"Serving Korean bibimbap, Perillas is a pop-up and catering operation that will move into Somerville’s two-level Bow Market for a six-month residency as the first in a planned series of rotating food vendors. The Perillas bowls start with a base of rice or greens topped with bulgogi beef or marinated tofu and assorted pickled vegetables, carrots, and zucchini, finished with sauces and garnishes like scallions or nori; the menu can accommodate vegan, dairy-free, and gluten-free diets. Perillas first launched in March, connected with Foundation Kitchen for pop-ups and catering, and secured the Bow Market spot because it was intended as a rotating long-term pop-up with lower capital needs.
