Located in a stone structure storefront in Galway is The Dough Bros wood-fired pizza. Despite not being in the mood for pizza, a quick search of reviews on both Google and Yelp convinced me to check out why others rave about this place, which I believe has been considered to be the best pizza in Ireland. I understand that lunch is a busy time, especially when all the tour groups visiting western Ireland stop off in Galway, but the line to order food was out the door, and the girl taking orders was very slow and inefficient (sometimes stopping to wander around in the restaurant to chat with others, leaving a line full of people waiting to order). You are only seated after you order, which creates chaos in the waiting area for families, larger groups, and more elderly guests where all you needed is one person on line to give an order. The interiors are tastefully done, but seats at ends of the restaurant in booth format were all like sitting on an uncomfortable wooden bench.
We went with an order of garlic bread with cheese and a margherita pizza. The garlic bread was ok in taste and wasn't overly heavy, but the bread it was on (I think Irish soda bread) didn't make for a good base as much as a standard Italian bread. The margherita pizza fell into "just ok" territory as the bread/dough was a weak point in the creation. Cans on tables indicate that they use San Marzano tomato sauce, but the sauce really didn't have the zest a good San Marzano sauce usually has. Similarly, the cheese wasn't anything to write home about. The ingredients were fresh, but just not my thing as it was floppy with some burnt spots on the bottom. I had better pizzas in England and Scotland. There really isn't much wait staff service as nobody is around to wait on you, and we had to flag somebody to get some water, after the initial lady that took us to the table forgot about it. Overall, I'd rate it a 3.5/5 having gone in with low expectations of pizza in Ireland, but happy to round up.
