Sole by Tarragon has a beautiful atmosphere and an amazing sea view, perfect for a romantic dinner or a special night out. The food is fresh and well-presented, especially the starters and seafood dishes. Cocktails are great, and the staff is friendly and professional. The only downside was that the meat was slightly overcooked and a bit dry. Also, the pacing between courses felt a bit slow. Overall, a lovely experience, but the main course could have been better for the price.

Sole by Tarragon was an outstanding experience from the moment we sat down. We were welcomed with a lovely amuse-bouche to start, which set the tone right away. I ordered the Aljotta (traditional Maltese fish soup) and the salmon — both were fresh, flavorful, and beautifully prepared. The Pink Sea Star drink was also excellent: refreshing, fun, and perfectly balanced. The atmosphere is fantastic, with beautiful views and a relaxed, elegant vibe. And the service truly made it special — Gema, Mario, and Kane were attentive, warm, and professional throughout. Highly recommend if you’re in St. Julian’s

It was an absolutely fantastic experience. The entire staff was tireless in their attentiveness. The food was brilliant. The atmosphere was perfect for a perfect night. A place to visit, to revisit, and to relive. Five stars. Top Top Top.

Not sure if the plating or the view was more gorgeous! We did the 8-course tasting menu with wine pairing, and it was absolutely fantastic. Every dish looked amazing and tasted even better, and the wine pairings were spot on. It was a long dinner, but in the best way — we never felt rushed, and the food was filling and satisfying. The service was friendly and attentive (they also gave us great recommendations for other activities in Malta), and the whole evening felt really special! Can’t recommend Sole by Tarragon enough!

To be honest i expected more. The main courses weren't anything spectacular but the starters were great though. Definitely recommend the black calamari. Tried octopus for main but was something like a mixture of homemade soup and octopus 🤔👎. Desserts were good. Service is perfect with friendly staff. Atmosphere is great.

We had the 7-course tasting menu for dinner. Service started off quite slow, even though the restaurant wasn’t very busy, but it did improve as the meal went on. The food was good overall, though some dishes didn’t feel as refined as we expected for a fine dining experience. We’d suggest updating the menu—especially removing the feta cheese pastries—and working on service consistency and staff management. Very big portions though!

They really understand gastronomy. Staff is very attentive und supportive. Learned that Hungary has the Malbec vino es well. Food is 5 stars. They view and vibe is outstanding and you pay for it obviously.
