15 Best Bars in Melbourne | Condé Nast Traveler

"The old-world décor—Chesterfields, crystals chandeliers, bentwood chairs around sturdy tables—and low lighting create The Everleigh's elegant 1920s-style ambience in Fitzroy. Sit at the bar if you want to watch the bartenders in action, or slide into a booth in the second room for a more intimate setting. The bar was updated in the 2017 to more easily handle slightly larger groups, but everyone keeps it nice. You can have whatever you like; just tell the staff the mood you’re in and they’ll create something for you. All the classic bases—fizzes, sours, Old Fashioneds, and Sazeracs—are covered, but if you'd like something a bit different, try the Debutant, which combines gin, pomegranate, lime, and orange bitters in a coupe. There’s a small selection of snacks—duck and pistachio terrine, Ortiz sardines, triple cream brie—but you’re not eating dinner here." - Carrie Hutchinson

14/12/24 - 4.5 stars A hidden Prohibition style speakeasy in Fitzroy. Decor and lighting are excellent with classy and knowledgeable staff to match. Can get a little noisy when busy but otherwise quite nice music and vibes. The bartenders choice is definitely my recommendation as they delivered for everyone in our group each time. They catered for all our tastes, but, it is a bit expensive at $28 per cocktail.

Atmosphere 8.5/10 Very stylish and classy cocktail bar with live Jazz music. Nice bar area and cool back bar Drinks 6/10 Recommendation: - Menu is very limited, but has bartender’s choice. My bartenders choice did not turn out well though. The other cocktail Bebbo was also just ok. No coasters, no special presentation Service 6.5/10 Water served immediately. Prices are about average for melbourne

Why can't I rate more than 5? This is my favourite cocktail bar in Melbourne - and I've been to several! The staff was always incredibly kind, the music (seems like they have live Jazz on Sundays) is beautiful, the atmosphere is so elegant and cozy at the same time. Not to mention the cocktails. All were great, and the time I had chatting with other guests over them was incredibly fun. Harry, the bartender, made me a caipirinha better than 99% of the ones I had in Brazil. Harry, Zayn and Imi (hope I'm spelling it right) were the best bar people I met in Melbourne. I simply had the best night ever in the city because of them. That is hospitality! I just bought their cocktail book (A Spot at the Bar) so I can make the Everleigh's cocktails here in Brazil while I cannot be back in Australia. Made me a Bug House, as recommended to me by Imi. Tip: the best seats in the house are those at the bar! Love from Rio 🙂

Gorgeous furnishings, impeccable styling and service. We felt at home even though our guest had never been somewhere so ‘swanky’ she enjoyed the wonderful service and felt at home. The music was perfect, the staff looked amazing and you really felt like you’d stepped back in time. The bartenders choice cocktails were all perfectly matched to our tastes. Will be back again!

Google
Gertrude St is a pretty trendy place, but go up the stairs above Belle’s and you’ll be transported to somewhere reminiscence of the 1920s. Dark wood, moody yet cosy atmosphere perfect for a tipple (or more). Whether you decide to order from the menu or leave it to the bartender’s choice, you’ll be in safe hands. Highly recommended, just be careful with the stairs going down after as those drinks are pretty tasty.

Google
Everleigh is simply amazing. The staff is very kind. We went there to celebrate my husband’s first birthday post our wedding and we both loved every bit of this place starting from ambience, music, Cocktails and hospitality. Definitely recommending it to others.

Google
Drinks also were 5 stars! Crafted exceptionally well. These team members made it a special experience for us and were extremely attentive. It’s been an age since we visited this establishment and so glad we did on a Friday evening. Here’s to the next time - ideally for negronis and paninis….!

Google
This is my favourite cocktail bar in Melbourne. It is typically an unassuming location upstairs from another bar but truly a hidden gem of Melbourne. The staff are expert cocktail makers (mixologists?) and their staff are friendly and able to guide you through the menu even offering suggestions if you don't know where to begin. My personal fav - The Professor (a super sour but delicious cocktail)

Yelp
- 10 stars - unforgettable cocktails - all star bartenders - greta recommendations - had to be at least 100 different whiskeys

Yelp
Epic bar in Fitzroy, great service and drinks, was so impressed I wrote a blog about it https://socialeventsmelbourne.com.au/the-everleigh/

Yelp
Super cool place. Very old school vibe. Everything is beautiful and ornate - even the glass coasters rimmed with gold! Service is very friendly, and Dave the bartender is quite nice (and easy on the eyes, ladies!). I went early on a weekday and the place was very quiet - not sure how it gets on the weekends.

