Hurray for waffles! This restaurant is an awesome breakfast option in downtown Boise. It shares a space with Boise Fry Co, but there's plenty of seating in the bright, open space, so you don't even notice there are two restaurants in one shop.
The waffles here are amazing. At first they look a little small, but they are piled with toppings and so dense and intensely flavored that you don't need a huge portion to be satisfied.
The waffles are offered as either sweet, savory, or a mixture of both. For sweet, you can get nutella and strawberries, banana and cookie butter, or design your own from a number of toppings like syrup, whipped cream, or a seasonal choice like caramelized apples.
Savory choices feature the BOB, which is syrup, basil and bacon. They can take that model and add avocado, a fried egg, or remove the bacon for a vegetarian version. The avocado I was served with creamy and perfectly ripe and beautifully arranged on the waffle. They use just the right amount of syrup for it to have a light sweetness but not to conflict with the other ingredients.
To go with your waffle you can get some incredible coffee. They have a full espresso bar with lattes, etc., and also have brewed coffee with DIY refills. They brew Dawson Taylor and it was piping hot, full bodied, and rich. So much better than most brunch coffee, and actually pretty cheap too.
The prices can seem high for what you get, but they actually use local ingredients and those cost more. I think it's worth it for the quality you get here.
You can get a quick breakfast or sit and linger. This is a great option for lunch too, because waffles are always delicious. Definitely give them a try. The owner, Hector, is incredibly personable and will probably welcome you and chat you up. The whole staff is friendly and hard working too. Support this great little restaurant.
