We went to Arbois for a day after a couple of weeks through Burgundy, Beaujolais and down the Rhone. The tasting here was fantastic. Pablo took us on a tour through Cremant, Chardonnays, the Red blend of Pinot Noir, Poulsard, Trousseau, and straight Trousseau, the amphora skin contact Savagnin and the Vin Jaune. All biodynamic ally farmed and skillfully made into stunning and expressive wines. We would have bought the shop out if we didn't have to fly back to Australia. We did but anothrr suitcase though. One of the most intettastings anywhere. Pablo's passion about wine in general from all over the world, and knowledge of the methods and practices used, combined with reverence for the owner's ideas and skills were fantastic. Being a great English speaker made it even better for us.
