14 Essential Colorado Breweries to Visit in 2022 - AFAR

"Started as a side project of another local brewer, this Boulder outfit specializes in technically demanding Czech lagers and spontaneously fermented sours, employing old-school methods like wood foeder fermentation vessels that develop unique, funky character over time—an approach that blends craft, patience, and control to achieve distinctive flavors." - Bailey Berg

Something wonderfully out of the ordinary. The wild sours flight were wonderfully different. It took my palette a while to adjust but the different sour flavors emerged. The Czech half dark lager was excellent. The imperial bout damn time was the best of the six tastes. Nice way to spend a beautiful afternoon in Boulder.

Google
Best brewery in Boulder by far. The beer is fantastic and the people are so helpful, knowledgeable, and kind. There is truly an option for everyone, including NA options. This is a special kind of brewery that feels like you are kicking it with friends even when you’re there solo. I’ve never had anything less than a stellar time here. The food trucks are delicious as well. Bonus points for ample free parking!

Google
What a great place! Their Lagers are top of the line. Service was excellent and the people I met were awesome. All around a great place to come for some beers and food.

Every time we come here it’s a fantastic experience. The beers are delicious, the dog-friendly patio is spacious, and their new food truck with Detroit-style pizza is incredible. It gets busy during the week with all the offices around but after a hike on a Sunday, you can have the entire patio to yourself. It’s amazing.

Great spot to try high quality sour beers. Indoor and outdoor seating. Friendly staff

It’s hard for me to describe how much I hated my experience here despite the 3 stars. When I arrived, I couldn’t find my group. I looked around me at the nearby tables (which were taken) for a menu, QR code, or something with a beer list, but couldn’t find anything obvious so I got in line at the bar. The bar didn’t have any visible menus except right at the counter where the bartender was taking orders. I waited my turn and approached the bartender, informing him that I couldn’t find a menu or QR code before arriving at the bar. The bartender told me that there are QR codes at the tables (more on that later). I started scanning the menu in front of me and had a hard time interpreting it, because I’m a simpleton and don’t know what things like “honeysuckle and hay” tastes like. After not even 5 seconds (I didn’t make it through reading half the description of the first beer), rather than offer help, suggestions, or explain the concept of the brewery, the bartender asked me to step out of the line. Note that there were two adjacent lines, so they would have been able to keep people flowing. I hastily ordered the top-most beer on the menu I had barely started reading but saw the word “sour”, took my $12 tiny pour in a stemmed glass, and found my group. After sitting down, I finally found the menu at a table, which was simply a QR code in a small faux leather booklet that looked much like what the final bill comes out in. And unfortunately the experience didn’t get better because the music was so loud that I could barely hold a conversation with the people sitting right next to me, and I left the place with my ears ringing and my voice hoarse. 1 star because of the service, price, and extremely loud music 3 stars because the interior design was beautiful, the the sour beer tasted great, and they know how to move an ordering line quickly, I guess If you like beer in fancy glasses, know what kind of barrel you want your beer to have been aged in, and like describing beer in obscure terms, then this is your place. If you want to just drink a no-nonsense reasonably priced beer, maybe get some help from a friendly bartender, and be able to hold a conversation with your friends, you should steer clear.

Google
Amazing and interesting beers brewed on site as well as a good selection of more traditional brews from the main 4Noses collection. Low key vibe inside with a small outdoor seating area and some food trucks and night. My vote for the best beer and brewery experience in Boulder.

Google
Wow, amazing sours and experimental brews! Also, many 4 Noses beers available on draft here (which are gluten reduced). Great space with plenty of seating, some games, and a large outdoor dog friendly patio with a food truck (typically) on site. A must stop in the Boulder area for some of the tastiest beer! 🍺

Yelp
Was trying to go to Upslope across the street but they were closed (Memorial Day). Really happy we found Wild Provisions instead. We love trying sours and turns out they specialize in sour beers! Bartender (didn't catch his name) on duty today was super friendly and extremely helpful guiding us through the beer selection. John Steinbeck in Travels with Charley again rings true when he writes "And all plans, safeguards, policing, and coercion are fruitless." Sometimes the best finds are the ones you aren't looking for. Also kudos to the great music playlist.

