Wood Hat Spirits – New Florence, Missouri - Gastro Obscura

"According to founder Gary Hinegardner, Wood Hat Spirits sprang from an epiphany: Missouri is home to dense forests of white oak that supply the worldwide whiskey industry with barrels for aging, and the state grows plenty of corn and wheat. With the two key ingredients nearby, why not open a distillery and make whiskey in Missouri? As for the handmade wood hats, well, Hinegardner loves them, so why not sell them too? Since its opening in 2014, Wood Hat Spirits has sold wood hats and served award-winning whiskey. The fact that everything is local allows Hinegardner and co. to experiment with ingredients: They prefer chinquapin oak for their barrels, and while nearly all American whiskey and bourbon is made with a yellow commodity corn, they make their signature whiskey with Hopi blue corn, a gorgeous grain bred by the tribe and made into foods for important ceremonies. Other whiskeys, such as their Bloody Butcher Red Corn Whiskey, also come from heirloom maizes, all distilled in a wood-fired still, which is rare in the United States. When you enter Wood Hat Spirits, you’ll find headwear on display. A passion project, each is whittled down from a large piece of green wood, with Hinegardner working in the dark, observing light pass through the wood and applying the lessons of his renowned Scandinavian teacher. Try one on; they’re lighter than you’d expect. Know Before You Go The distillery is open for tastings during business hours; tours can be scheduled over the phone. In addition to whiskey, Wood Hat Spirits sells bourbons and cordials, such as a black walnut liqueur and persimmon cordial." - Alex Mayyasi

Wow! What a wonderful experience all around. We visited the distillery today and had an amazing tour with Gary. He shared his passion for all things Bourbon, Missouri, and sustainability. The whole staff was accommodating and friendly. We look forward to sending our spirited friends their way and returning ourselves. Thank you to the Wood Hat crew for a memorable time.

This place is amazing! Hands down, don't think about it, don't doubt, make a visit, get a flight, and buy a bottle or two....trust me. I stopped into this place on a whim on a long drive to the airport (leaving my whiskey in my truck while I traveled). I hit up a conversation with the employee and started learning about what makes this place special while having a sampler of whiskeys to taste. I thought I liked whiskey, before I found this place, and now I love it. The corn is all unique and works into the recipes and flavors, all homegrown on the distillery's own land, and human food grade instead of the feed grade that everyone else uses. More than that, some of it is ancient corn that the owner has essentially brought back into circulation and gathered from heirloom strains around the world. This is clearly a passion project and everything about this place is head and shoulders above the competition. The diversity of tastes, qualities, and smells is amazing. This is absolutely the first time I've ever truly had a "Favorite" distillery and if anyone ever asks me, Wood Hat Spirits is where anyone should get whiskey if they want it to be quality.

After years of passing this place on the way to or from Columbia, I finally corrected that mistake yesterday. This is a small distillery right off I-70 with many whiskeys, bourbons, and cordials to try. A flight of 5 is only $5. My wife and I each did one and still missed out on some. What really stood out was their dedication to their locally grown corn and the way they work with other varieties like red and blue corn. The staff is quite knowledgeable which adds to the experience. I can't wait to return and see what they're cooking up next.

Took a trip out to Wood Hat Spirits while visiting St Louis. Seen them on Brewzle and a few other videos and thought I would check them out. So glad I did! Tried several samples and was blown away! Some of the best whiskey I have ever tasted! Unique flavors that I have never experienced in other bourbons. A must visit for any enthusiast!

We went fir a tasting and tour. We left with a great experience! The owner and his staff were welcoming, friendly, and knowledgeable. I’ve been on a couple distillery tours and tastings in Kentucky and this was far better. Everyone was warm and personable. They spent time discussing all the nuances of their craft. This is a can’t miss destination!

An excellent tasting experience with very knowledgeable staff and a lot of quality whiskey! A great place for a quick break and reset while on the road. Will visit again!

Wood Hat Spirits is located right off of I-70 and is easy to spot from the road. They offer a lot of different whiskey/bourbon options that are made from local ingredients. If you like cask strength alcohols, they have those too. You can get a tasting of $5 for $5, which is a great deal. Over the years, I love stopping here either driving to, our driving from STL. I highlyrecommendthis place.

Found this place while driving along the highway in the area. Great option. Friendly staff. Overall, nice experience for a Missouri distillery.

Yelp
We had driven by this distillery for years, never with time to stop. Right off the interstate, we finally had an extra day to stop and smell the roses (or drink the bourbon in this case). So glad we did! Wood Hat is a smaller distillery and so we called the day before to verify the time they would open, and they said "what time do you want to come? We'll open then"! When we arrived we were offered a tasting, 5 for $5. Between the two of us we shared so we could each try 10 of their products - almost all of them. We really appreciated the unique taste of different corns they use - not something you get at most distilleries. During our tasting, both the owner and distiller were present and happy to answer all of our questions. We walked away with a few bottles and will definitely make the stop next time we drive by!

