A Guide to Guadalajara, Jalisco's Beating Heart | Condé Nast Traveler

"Another fixture in La Perla Tapatía, this humble street stand has been around since 1959 and is portrayed as a place where residents flock for birotes stuffed with carnitas bonded by a smear of pale, buttery refried beans, then bathed in a savory duo of tomato sauce and fiery salsa de chile de arbol. The emphasis is on its classic, no-frills style and its status as a long-standing go-to for tortas ahogadas." - Bill Esparza

The customers say this is the best including our cab drivers. Service is efficient even though they are really busy. Ordered ahogadas and tacos. The ahogada had sourdough bread with crispy edges and you can taste the tomato sauce. My friend liked the crispy tacos as well.

If you go to Guadalajara you MUST HAVE a torta ahogada, and there are thousands of other places, but if you are looking for the best… el príncipe heredero!!! They prepare with a special bread (bolillo) that one side is hard so when they are soaked in the amazing salsa it stays crispy and crunchy!! Unbelievable!!! The line moves fast and it’s well organized and worth any wait.

The most traditional “Torta Ahogada” from GDL. These are the real ones and you won’t regret to try them. Since I was a child I used to come often and they still keep the touch and taste!

These are probably the best tortas ahogadas I've ever had in my life. And my personal favorite is to have it inside of a bag. I know it sounds weird but it's amazing you bite the corner and then just slurp up the entire torta, world's best creation.

A typical place in Guadalajara, its staff is very friendly, the food...excellent.

The tortas ahogadas is totally over rated here. You can get way better at the markets for cheaper. The horchata is ok.