Yelp
I don't want to say too much, lest my favourite table or spot at the bar be occupied next time I visit. I'm going to keep it short, in the hope that you'll brush over this and move along to the next listing. The ladies and gents at The Everleigh know how to mix a great cocktail (ignore the menu and have them guide you), the décor is stunning, and the location discreet. It's the perfect spot for a mid-week rendezvous or nightcap. A word of warning about the bar snacks: I've seen grown men and women have to beg for restraint once they start in on these things. I don't know what they're coating those little soy snacks with, but they're addictive. Best you not even start. In fact, you should avoid this place altogether.

Yelp
It's taken a while for us to get around to visiting The Everleigh, but, last night we finally had the chance. It wasn't our intention, actually -- we set off to the Kodiak Club (another favourite) but they were wall to wall packed with a private function. So up Brunswick we wandered and over to Everleigh. We got there five minutes early, which was probably for the best, as being the first ones in we were able to get what, to us, was the ideal seat (one of the booths as you first walk in). You've read the other reviews, you know how great this place is, but I think the key to their success is that they truly, truly, want YOU to be happy, as the customer. They don't want to just give you a list of 20 cocktails and have you choose, they want to learn what you like, make suggestions, get feedback and really enjoy their craft, and your happiness. One of the highlights for the evening for us was the fact that we recognised form The Waiting Room staff working at Everleigh now (after TWR began it's deathspiral, having left the Rockpool Group) -- this meant that many of our preferences and likes/dislikes were already known, which sped up the process considerably. My wife and I started with items off the Cocktail List, just to get a sense for their craft, but by the fourth drink, we gave only the vaguest hint of content, and asked them to have fun. I think the best drink my wife had was El Guapo, which was a bit like a bloody Mary without the tomato juice (and, in my opinion, better). I DO wish they had a bit more in the way of nibbles; the snacks are great, don't get me wrong, and we enjoyed what we had very much, but, since we like to settle in for a long evening rather than move from place to place, it would have been great if we had a few more bar-snacks, or possibly even some hot food, to keep us going - not a big deal, after our fourth drinks we popped downstairs to Belle's Diner for dinner (also a first visit) and that worked out great. A great spot, and I know we'll be back soon - I sense that some of my cocktail challenges I gave to the staff at The Waiting Room will be VERY well received here (garlic+strawberry+cinnamon anyone?)...

Yelp
Amazing place, incredible service, delicious and well priced wine - so they get 5 stars from me..... BUT!!!! The cocktail prices were outrageous. $35 - $50 for ANY of the cocktails is way too much. If they had a 2 "cheap" cocktails for $15 - $18 and the rest were in the $30+ range, that would be fine by me because then I could actually buy something there, but everything on their cocktail list was above $30. So.... I LOVED this place and you should DEFINITELY go there, but if you have my budget, it'll be wine for you in one of the most gorgeous bars in Melbourne.
google avatar

Yelp
Friendly bar staff, in a pleasant lowlight, speakeasy type place. The cocktails were decent, but I've had better cocktails elsewhere (mostly NYC and DC). I'm not sure why people are surprised by the cocktail prices, as it's a pricey cocktail bar and upscale is their thing. The leather menus were a nice touch, and they certainly have gotten the decor spot-on.

Yelp
Created by the same owner of Milk and Honey fame, The Everleigh definitely lives up to its reputation of being one of the world's 50 best bars (Drinks International List 2014.) If you've been to the other bars in London and New York, the same rules apply here (No name dropping, no star f*cking, etc.) This is a typical speakeasy; once you find the address, go around the corner and find the door with The Everleigh signage. Walk up the stairs and you'll easily find the bar once you hang a right! The cocktail list is detailed, but feel free to chat up the bartender for some bespoke goodness. I asked for something whiskey or bourbon based that was strong, and I was presented with an "Up To Date". Though I can't remember what's in it, it definitely fit the flavour profile I was looking for. Miguel also ordered something similar, and his was served over ice. Gotta love the service here, as they actually chilled Miguel's glass while he stepped away and went to the bathroom. Overall, prices are typical of these establishments, but the quality and strength warrants the price. Cheers!

