"For a proper taco fix, score a picnic table at this creative roadside establishmentwhere the tasty folded offerings are stuffed with bison, goat, chicken, beef, shrimp, and fish. The traditional crowd-pleasing tacos al pastor comes with tender pork and sweet pineapple, pairing well with flaky fresh tortilla chips and salsa. There are also veggie options like the verduras— try thesweet potatoandgarlic kaleversion or theavocado and fingerling potatoes—and, of course, classic nopales. To drink, opt for fresh and tart hibiscus or sip from a brightly colored bottle of Jarritos."

All of the tacos we had were delicious. Shrimp, bison, al pastor, carnitas, chicken and avocado. We asked for chips and guacamole but they were out if guacamole however we enjoyed the chips with some of their salsas.

Awesome! Pick any taco you won't be disappointed. You'll want more than one just because they are so delicious. Friendly staff and great environment. Stop in!

A friend recommended Taco Fundacion for a great post hike snack. I wasn't too hungry upon arrival but then all the delicious smells enveloped me and I couldn't resist trying two of their tacos- chicken mole and the fish taco. They offer a wide selection of street size tacos. One is perfect snack, or order several for a meal. The fish tacos were lightly fried with a spicey green crema; delicious. The chicken mole was good, not too sweet but it did not outshine the fish. My husband ordered the lamb and said it was perfectly cooked. They have a full selection of jarritos Mexican sodas. The homemade chips looked delicious. We enjoyed our food so much we came back the next day for a light lunch on the way out of town. All employees were wearing masks and masks were required for customers. They have the floor marked to distinguish 6 foot separation. Bathrooms were clean, but needed paper towels.
