I was very excited when I heard that Wilson's was reopening. Unfortunately, this is not Wilson's, and not just because George Jr is nowhere to be found.
The magic at Wilson's was slow, indirect cooking using their huge brick oven. This restaurant is direct-cooking the ribs on a grill in the street in front of the restaurant, which results in inadequate and uneven dissolving of the collagen in the ribs. They have entirely too much bite, with the typical gumminess of ribs that are cooked too quickly.
The chicken was ok. You can get ok chicken anywhere.
They said that they're using the family sauce recipe, but I'm skeptical. Either the Georges had the recipe wrong for all these years, or these new people are getting it wrong, but the sauce is not the same.
The service was slow and unfriendly. That wouldn't have been a problem if the food had been good.
Overall, it was a really disappointing meal. The old Wilson's was something special. This one is just another lackluster Pittsburgh rib joint.