Yelp
Is this the closest thing I will get to PDT NYC? The Everleigh is cool, but I feel that I was dressed inappropriately... need to remember my suspenders for next time. I am reviewing this a bit too late to remember my drink, but it was definitely excellent... As per Tresna's suggestion, get a drink mixed for how you feel. This is no ordinary bar, but rather mixologists doing what they are good at. Check out the everleigh if you want to impress some non-Melbournians or need a relaxed option to your bar hopping adventures.

Yelp
I'm usually not a big fan of quite swanky cocktail bars but I think I can definitely make an exception for the relatively new venue on Gertrude Street - The Everleigh. A very unassuming looking place from the outside, once you are up the stairs and seated in a really cool little booth you can get a real feel for what to expect. They have a decent sized cocktail menu and make a great drink. I just asked for the bartender to make up his own cocktail with a base of Scotch and then the next with a base of gin. On each occasion they were delicious. We went on the week they opened and they had some issues at some point. Rather than have us wait ages for our drink, we were brought some complimentary shots. This was a nice touch indeed.

Yelp
A great place to come with friends the friendly atmosphere as you walk in the front door is refreshing I was blown away at the choices of cocktails. By the time my group of friends left we were let's say a little intoxicated but the night was a success we all said we would come bak again.
google avatar

Lisa V.

Yelp
The drinks were so expensive and there was a block of ice the size of a iceberg in it, we were lucky if there was a shots worth on the glass and it was $19 for the pleasure of the drink. The bar was nice, staff friendly but I could not believe the rip off drink. I don't mind paying for drinks if there is actual drink in it and not just a chunk of ice
google avatar

Charlotte C.

Yelp
It's nice place that I would love to come again if somebody else pays my cocktail. It's quite expensive for my standards. The staff were friendly, the atmosphere were nice, but not impressive according to the price.
google avatar

Yelp
If you have one night in Melbourne, this is where you want to go for drinks. The folks who opened this place were trained at Milk and Honey in NYC by Sasha Petraske himself (RIP), and that means they're making the best cocktails in town. True to form, it's a little hard to find the door of this place but has a great speakeasy vibe once you get inside. You can order the same standard drink that you normally order, but I highly recommend letting the bartenders surprise you with one of their favorite concoctions. Drinks: 5/5 Value: 4/5 Service: 5/5 Atmosphere: 5/5

Yelp
Welcome to a mad, alcoholic scientist's apothecary laboratory. Oh and the scientist is also really cool, like hipster/ganster fusion cool, which is pretty cool in anyone's book. We sat at the bar. Michael attended to our every need (wink wink) and the wonderful bartendress fixed us up a martini with a twist for my pal, and a dirty martini for me. I wanted it filthy, like stray dog, hobo-beneath-an underpass filthy, and she duly obliged, serving it up in an ornate crystal cup with an extra side of the giant plump olives, each one meaty as a small steak, that were drowned in the my goblet. Oh man did I enjoyed that drink. Before we left she gave s a free shot of Buffalo Trace bourbon, and did one with us to boot. Marry me, bartendress. Let's elope to Mejico tomorrow. Oh, and the bill came with a Everleigh postcard which you fill out and they'll post to anywhere in the world for you. Ours went to San Francisco because we lack imagination. But still. So good.

Yelp
Love love love this place. The other reviews say it all. So I should just leave it at that.... but il add just a few words. Just say in a few words (mine was "choc orange) or talk in depth with the amazing staff and you'll be handed an amazing cocktail. On my second visit here my mates and I had already decided our "key words" - choc orange (yep, me), something creamy (a friend who was outraged we didn't get dessert after dinner), something fruity (hey we're all mates, we love you, you're in a safe place we wont jugde you) and something alcoholic ( hmmm, one mate out of the closet, another straight (pun intended ) into rehab). All were AMAZING!!! Great place to wow your mates/dated/and or other. Go here but PLEASE keep it a bit "hush hush".

Yelp
This is a funky cocktail bar tucked away upstairs in an unassuming building. You see a door which leads to some stairs which leads to another door which leads you to this dark candle lit bar. Very cool. We came here after dinner for some quick drinks. The server is very friendly and asks what kind of flavors you like and had drinks tailor made for you. Check it out.

