As someone who has never been a huge fan of pho, I can honestly say that Vietnoms completely changed my perspective. From the very first sip, it was clear that this wasn’t a standard bowl. The Charred Beef Rib Pho delivers a broth that is rich, deeply developed, and layered with flavor in a way I’ve never experienced at any other pho restaurant. Too many places rush this step, resulting in something thin or one-dimensional, but Vietnoms clearly invests the time and care needed to build real depth. It instantly shattered my long-held assumptions about what pho could be.
The beef itself deserves special praise. In many pho spots, the meat can feel like an afterthought—under-seasoned, overly tough, or simply a cheap cut added for filler. Here, the beef rib is exceptional, offering a satisfying chew while remaining tender and flavorful, perfectly complementing the noodles and broth rather than competing with them.
For vegans and vegetarians, Vietnoms offers what may genuinely be the best Deep Fried Tofu Bite on earth. This isn’t a token plant-based option—it’s something they’ve clearly developed and refined with intention. The tofu is perfectly crisp on the outside, soft on the inside, and paired with a spicy sauce that delivers heat, balance, and an addictive crunch that keeps you reaching back for more.
The Vietnamese Beef Carpaccio was beautifully garnished and thoughtfully composed, delivering bright, fresh flavors that created a moment of pure euphoria with every bite. It felt both indulgent and refined, showcasing Vietnoms’ ability to balance boldness with finesse.
That said, the undeniable star of the meal was the Sizzling Beef, Egg, and Meatball with baguette. This dish takes inspiration from Spanish Huevos a la Flamenca and elevates it to an entirely new level. The sizzling presentation, rich flavors, and perfect pairing with crusty baguette made it impossible to stop eating. I could have easily ordered ten of these and still wanted more.
The drink menu is just as impressive. Vietnoms offers a wide range of creative and well-crafted beverages, but the Vietnamese coffee stands out as an absolute must. Bold, smooth, and deeply satisfying—order two. One to enjoy during your meal, and one to take with you. If you don’t, you’ll regret it and find yourself thinking about it for days afterward.
With only two locations currently, Vietnoms has clearly outgrown its footprint. Expansion feels inevitable, and I can only hope their next location offers a larger space to match the demand. Believe the hype—this is a restaurant driven by thoughtful recipes, bold flavors, and a menu that keeps you coming back while constantly making you want more.
