The Vibe @ Uncle Ernie’s – A True Taste of Anguilla During our stay on the breathtaking island of Anguilla, we made our way to Shoal Bay and instantly understood why it’s hailed as one of the Caribbean’s best beaches. But nothing prepared us for what we’d experience at The Vibe @ Uncle Ernie’s. Right on the sand, our beachside waitress brought over strong, delicious rum punch the kind that hits just right while soaking up the sun. Friendly, fast, and full of island charm. Later, we walked up to the restaurant for a light bite. But with so many tempting dishes on the menu, I couldn’t choose until the owner and his lovely fiancée suggested the oxtail with rice and peas. My friend ordered the curry conch with Johnny cakes. While the chef & her assistant worked her magic in the kitchen, the fiancée hopped behind the bar and whipped up more rum punch with a smile. As we chatted with the owner, we learned the rich, heartfelt history of Uncle Ernie and how he’s keeping the legacy alive serving up good food, good vibes, and unforgettable moments. Then he gave us a shot of a local bush rum. It packed a kick yet very flavorful. Then came the food...WOW😲 The oxtail was fall-off-the-bone tender, seasoned to perfection with just a kiss of sweetness ( i couldn’t stop licking my fingers 🤤) The rice and peas were soft and flavorful. Even the side salad was crisp and refreshing. The curry conch was tender, and deeply satisfying. And those johnny cakes were pillowy soft and absolutely addictive. My friend couldn’t stop raving.🤗 The owner’s kindness stood out. Even after closing, he waited with us to make sure we had a safe ride back to our resort. I only wish I had more time on the island. I’m already planning to come back just to try the stew chicken and curry chicken. If you’re in Anguilla, do yourself a favor visit Uncle Ernie’s on Shoal Bay. The vibe, the food, the people it’s the soul of the island on a plate.😍

We ate three evenings in a row (basically during our entire stay), because the owner was so accommodating. We showed up after 6 and was planning on eating dinner. We didn't know that the kitchen was closed but Jarvis, the owner, opened it back up for us. The food was outstanding and reasonable in comparison to the other restaurants around. I loved the fish fin gers! The owner showed us pictures of the local fish that weren't on the menu and asked if we would like for him to catch the oddly looking honeycomb box fish for the next evening. We agreed and were pleasantly surprised. The freshness is put of this world! The service could not be better! I'd highly recommend this restaurant. It's a typical Anguillan cuisine with the most friendly service!

Our family of five had a delicious lunch at Uncle Ernie’s. We had both the mahi mahi and the snapper for fish dishes. Both were fresh and excellent. We had the calamari and Caesar salad to start -and these both were excellent as well. Good service. Good food. Good atmosphere.

We rented beach chairs here with food and drink service from the restaurant. Prices were typical for Anguilla, the service was attentive, and the food was solid—but the real highlight was the vibe. Great music playing, friendly energy, and it’s located on one of the most stunning stretches of beach you’ll ever see. Grab a Carib, settle in, and enjoy!

The waitress UPSOLD us on a fish that we didn't ask for and NO WHERE on the menu is there a $50 fish.. the waitress should have said that BEFORE bringing it to us. I don't eat alot due to surgery so I'm not sure what she assumed. Bad business and we will NOT return. Sorry but have to be honest.

The blasting music ruins the vibe at Shoal Bay. This is not why people Come to Shoal Bay. It’s a shame because the food is good. Just turn down the music please. This is Anguilla not SXM.

Over a two week period I ate here 5 times. Food is very good(fish,hamburger,fish burger,chicken sandwich). Folks are friendly. Good place to order food and chill with beer. They recently added draft caribe!
