Hubby and I came to celebrate our 19th anniversary. The Victor is situated inside Parq Vancouver JW Marriott 6th floor. Once we entered, we were greeted by friendly staff. We reserved a table, but the staff had some mixup, so we ended up waiting for another 15-20 minutes or so. We sat down for a few minutes, the staff came to apologize and asked us to move to another table, saying they have a bigger table by the window for us. So there're some kinks and inconvenience at the beginning...
We ordered from the Dine Out menu --- complimentary cheese and onion bread, beets and burrata salad, lobster bisque, steak frites, chocolate mousse and creme brûlée donuts. We also ordered a dozen of oysters, and wine pairing to each course.
First off, the complimentary cheese and onion bread is soft, moist and fluffy. The whipped butter is silky smooth to go with the bread, I can easily eat a whole loaf!
A dozen of assorted fresh shucked oysters were a bit disappointing. Though nicely chilled, I could not taste the sweetness and unique flavor of each kind of oysters. Since it was assorted, server also didn't explain which types of oysters are they, which ones are from East Coast, which ones are from West Coast, flavor profile, etc.
Beets and burrata with citrus vinaigrette is decent, it's always a lovely combo, but pretty predictable. Lobster and crab bisque is very thick, velvety smooth, and packed with sweetness and freshness from the lobster and crab carcasses. Amazing!!!!
Steak frites is perfectly cooked to medium rare for me, flavor is slightly on the mild side, it could use a hint more salt and black pepper. I'm surprised the server didn't come to ask if we want fresh ground black pepper. Arugula is nice and fresh, and the fries are super hot and crispy.
Dark chocolate tart is a very chocolatey mousse, light in texture but got that punch of strong dark chocolate flavor. Hubby is a chocolate lover, so he raved about it. I had the creme brûlée donuts. The maple cotton candy is a nice surprise and bring out the inner child in me. Creme brûlée donuts are like deep fried Chinese buns with custard inside. The sweetness of the custard are just right, so that it's not overwhelming even when you eat all four of them.
The wine pairing selection is also wonderful. Cedar Creek Pinot Gris paired so perfectly with the beets and burrata salad. The sweetness of the beets and citrus vinaigrette really brings out the green apple, nectarine and pear in the wine.
The Sandhills Cab Franc is good with the steak frites. As cab franc is a fuller body wine with notes of ripe berries, plums and vanilla, it goes well with a fuller body, heavier entree like the steak here.
Taylor Fladgate 10 year old tawny is known for its versatility. It's smooth and round, with notes of butterscotch/ caramel and prunes. It's lovely to pair with many desserts, and doesn't feel overpowered by the sweetness.
Aside from the kinks at the beginning and the underwhelming oysters, the Dine Out menu is super solid! I'd definitely be back to try their regular menu.