Yelp
Best dirty gin martini to date in Melbourne. Big call I know, but it's an honest appraisal. Very friendly bar staff who answered all our questions, and went well out of their way to match a cocktail with each of our needs/wants/desires, several times. I could easily spend a long time at The Everleigh whiling away the hours in one of those comfy booths. An intimate, buzzing venue suitable for a date, catch up with friends or small group (maximum of 6 people per group). Grab dinner at one of the many highly rated venues on Gertrude Street and slip through the door next to Belles Diner up to The Everleigh. A very memorable experience, will be back for another gin martini. Highly recommend!

Yelp
Lovely cosy space. Felt like I had walked right into a Mad Men 1950's style bar. We visited on a quiet Sunday night and there were many spots to choose from luckily. Our drinks were delivered promptly and were delicious. When we decided to go downstairs for some 'fresh air' we notified the matre'd (is that the right word) just to let them know we would be back in 5, and when we came back our drinks were gone. However they came back out straight away - they had just put them on ice for us - lovely service. Actual towels to dry your hands on after visiting the ladies bathroom, what a cosy and decadent place. Cant wait to go back to try all of the drinks!

Yelp
Officially, this is my first review after at long last gaining my well earned and official "Elite '12" Status. What marks for a good occasion, also makes for a good venue. Where better than somewhere that has in common the last two letters of my name? Everleigh, and Hugh. The Everleigh is a venue that I've wondered about for some time, too long even, with that glint of sentimental desire. Yet again, mystery and intrigue surrounds, and perhaps builds upon anticipation before entering. At this time, it's also worth noting, that despite cost, this holds to be an ideal destination. It is set in a by-gone era, but one that is lost on most people these days. The space itself is very elegant; being refined, it does not the need to to flaunt or show off. Think dark wood, intimate surrounds and the trappings of civilisation. The cocktail list is arranged in a suggestive manner, and is followed by a sipping list; which amounts to spirit categories. On first approach, there is a waiting, or lead room to the venue itself, designed, one imagines to hold off bottle necking of patrons upon arrival. All in all, it's very old world, polite and charming. The Everleigh remains calm and without too much complication. A venue that requires good company in good keeping. Somewhere that requires well spent time, and time done well. They do happen to make a grand old fashioned, fashioned with rum. I was going to write more about the excellent alcoholic creations, but I was too busy drinking and enjoying them. Confound you!

Yelp
The Everleigh is one of those beautiful places that leave you feeling warm inside. Every attention to detail is covered - from the moment you are greeted at the door to the old fashioned steel straws in your delicious made-with-care cocktail. Decked from head to toe in 1920's glamour (both the bar and the staff), this is a relaxing bar to cool your heels. A great place to feel world's away from, well, anywhere!
google avatar

Yelp
I was brought here by the lovely Tresna, who informed our group that we can ignore the menus, and instead have a cocktail "conversation." Right she was, as our waiter asked our likes and dislikes, and customized a cocktail for each of us. Sure, you can order a beer or a normal cocktail here, but you're missing the point if you do. Pretty amazing stuff, and great service. Not an every night occasion, however, as it would break the bank. But it was definitely a cool vibe.

Yelp
From the brainchildren who brought you Milk & Honey (NYC and London) comes the newest, most hidden gem in Fitzroy; The Everleigh. Don't let the front door fool you, it's quite non-descript, and usually lit by Ikea-looking tea candles, but upstairs lies a swank, oak paneled lounge that really does remind you of a time gone by. The doorman, or should I say maitre'd, along with the bartenders are dressed in waistcoats, crisp white shirts and black ties. Really classes it up, but even better to know is that any given night, one of those handsome fellas is the owner. Excellent for a date (impress with the unknown), or great with your friends who love to get dolled up and tie one on. Go with an appetite for a liquor, and as for their creativity. The menu is excellent and succinct, but they do enjoy crafting something from the deepest reaches of their bartending know-how. Seriously. Say 'whisky and spicy' and you'll love what comes out swimming with a golf-ball sized icecube.
google avatar

Kenny N.

