The Fusion Bar & Restaurant

Sophisticated ambience and great food. Having been in Italy for a while it was a much needed variation from pizza and pasta. Still Italian influenced but with other cultural influences and healthy ingredients. Fantastic.

Quirky, pricey, friendly, happy, tasty, fusion of Italian and Japanese. Cocktails are a weird mix, all well balanced with taste and style. The signature Fusion Negroni is served within a glass cloche containing smoke, others in laboratory flasks, some just in glasses. Food is minimal and interesting, more tapas and light bites.

This is for sure the best cocktails bar we have been in during our trip in Italy, and this comes from someone who worked a few years in the alcohol industry. Amazing service and cocktails were next level.

The special cocktails were underwhelming, an experiment gone wrong. They are more show than go, albeit a very good show. Ambience was decent, food was average. Service was top-shelf, but so was the bill. Definitely will avoid this place in the future.

Cannot fault the cocktails just a shame it is in quite a cold setting which lacks any real character. Would be much better if the setting was quirky and had a bit more about it rather than being a room within a hotel.

Underwhelming for sure! Reviews did me dirty. Service was good. Food was ehhh, definitely had more option in the review pictures than the menu. Limited options… very limited. Special drinks were not very special, and the bill was more than I spent on any other restaurant here with less than half the food and half the taste.

Husband and I ducked into this place during a hot afternoon, lured by the WiFi and the air conditioner available and also the classy interior. We only ordered drinks over our two hours... but the staff never rushed us and kept refilling the complimentary nuts, edamame, and chips (even varying the flavors) and also gave us each a lovely taste from the kitchen. We ordered another drink each to try to compensate the excellent service and food. Lovely and polite, top notch.

Great cocktails and interesting sushi options. My expectations for sushi in Florence were low, and I was pleasantly surprised with the quality and options. Stay away from the scallop roll - there just wasn't something right about it, my friend and I couldn't eat it! I think the waitress felt bad that we didn't like it and she brought us a small dessert on the house - some kind of coconut dish - that was incredible! If you're looking for a break from Italian food, definitely consider this place! We also got 20% off our bill by booking with thefork on Trip Advisor, so check into that as well!

I have been here several times for after dinner or late night drinks. Every time, whether it was just my fiancé and I or also with friends, we always enjoyed ourselves in the library area. The reason why we choose the library to enjoy our drinks is because it is much quieter with two small seating areas, as oppose to the sometimes unbearably loud true bar/restaurant. Appealing contemporary art is found through the entrance into the hotel/restaurant/bar entrance, as well as in the library. The lack of a fifth star is because on one occasion the server entirely forgot our drink orders.

Fusion bar is one of the top bars in Florence, both for "cocktail artists" and for venue offered. It's a very expensive place to go to, nested inside one of the top hotels in Florence, but the quality of food and service will surely not leave you disappointed.

Very sub par. The appetizers were cold and unseasoned while the main course was poorly done . Clear sloppiness on my plates and portions were disappointing. To finish it off, the drinks were quite disgusting. The ambiance is the only thing keeping me from giving it one star.

Try the sea bass!!! The sea bass was probably the best piece of fish I've tasted well ever!! The sushi is fresh and so yummy! I loved the cocktails they are so tasty and unique!! If you are looking for good Asian, cool music, great service and a delicious drink go to the fusion!

Great oriental mojito, good sushi, okay service, totally overrated. Not deserving of the hype it gets but fine for a cocktail & some average sushi.

Don't let the ambiance so close to the Ponte Vecchio Bridge fool you. Service is horrible! Not crowded and servers don't seem to work together. Probably deserves 1star but feeling kind
