When visiting a new area, we are always interested in trying the regional specialties. Around Green Bay, that would be booyah, a special chicken and vegetable stew. The Booyah Shed is the highest rated place and we decided to stop in for a week day dinner. The restaurant has a small seating area (it only seats 16 per the fire code) with a drive through. You order at a window, where the very friendly owners will greet you and make you feel at home. There's a rubber chicken to the side of the window, so if you don't see anyone there, squeeze it to annoy the heck out of everyone (and summon the owners).
A sign adorning the exterior advertises how many of the items there are homemade: tater tots, ice cream, chili, etc. We wanted to try quite a number of dishes, but only had stomach space enough for two items that evening.
Booyah, Bowl ($5) - This is comfort food at its finest. Just a hearty chicken and vegetable stew in a slow cooked tomato chicken broth. Filled with shredded chunks of dark and white meat chicken, with lots of veggies, including mirepoix, wax beans, green beans, peas, and chunks of potato. The chicken comes in smaller shredded bits as well as larger chunks, but none of them are stringy enough to be caught in your teeth. The stew has the perfect seasoning and salt levels. It calls for nothing, other than perhaps to be topped with the one pack of oyster crackers it's served with. This is a dish that anyone would crave on a cold day or while sick. (5/5)
Poutine ($13) - Woah, this was an absolutely giant basket of poutine. I was expecting half as much food, but this was more than enough to serve as an entree. The poutine consists of commercial crinkle cut fries, topped with freshly fried cheese curds and homemade gravy. The fries are perfectly fried with a crisp exterior and tender fluffy interior. They are sprinkled and mixed liberally with seasoning salt. It's not that evenly applied though, as we found some of the fries to be much saltier than others. The cheese curds have a light batter on the exterior with only a very soft, slight crisp. The interior is fresh, with a firm chew and as they cool down, a good amount of squeak while somewhat sticking on the teeth. In some fried curds, the cheese is completely melted and sticks to the exterior batter, resulting in a hollow geode. The gravy tastes quite aromatic with a lot of vegetable notes, but I wasn't getting any hints of meat in it. According to the menu it's made from the booyah stock/drippings. The gravy is reduced until very thick and viscous, almost the texture of gelatin. I think the components are pretty good separately, but added together doesn't quite come together to a cohesive whole. (3/5)
While eating, we heard one of the other customers talking about the handmade cheese-filled golf ball sized tater tots. We were so intrigued that we went back the next day to get more food:
Homemade Tots, Cheesy ($4.50) - You get four of these massive, golf ball sized tater tots per order. At first they look and feel exactly like hushpuppies - golden brown on the outside with a nice crisp exterior crust from the batter. Then you realize the inside consists of shredded potatoes, like hashbrowns hand grated though a box grater. The potatoes are a bit al dente with somewhat of a bite instead of being completely soft and tender like a frozen tater tot. It's stuffed with cheese, making a good cheese pull and adding fat and a pleasing creaminess. Overall a very unique and delicious tater tot. (5/5)
Bacon Jam Grilled Cheese ($7.50) - The star here is the bacon jam. Sweet, savory, smoky, meaty filled with small bacon pieces. This is spread on the top slice of a piece of thick cut Texas toast, perfectly toasted on the outer sides, leaving the untoasted inner face fluffy and soft. This allows the thinner parts of the jam to soak into the bread. The jam meets the melted cheese on the other piece of toast. Delicious. (5/5)
We also got a bowl of Booyah again, which tasted exactly the same as the previous day. Very consistent between visits!
If you eat in, the owners give you souvenir rubber chicken slingshots! Fun all around! Just don't fire them onto the roof of the building!
I definitely recommend The Booyah Shed for some delicious homemade food. This is the kind of business everyone should be supporting.