Yelp
Appearances can be deceiving. It's easily dismissed as you walk by on Gertrude. Try not to miss the sign printed on white A4 paper. How bland. The upstairs, however, emerges as an old-fashioned wonderland. Vintage swing jazz plays as you enjoy the comfortable and varied seating arrangements. I'm marking this three stars for not meeting my expectations. I went here because they were known for making a Penicillin cocktail which features Scotch and ginger. If you know anything of these two flavors, you might expect smoky and seductive bite to be appropriate adjectives. However, my drink was bland and uninspiring. The most notable thing about it was the large ice cube occupying the vast majority of my lowball glass. There wasn't a noticeable flavor of Scotch or ginger. I was disappointed.

Yelp
If you're after a special spot for cocktails, this is one of Melbourne's finest. Definitely a must for visitors, The Everleigh is a classic speakeasy style bar, where the talented staff are eager to come up with the perfect drink to suit your tastes. Stop off downstairs at Belle's for some dinner, then wander up into this beautiful little bar for a drink or two. or three. Cheers!

Yelp
We stumbled across this bar more by accident. We were told to visit the projection inside by a man on the street, and always curious we went inside. The bar is upstairs and has lots of different booths. It's sit down only which means we had to wait 20 minutes for a table. The cocktail list is short, but not to worry, if you tell them what you like, they are happy to mix any concoction up for you. All the better. Definitely a bar for the start of the night or a more cosy intimate drink.
google avatar

Kristen A.

Yelp
Excellent place! Lovely old world glam (art deco) vibe and decor, excellent (although a bit expensive at $19) cocktails and great service.
google avatar

Natasha Nikita C.

Yelp
Completely and utterly disappointed in this place. I don't ever feel compelled to write reviews of anywhere unless it's out-of-this-world spectacular or spectacularly appalling, and unfourtunately, this is the latter. The actual bar/decor is really beautiful, but not worth the, to put it mildly, crappy service. My friend and I were seated by a the hostess, who dogmatically insisted that we try "the bartender's reccomendation", citing that they "really try and promote it". My friend and I were led to believe that it would simply be a reccomendation for a type of scotch or bourbon, as we simply stated that we liked whiskey. The hostess brought over two hot toddy-like drinks, and we sat there with just those two drinks. When we got up to pay, we were charged $69. For two drinks. Never, up until this point, were we told or led to believe that the drinks would be $35 each, and considering the speciality cocktails on the menu for around $23 (which is still a tad bit of reach) and the fact that we dress lke the typical Fitzroy art students in our early 20's, it was never assumed nor divulged they would be anywhere near that price. In shock, I handed the cash over, because I had no idea what to say - that kind of bill for - I repeat- two drinks that the hostess INSISTED we get without our knowledge of the price, is unheard of. Cocktails at Chateau Marmont don't even cost that much, and these were hot toddys. Not once was it never mentioned that the drinks cost more than even the menu specialty cocktails or asked if that was out of our price range, my friend and I honestly feel swindled and taken advantage of; incredibly impertient, unethical and irresponsible of the staff, and when messaged on instagram politely asking for an explanation once I got over my dumbfounded speechlessness, there was no response. So unless you have insanley deep pockets, enjoy being overcharged, or posesses some masochistic need to be hoodwinked by a lack of transperancy, I would not recommend going here.

Yelp
Serving Milk & Honey realness to the thirsty people of Melbourne, The Everleigh has absolutely nailed 'prohibition chic' in its dark, moody den of sin upstairs on Gertrude St. This is the kind of place where you want to order off the menu. Flex your booze knowledge by ordering absolutely anything, and rest assured that you're drinking the very finest product on offer. Attention to detail is in absolutely everything--from the hand carved ice, to the candles on the waiters' trays that are illuminated to highlight the beautiful drinks on their way to tables, then blown out to disguise the sad empty glasses in need of refills. These are professional bartenders, not mixologists or cocktologists, or whatever buzzword is flying around. They really know their stuff. If you enter with an open mind that's willing to learn a thing or two, you'll drink like a queen (or king) and soon be in love with The Everleigh and everyone who works there. The classics are done to perfection. Martinis, Negronis, Old Fashioneds, Sazeracs, Tom Collins; you really can't go wrong. Just don't be the jerk who orders a Ramos Gin Fizz.

Yelp
probably the most d a r l i n g space i've had a cocktail in. you feel like you've been taken back in time - the waitress and bar staff all dressed like as if from the 1950's. i MUST go back wearing a nice dress! amazing cocktail list - the waitress asked us what mood we were in and suggested drinks to fit. absolutely in love! xo U.

