Sunday evening restaurant full! Fortunately the delightful owner Susie rescued us by offering two seats at the Bar. Five course meal first class. Desserts a highlight. Matching wines unusual styles but worked well!

This is the best food I've eaten in Newcastle and it's not close. After five visits, will always return for superb cooking of seasonal produce and warm service in a relaxed, intimate atmosphere. Interesting wine list with some good local picks. Stacks up with the best modern Australian meals I've had in Sydney and Melbourne. If I lived nearby and could afford to eat here every week I would.

In my mind this is the best restaurant in Newcastle, I'm a fan of many a local restaurant but this experience was perfect. The 'degustation' style menu was a perfectly balanced mix of flavours in perfectly sized portions. It's not often a restaurant nails this delicate mix so well, but these guys truly do. Each of the five courses was a delicious, different dish that complemented the previous one perfectly! I don't need to go on and list the food, it was all great and they have a seasonal menu. What you need to know here is that the culinary expertise (Mad skills) at work here should be enough to make you want to eat here. To top it all off the serving staff were all really friendly, attentive and knew their stuff too. I'm someone who normally finds faults everywhere, as I'm so detail focused in what I do in creating experiences. There were no faults to be found here though. Even still today I can't stop thinking about details like how good the butter tasted, the perfect taste and presentation of the beef and how amazing the Apple granita on the desert was.