Yelp
We were out and about for a date evening and had been wanting to visit here for some time. There is ample parking in the evening. The beertender was welcoming and knowledgeable. We appreciated his recommendations and background on the beers. I had the Czech-style dark lager and my husband had the Czech-style light lager. Both delicious and on point. It is a spacious taproom with both inside and outside seating. There are a few TVs and several games to choose from. We grabbed a trivia game and played for a bit. I like the vibe and will most definitely be back.

Yelp
My husband and I are brewery lovers and this is a new great one! While we won't be locals because this is in Boulder and we live in Arvada, I will definitely come back when I'm in the area. Ambiance - loved it. Lots of blues and wood and industrial vibes. Everything was modern and minimally styled but there were lots of nice touches (reusable glasses on the water cool station, some board games, complimentary brewery stickers and dog treats). Also the bathrooms!! I am still smelling the good soap on my hands like twenty minutes after. Also for the ladies - there was a very nice "shark week" box in the bathroom containing NICE tampons, pads, wipes and Hershey's chocolates?! Who does that. As far as the beer; my husband and I split a flight - most were from their 4 Noses line (El Jefe stout, strawberry banana velvet milkshake beer, and Silhouettes cocktail-inspired ale), and we got a turkey tail sour brewed In conjunction with Mycolove farms. Yes the flight was expensive but all the beers were phenomenal so I didn't really mind. Overall really loved this place!

Yelp
Always good beer with creative food trucks (especially Smørrebrød).... I mean these guys are brewing delicious Methode Traditionnelle gueuzes, like drinking 3 Fonteinen @ Moeder Lambic during the Kerstperiode in Brussels when nothing matters but mud and snow, desolate fields in the middle of a small country that sucks the marrow out of life.... Drink it! Live it! Suck it!

Yelp
I thought this was a fantastic place, definitely one of the best breweries in town. I've lived here for three years and it was my first time! And what a time it was. I went after a hike on Monday night, half hour to closing. I saw no one in the parking lot, but the bartender was inside. I walked in and he was kindly inviting me. Even though it was an odd day to drink, these are my Fridays now and I was looking to relax. I've never had a brewery to myself before, and it was great to chat with Eric, my friendly bartender. I first tried a big ole mug of their Czech Pilsner. What a perfect treat after a hike. Cool, crisp and refreshing, and not too alcoholic. They have a whole side of 4Noses Beer too, since they partner with them. Next up was the Berry Vanilla Aged sour ale. It was very good, like a cross between raspberry and cranberry juice. Both were great on a warm spring day. Eric was amazing and very nice, and I will definitely be going back soon!

Yelp
We had a great Czech Style pale lager from Wild Provisions and really enjoyed it a lot! Very drinkable and thoroughly enjoyable! Further investigation shows that this brewery specializes in other Czech Style beers besides this one which I find very exciting! Looking forward to trying out more beer from this brewery and make sure I explore as many of the Czech beers as I can. Steve is Czech so it would be a crime not to have him return with me. He enjoyed this pale lager as well so his inner Czech approved! Hooray!

Yelp
We did a beer tour - we don't drink beer but has such a ball on the tour. I learned so much about this location and the ladies are so fun to work with.

Yelp
Amazing beers in an amazing atmosphere. Some of thr most unique and deli pia beers I have ever had. Some of the natural sour beers weren't for me but I can see how they may appeal to a certain flavor profiles. Had a coffe flavored stout that was good and I don't like stouts. However their hazy ipa was on point. Would definitely come back. Good date place. Note that there is no food inside and the food truck outside wasn't great.

Yelp
I really enjoy visiting WP. Located in an office-park area of Boulder, you may not expect such a sleek and modern taproom. The bar is big and curved, plenty of seating indoors and a good sized patio outside. Bartenders are always friendly and I've never waited long for service. Food trucks on the schedule as well, I especially love visiting on a Friday night when the Lenin's woodfired pizza truck is there.