Yelp
Quite pretentious service. Plastic and fake staff. Cocktails aren't bad but oh do they make you pay for them

TG B.

Yelp
Pleasant welcome but just the one type of vodka - Ketel One. Odd. I'm not into the speakeasy thing, either. Rather have a Belvedere at The Mess Hall.
google avatar

Eric O.

Yelp
The place is great..all cocktails are priced at 21 bucks. I had the cider and ginger toddy but the real treat is ordering the bar tenders recommendation based on description of what you would like, which is a cocktail not on the menu. My partner wanted chocolate based creamy almost dessert like cocktail, what she got was contreau based creamy cocktail that was delicious.

Mikkel T.

Yelp
Absolutely one of the best cocktail and whiskey bars in Melbourne, along with the Black Pearl and Whiskey & Alement. What sets The Everleigh apart -- aside from its speakeasy homage decor -- is that the bartenders are keen to experiment and guide you on a journey. In other countries, they'd be called mixologists. Here, they're masters of their craft. I told my bartender that I wanted to start with a Millionaire and finish with a Sazerac. It's a pretty challenging journey, prone to palate fatigue; the Millionaire is heavy on the citrus and the Sazerac has a sweeter, absinthe-coated flavor. My bartender (he didn't share his name, and I didn't ask -- speakeasy style) served the Millionaire, followed by a Rum-lemon sour, followed by a Rum Old Fashioned, leading into a Sazerac made with Rum and Rye. For what I got -- a customized journey through various flavors that avoided palate fatigue -- I considered the bill a steal. I would absolutely go back, and hopefully manage to try their excellent bourbon list. But honestly, I'd say the cocktails are better.

Yelp
Originally the night was going to be dinner at a restaurant that was recommended to us then around the corner for a rocking night at cherry bar. Unfortunately the wait for a table was 45 min and it was heavy metal at cherry, even if we went ahead we would have missed majority of the act so we looked up gigs in the city and found this place. Normally changes of plans end in disaster but I was kinda happy we gave this place a try. They have a small but interesting menu, I just had a burger and chips but even that was yummy. Drink prices are normal to high but a good selection. The venue was upstairs and it was a decent size room with a decent stage and the bands didn't disappoint (except for the first one but they were kinda funny so A for effort). So the next time your in the Fitzroy area and looking for a great night, look no further :)
google avatar

Kevin L.

Yelp
Easily my favourite cocktail escapism bar! I mainly stick to the classics but have tried some from their menu as well which I was totally satisfied with. They do great sazeracs be it cognac or rye or a combo.
google avatar

Chris B.

Yelp
Everleigh never lets me down. Good drinks, good vibes, bar staff who *really* know their stuff. It can get a bit loud at times, but if all you know is "I want a negroni but not quite a negroni and I guess maybe I feel like a martini or perhaps a g&t", don't worry, they'll work it out. I look at The Everleigh as a custom massage parlour for my liver. Belle's Diner downstairs is a great way to whet your appetite before beverages too.
google avatar

Jeremy S.

Yelp
Perfect place to go on a cold winters night. Table service only, so don't expect to come here to congregate around the bar with a large group of mates. Service is amazing, cocktails are awesome and the decor is super cozy and intimate. Highly recommended!
google avatar

Christopher C.

Yelp
Discrete address for a memorable venue. Intimate setting for a group of a few friends to enjoy a few cocktails. The interior oozes class, adding to the experience of such a well done cocktail bar, and you won't want to stop at one. With the option to flip through the menu and go for something traditional, or to let the bar staff work their magic with a flavour or texture that you're craving, this is a great place to spend some time.
google avatar

Lydia W.

Yelp
Love it! The Everleigh is a little gem of a cocktail bar on Gertrude Street, above Belle's diner. It's dark, glamorous, and has a great atmosphere. I loved the option of being able to have a custom-made drink based on a few flavors or ingredients that I liked. Cocktails are not cheap - $21 each, but I guess this is a standard cocktail price in Melbs anyway. Great experience here with friends - there is a good amount of booths for little groups to enjoy few quality drinks together.

Yelp
an amazing venue with excellent service. it is so pretty, warm and inviting. i went with what they wanted to make, saying i usually liked caprioskas. they brought out a strawberry & lime concoction that i didn't like. i said something to the waitress about it and she apologised and brought me out the most beautiful caprioska. somehow i managed to drink three more. i had to keep testing for quality, and let me say, they passed. i almost fell down the stairs in my heels. i'm classy like that.

