Really good hand made pasta for insane price.
The pasta strands are awesome. Not many pasta places making pasta like this these days.
I found the "gourmet" sauces more exciting than the normal selection.
Particularly the fettucini strands and the Calabrese sauce are my favourites.

Great range of pasta dishes, salads and sweet treats, including gluten free options. Easy streetside parking. Delicious pasta! Ordinary customer service without any joy/communication shown from staff. It is the Calabrese (with parmesan, sundried tomatoes, olives & minimal amount of salami/pepperoni) pictured here, $12.30 for the large round tub.

I was quite upset about getting some pasta today as it was raining. I waited 20 minutes when there were only three people in the store. When it was my turn, they served the person who came in after me, and I then had to wait another 10 minutes to even order my food. When I got my food, there was barely any meat on top of the noodles. In the photo I only had three bites and it is an extra large portion I politely asked for mozzarella and they gave me Parmesan which I hate the smell and taste of.

They microwave the pasta in plastic...
We got a large takeaway order from here. The food was lovely, the staff were lovely and the place itself it great. However, I watched as they put the cold pasta and sauces into each takeaway container and then microwave it. I asked if the containers were BPA free and the employee dint know.
I'd eat here again, but either eat-in (maybe they microwave those orders on plates?) or get the takeaway order cold and heat up at the hotel (we couldn't do that this time).

The Pasta Merchant is an absolute delight! The pasta is always fantastic but it’s the friendly, welcoming staff that really give the place its charm. It’s a long-time family favourite for us, the carbonara is unmatched. A must visit in Launceston, even just for a coffee!

A couple of weeks ago... Went to buy food for dinner. The woman who served me immediately assumed a family dinner and offered family size lasagna. Didn't ask how many dinner was for. I had to ask lots of questions. She wasn't overly helpful to someone who was obviously new at this. Anyway, settled on 2 bundles of pasta and two sauces, carbonara and pesto chicken and a garlic bread. The pasta wasn't enough, the sauces were very runny. The creamy pesto wasn't very pesto. The chicken was such a miserly amount. I bought two large sauces where I could've done with small. No guidance. I was served but not 'engaged'. Very disappointed.

We ordered a Cabonara and some other pastas. Which I feel the Cabonara was delicious. However it is a little expensive for us. Hope the owners/owner can lower the price for the dine in or increase the portion especially for the large Cabonara. The lady who took our orders today was super friendly and sweet. Definitely would recommend this place to others! Ate here on 16 November 2023 12-1pm.( updated my review with photos I forgot I had)

Great spot for micro waved or waveable takeaway. I'm not partial to cream or tomato based but the cream sauce is definitely better here. Pasta was a little chewy and there wasn't enough sauce or ingredients but at $12 a serving ...

Yelp
This is a good option if you are looking for a cheap and cheerful dinner. It seems to be avery popular takeaway spot for locals - but we opted to eat in. It's not fine dining - the food is pre-prepared and heated up in a microwave, but it was surprisingly good. The pasta was al dente and the sauces were tasty. We ordered a couple of pasta meals, a salad and a gelato and it came to about $20 per head - very reasonable.

Yelp
The service was quick and friendly, the pasta sauce itself was tasty, and the menu options looked good - some old favourites and some interesting and different flavour combinations.
The actual pasta in my meal (fettuccine) was so incredibly overcooked that it was disintegrating as I mixed the parmesan through. The pasta was flavourless and textureless when I expected (from a place called The Pasta Merchant) that it would be the star of the show. It didn't look or taste like egg pasta that I'd make at home. It didn't even look like quality supermarket pasta. I was very disappointed.
They clearly do a roaring trade in takeaways, and my family loves this place, so I'll give it the benefit of doubt - I'll probably be back and I hope I have a better pasta experience next time.

Yelp
Love this place. Fresh gnocchi is special! This is my favourite pasta lunch in Launceston. Parking is usually available. Ice cream selection is handy.

Yelp
INCREDIBLE PASTA. I am a small 60kg 5.5ft local Tassie girl and I eat three mains in one sitting because it's so good. Recommend literally every dish on the menu. Best local secret in Launceston. BEST. They also do gelato, which is heaven. Parking can be tricky.

Yelp
Delicious fresh pasta and gelato, great value for money. Very popular with the locals.
