We love barbecue, and when you eat your way through Texas Monthly's BBQ edition every year, that really sets the bar for what you consider "great barbecue." We saw this place on a social media reel and decided to give it a try.
The Pros:
* Great variety in the meat selection, plus fun daily specials.
* The ribs were hands down the best of what we ordered -- flavorful and tender.
* Staff was friendly and service moved as quickly as possible despite the crowd.
Since we love barbecue, we ordered both moist and lean brisket, ribs, Texas Twinkies, the tater bomb (recommended by the couple behind us in line), beans, and elote.
The Food:
* Brisket: The moist cut was better than the lean. It had a visible smoke ring, but lacked that deep Texas smoky flavor and the crust we love.
* Ribs: The star of the show -- seasoned well and cooked perfectly.
* Texas Twinkies: We measure these by Hutchins BBQ in McKinney, TX (our gold standard). These were decent for Colorado, but the bacon was soft instead of crisp, and the cream cheese filling overpowered the jalapeño and brisket flavors.
* Sides: Beans and elote were fine, but nothing stood out. The tater bomb was fun to try but more of a novelty than a must-order.

Overall:
We waited about an hour, which seems standard for a popular BBQ spot. If you're looking for barbecue in Colorado, this is a good option. If you're craving authentic Texas barbecue, it's close... but not quite there yet.