Yelp
I don't tend to pay much attention to "Best of" guides and instead to create my own using trial and error and judge based on personal experiences without preconceived notions. Most tell you what you should think or feel, that or what to drink in the case of bars and one person's gin may not another person's vodka. When I drink, I go about my business in a very non-standard way. If at all possible, I want the venue to highlight their specialities and allow the barstaff carte blanc access to devise drinks using their creativity and more importantly experience where the ultimate damage it does to my credit card is incidental. The Everleigh in Fitzroy not only met my challenge but exceeded all of the expectations that I had when I walked in. The aforementioned guides and "best of" lists have always been very kind to The Everleigh and it was frequently topping many of these lists. With Der Raum being renovated, I needed to find a new, exciting and cutting edge drinking hole and I can't say how pleased I was to make the acquaintance of the staff at The Everleigh. (Note: Der Raum is meant to re-open in February 2013) Entering the bar, you will feel that you are in a different era; one where professionalism, attention to detail, service and courtesy are not only exuded by the staff, but the key word - courtesy - is expected of the patrons. Being a very orderly person, I really liked that if you are going to drink at this place that you are expected to be seated and of course take advantage of the very efficient table service but also relax and enjoy the surroundings, the anonymity of the private booths and more importantly nobody knocks into you or jostles you as they attempt to get into position at the bar as standing around is simply not allowed. This creates a very relaxed and managed environment that allows the staff to do what they do best. There were two bartenders on duty when I was there on Saturday evening. They have to be the two of the hardest working bartenders that I have had the pleasure of baring witness to. I didn't need to consult the menu but instead gave the opportunity for the bar to produce what they thought was suitable based upon known preferences, mood and of course with an end game in mind since the spirits and heaviness of what is concocted is gradually changed so each drink builds on your last experience and your palate is not destroyed. Some bars like Der Raum have been very successful with their cocktail degustation option however The Everleigh does not do adhere to a degustation menu per se, what they devise and deliver is based upon pure consultation and for a hedonist, I was in my zone - transported to a bygone era where people were consultative, polite and the expectation of courtesy flowed both ways. I couldn't fault The Everleigh and it would have had to be my best bar-based experience in some time.

Yelp
What is not to love about this place - great cocktails, great ambience, amazing staff. All our drinks were chosen by the staff and all were amazing. Free shots as we left and joined in by our waiter (although we did spend a bit - you tend to do that here!). Perfect night out for our girls weekend away, we'll be back next time we are in Melbs.

Yelp
I love this place.. if you need to go to a bar that your every taste is catered for, then look no further. leave it all up to the bartender and let them custom make something for you. there is also a cocktail list... but pfft.. who needs that when you can let them know your mood and they make something for you!

Yelp
Great cocktails and a delicious cheese and charcuterie plate. Warm service and they surprised our birthday girl with complimentary shots at the end. Cosy interior and ambience, give it a shot

Yelp
The Everleigh is an old-worldie cocktail bar that looks like something straight out of an episode of Boardwalk Empire. It has low lighting, chandeliers, lots of dark wood, and a very well dressed maitre de and bar staff. The space is separated into two main sections - the bar, and the boothed seating area. In terms of style, the bar room is very well executed, and seems effortless in it's attempt to pull off 20's-era opulence. The room in which you are quickly seated by the maitre de, on the other hand, just seems like a tacky replica of the style that it is trying to achieve. It looks like the owners may have run out of money when they were decking out the bar, because this room is seriously underwhelming (in comparison to the bar room at least). It has stark white walls, with plastic white light switches, a shining green 'exit' sign, and a couple of old framed photographs. The brown leather booths are a nice touch, but not enough to carry off the style of the whole room. This room just seems like they have reneged on their original commitment to the authentic 20's style that the bar room achieves so well. The service was great and the cocktails were good - quite strong, but that's the way I like 'em at $18 a pop.

Yelp
outstanding cocktails, lovely speakeasy vibe (yes, this trend is a bit played out by now, but so what, shoot me). great quiet and classy place for meeting with friends for a great drink. will mightily please lovers of little branch, milk and honey, experimental cocktail club and other such types of places...
