The best tortillas in town. Serve warm & fresh with potatoes & eggs. The Sepia con su tinta was really nice ! A small bar with friendly people. Opens at 7pm for dinner.

Finally got to visit the legendary Sylkar last week after months of trying to find the moment, and I have to say it was worth the wait. Without doubt the best Spanish omelette I have tried in bar or restaurant. You can order it with or without onion, although my favourite was with. I don't know how many they must make in a day but in the couple of hour I was there they didn't stop churning them out. Each one to a great "runny" standard!! I didn't try anything else on the menu but for what I saw all the dishes and tapas looked great. A must for any "Totilla" lover

I'm not sure it's the best, but it is for sure the best Tortilla I have ever had. Environment is simple, informal but clean and tidy. Food is just great, besides the Tortilla, the Revueltos, Croquetas and Jamon are also great. Prices are higher than other places, but you get what you pay.

Very nice place in Madrid . They say that they are specialists cooking Tortillas españolas, and certainly they are. Also ask for callos and the hake. About the wine, be careful, they will try to sell you whatever bottle they have in stock. It would be a very nice wine but maybe a little overrated.

This is a lovely Spanish cafe/bar just off Calle Ponzano. The food is delicious, everything made from scratch and the best Tortilla Espanola I have ever tasted. 😋

Heralded by many for serving Madrid's best Spanish Tortilla, a location outside city-center easily accessed via Metro, Sylkar was well known for outdoor dining long before the pandemic as a result of its tiny interior and loyal local following. Family-run since its inception, recipes over a half-century old comprising a menu more sizable than one might expect given Sylkar's footprint, it is from early until late that guests sit down at the Chamberí Bar to indulge with plates steeped in history. Served via Spain's famous "rations," or media-racions for those desiring variety, it is shortly after seating that guests are offered Olives and a Beverage, Spanish-exclusive staff and descriptions built on brevity requiring a bit of knowledge (or chance taking.) Visibly serving Tortilla at a 1:1 ratio to guests, its center just short of set and oozing onto the plate where each drop can be sopped up by Bread, suffice it to say the Omelette warrants a trip on its own, though Sylkar's sizeable Croquettas are themselves lighter than most with a bold, porky center. Far from calorie conscious, Alioli Potatoes featuring boiled Spuds weighed down by garlicky Mayonnaise, Cod arrives tender beneath vibrant Tomato Sauce alongside rustic Dumplings before ending the meal with creamy Torrejas soaked in Milk with plenty of Cinnamon and Citrus.

Fresh and awesome. We arrived late night as they were closing and they stayed late just for us. Such wonderful service. Sardines were crispy, Jamon iberico was marbled and silky. Beer was crisp and refreshing. Would come again!

Great place for classic Spanish Bar-Restaurant food at reasonable prices and with very good and friendly service, by far the best I had at similar spots in Madrid. I had a tasty piece of Tortilla and a beer for a simple but delicious combination.

It was almost destiny that I reached this place again since last year just following my instincts and there it was ... unassuming and holding some of the best food in Madrid. Of course they make the best tortilla , but enough already... how about their lentil soup better than mothers , or the cream of asparagus. Maybe some albondigas... and desert... torrijas, pour a little red wine over it...heaven!

I'm no expert on omelettes from Madrid, but the experiences for all senses are on overload. In Spain meals are small plates (pinchoes here, not tapas) and it allows you to complete a plate then ask for more or something else. As for the small beer, brilliant. You can finish while it's still cold. Great place, kids running around, it's like a family gathering.

Not sure about the rave about their tortilla, but I had a take-out tortilla de patata pincho and it tasted so salty! I am also not a fan of super gooey tortilla so I would say this place is a miss. Maybe it's just the tortilla I got that was super salty.
