"I’m a huge fan of Holbox, but I haven’t been back since chef Gilberto Cetina expanded the space and introduced a tasting menu. On a Friday night, the popular Mexican seafood stall in Mercado La Paloma was packed with fans trying the chef’s ceviches, tostadas, and cocteles de camaron off the a la carte menu. I opted for the $120 tasting menu that requires reservations and consists of nine courses of impeccably sourced seafood accompanied by a full description by the charming chef. With a mason jar of tangy lemonade, I dug into a breathtaking blood clam, oyster, and geoduck served in its shell. The hits kept coming with the hot dishes, especially the spiny lobster; it was the season after all. After my last experience with overcooked spiny lobster from a longtime operator, it was nice to have it delicately handled, cooked over mesquite, and served with lobster saffron rice and a fish sausage stuffed squash blossom. I strategically wore drawstring pants during this culinary adventure, something I recommend to everyone dining at this incredible restaurant by one of LA’s finest chefs." - Eater Staff