Yelp
I love this brewery! The space is great and the beer is amazing! I go to a lot of breweries and this one stands out! They are owned by 4 Noses (who continue to impress me) and focus on sour beers. They have several of the great beers from 4 Noses as well for those who don't prefer sours. The bar is beautiful and the service was good. We sat at one of the high top tables and there was plenty of outdoor seating. A roll up door allows access to the patio. The space is large and allows for plenty of growth. My wife is a picky sour beer drinker and she loved all three that she tried. My only tiny recommendation would be to change out the strong scented soap in the restrooms. It's difficult to enjoy the aroma of my beer when all I can smell is the soap on my hands when I lift my glass. That aside, I can't wait to come back here for more beer!

Yelp
Incredible beer, lovely staff, great space & good food trucks! This brewery is crafting quality beers through their traditional brewing methods and equipment. They have two different Koelschips, Foeders, and lagering tanks. I loved the farmhouse beers and the Czech-style lagers. The space is super clean. There's comfortable seating between their lounge, bar, and beer garden. Definitely recommend this new brewery!

Yelp
Huge fan of this spot! Wild Provisions is an offshoot of 4 Noses, specializing in delicious sours & "old world brewing traditions." I've loved most of the experimental brews I've tried, but they also have an extensive list of 4 Noses beers for those looking for something a bit more traditional. The beer menu definitely offers something for everyone! Wild Provisions also typically hosts a rotating food truck, which makes it the perfect way to spend an evening. Love trying a few sample beers & being able to grab dinner at the food truck. The space itself is also awesome- they have a large outdoor patio and a garage opens up the the main seating/bar area. Their covid precautions (hand washing, masks, QR menus) made me feel super safe. Thanks for creating a great & safe atmosphere, Wild Provisions!

Yelp
I'm a big fan of 4 noses so I was pretty excited to check out wild provisions since I really like sour beers. When we arrived the two beer tenders did not acknowledge me and my friend and when we tried to get their attention they were rude and made us feel unwelcome. It would have been nice to be able to ask some questions about the beers, no idea if they would have provided any insights to them since it was clear they just wanted to pour us something so they could go back to their conversation. After taking a sip of our beers my friend notices there is lipstick on the rim of his glass, we're pretty sure isn't his since he wasn't wearing any so pretty safe to assume it was a poorly cleaned glass. When he went up to address it they pulled out another glass and dumped the original beer into the new glass rather than offering him a fresh pour in a new glass.

Yelp
Absolutely loved the beer! Great sours and amazing open fermentation flavors. Beer's here will tantalize your senses and make you crave more good craft brews. There were also tacos! Huzzah!

Yelp
Great beer, great bartenders, and beautiful taproom. I think this place moght be criminally underrated. The beers here were exactly what we were looking for... crisp and tasty ipa's and flavorful sours. Get over here, what are u waiting for?

Yelp
Welcome to a weak off shoot of 4Noses! We love 4Noses so we thought we would give this a try. Casey greeted us at the door and sat us right away. Place is gorgeous and you could see that a lot of the focus is on the ambiance. Now on to the beers - we love sours! Yet the sours here at Wild Provisions were so sour you could not get over all the not so pleasant notes. Metes and Bounds - seriously reminded me a peach skin - oh so bitter. Bowery Lane was not so cherry - it made me want to drink it with a brat. The description and the taste profile on practically everything clashed. The Czech style Dark Lager was really good and spot on - it made me want to drink it on a hot beach. 5 tasters and 1 mug were $31.20. I felt more like I was paying for the building and the amazing bathrooms then the real reason for my visit which was the beer.....guess two each his own.

Yelp
We were excited to try this place. Went there today and were the first and only people there, 4 adults and my 4 year old grandson. All 4 of us planned to order, drink, and eat for the afternoon. We had to leave because they wouldn't allow my grandson in. Despite being the only customers. You can, however, take your dog. We will never return, good luck with your big empty building and your payments.

Yelp
This place is cool. Excellent beers found in a really cool setting and with great service. It's also spacious and they are being safe and responsible, so it's a good bet for a beer during these times.

Yelp
First timer here! Welcomed by the GM who was super friendly and accommodating! The place is very clean and following strict COVID precautions. But most of all, the beer is delicious!! Great flavor! I'm not from the area but I would definitely be back!
