We had dinner on the 20th of june at this wonderful restaurant. First of all, the chef took us in even if he was about to close (still sorry for that). We had the small sushi plater to share and oysters as an extra, which were perfectly balanced between acidity, freshness and spicyness. During the whole dinner, we had wonderful conversations with the chef, which really showed us his commitment to Japanese traditions. The nigiri were out of this world (especially the torched salmon belly). His technique was on point and the fact it is a sushi bar really showed us the skills of his sleight of hand. Our only regret was that we were only in Galway as tourist and won’t be able to come back until a long time!!!!
