The best meal I've had during my 1 month in Guatemala. I wasn't even planning on stopping in Cobán, but it is worth it just to experience the gastronomy here. One of the owners explained the concept of using ancestral recipes and techniques as well as heirloom ingredients when possible, and it is reflected in the delicious food and drink. The vegetarian bachá of kale and mushrooms carried so much flavor, as well as the precolombian Pinol drink. As the owner said, "We don't serve soft drinks. That is not what our ancestors drank with their meals," and I appreciate this adherence to ancient methods.
Furthermore, it is a green oasis in Cobán's concrete jungle. And they MAKE THEIR OWN BAGS out of NEWSPAPER!! What a beautiful, sustainable initiative to support our Pachamama.
Besides the amazing food and beverage, there is a store with much local art and ingredients, great for souvenirs or snacks. My only regret is that I had to leave before I could return in the morning for cacao and breakfast. ¡Gracias por su servicio y esfuerzo!