Yelp
If you're doing a road trip to COMO or KCY, you've got to stop at Wood Hat Spirts. It's a great way to stretch your legs, take a break from the car and taste some amazing bourbon. WHS is just off I-70, so it makes the stop easy to do. My cousins who I was traveling with to COMO, said I had to make the stop and experience Wood Hat. I'm glad they introduced to me to this MO distillery. It's a small and compact place, that has a rustic and dive atmosphere. I thought it was quite charming. The young lady who served us out flights of bourbon (5 for $5) was friendly and very knowledgeable. She explained the differences in our choices and shared with us their selection of local corns and how they are grown. My cousins bought a bottle of bourbon and I got a bottle of WHS made honey. I am a big fan and eater of local honey and theirs is made in bourbon barrels, so I had to have a bottle. This now will be a regular stop for me when traveling I-70 and I want you to stop by, too. After you do, it will be a regular stop for you as well.

Yelp
Located right off of I-70 Wood Hat Spirits is a tiny location, luckily they have plenty of room for a half dozen people or so to have a whiskey tasting and taste we did. While the whiskey tasting was great the education we received was even better. The staff was knowledgeable and informative on how their product is made and I especially like how they explain what causes the difference in taste between the whiskeys. Overall it was a fun experience but we spent too much money taking their fine products home. We'll be back!

Yelp
We really enjoyed our visit and your. We learned so much from Gary. We could have spent the entire day learning about the whiskey making process. The tasting was great and I really like the cordials. Highly recommend.

Yelp
My parents and I stopped in and loved it. We were just planning on doing a quick tasting, but ended up touring the distillery as well. Adriana our host was super friendly and knowledgeable about the whole process of distilling bourbon. Gary, the owner also talked with us for a bit. The whisky and liqueurs are genuinely unique and everything is done by hand, you really feel the care and effort that goes into it. Highly recommended!

Yelp
This distillery was a great place to visit. The staff was very friendly! Adriana gave us a tour that we had not scheduled. She was so informative. The whiskey and bourbon tasting was only $5. My son and husband bought 5 bottles! (Plus they had a sweet kitty to play with!). I highly recommend giving them a visit!!

Yelp
Cute little place. On the day we came, they were short-staffed so they weren't able to do a tour. However, we participated in the tasting and that was great! The person that did our tasting went through the whole list of products and explained them. Then we were able to choose 5 in our tasting. We each did the tasting so we ended up being able to taste 10 (we took enough of a sip to get a taste). It was very interesting how they use, yellow corn, red corn, and blue corn to get different products. Some of them were pretty strong and some were very mild. We enjoyed the tasting and came out with a nice bottle to sip on later. I recommend.

Yelp
Wood Hat is an great place to stop along IS 70 outside of St. Louis. Try all of the spirits. They grow their own corn and the quality is outstanding. The tasting experience is first rate and I am confident you will leave with several bottles. They do give a 10% discount if you purchase 6. They also have fresh honey and some other items you can purchase.

Yelp
What a great place to go for an afternoon! Learn about distilling? Check! Taste award-willing distilled products? Check! Buy some of the favorites to enjoy at home? Check! Meet a true craftsman who is doing it small, local and right? Check!!! I generally drink single-malt scotch because I find it to be much smoother that a lot of bourbons. That said, I do like several of the premium bourbons: Buffalo Trace, Russel's and Woodford Reserve come to mind. I had the opportunity to try something like a dozen of Gary's spirits and thought all were as smooth or smoother than the national brands. Of note: they are the only ones in the US making a walnut cordial. It is really impressive for the depth of flavor and surprisingly smooth given the proof. Yes, their bottle prices rival imported single-malt products but the knowledge that they are made locally, that Gary raises all of his own corn and the fact that they are just so damn enjoyable makes them worth the price. Plus, you can take a tour of the place and sample their products. Nothing with "Glen" in the name can make the same offer without requiring you to leave the continent.

Yelp
Ryan was very nice, knowledgeable and even let us in after closing since we were out of town. My husband enjoyed essentially all of it. I particularly enjoyed the cordials. We walked away with three bottles so yes you should go!

Yelp
This was a fantastic surprise. We were having pie at a restaurant in Hermann and found a pamphlet for these guys. We got there where we had some great whiskeys. A must for any whiskey lover in the area or just passing through.

Yelp
I believe this is a fairly new place. We thought we'd try it out and see what they had to offer. It's a cute little place and they have a fairly large selection of whisky and bourbons. I'm not a whiskey or bourbon drinker but my boyfriend really enjoyed it. They make their alcohol out of red, white and blue corn. Not anyone else in the U.S doing this. We paid the $5 for the tour. As far as a huge tour it's not, but it's really informative and interesting. They grow all of their own corn that they make their product out of. It's a small operation but I'm sure it will grow. The berry, berry is very tasty and worth a try too.
