Collaboration dinner with salt and straw. Seven course tasting menu. Everything paired with ice cream. It reminded me of eating at Alinea- such as the cheese is looking like cheese, but actually being a type of ice cream. Or putting the dipping dots into a sushi style dish. The most memorable item was the green popsicle. Because it looks so non-descriptive, but had so much flavor and had the most discussion. That was the sugar snap pea Plata with housemate Tajin. However, everything we ate was amazing. Once in a lifetime experience. Incredible service, and beautiful location. Looking forward to trying it again in the future.

I came here a while ago but forgot to write about the phenomenal dining experience that I had here! Dining here is not just about the food but it's a journey through the history of Mexican culture through its food. The staff here are phenomenal at their jobs, educating about the background behind the dish, and super friendly. The inside of the restaurant is spacious, dimly lit, but warm and lively. My group did an 11 course meal and all of us loved it. Each of the courses were so fun and truly an experience to eat. We learned so much and even tried things that we've never had before. Genuinely had such a great time here and I highly recommend everyone to try this spot out!

Sorry to say... this place was a disappointment. The price for the tasting was not worth it. The presentation of the food looked so good but nothing stood out to me. And to top it off... my fiancé was served RAW, undercooked pork! The waitress apologized but that was about it. And I was so annoyed at the couple sitting next to us because I could hear the dude mocking my fiancé about the raw pork. Mind your own business.

An exquisite and thoughtful experience! I absolutely enjoyed every second of it. The 10 hour tasting menu was about 3 hours so keep that in mind, but time flew by trying all the amazing dishes. The staff anticipated our every need. I dropped a napkin and not even a sec or two later, a new set was on my table. The space itself was immaculate. The drinks were an artwork. The food was exquisite.

An excellent experience here. You come for the food and stay for the storytelling. No really, you do have to stay because it's a 3 hour dinner for the 10 course meal. We were in for a treat because they took us on a wonderful with each dish. It's carefully crafted and beautifully executed. Some dishes were good but others were phenomenal. The cocktails were a tad pricey but delicious and strong. The ambiance was immaculate and every staff member nailed it on guest experience. Make sure you make a reservation!

I can't close out the year without giving some love to what was probably the best dining experience my husband and I had in Portland this year. Dining at Republica is truly a special experience, and if you're looking for a fine dining experience that is worth every penny, this is it! Republica offers a 7-course tasting menu and a 10-course tasting menu; we enjoyed the latter. At $150 per person, the 10-course tasting menu is very reasonable, especially compared to other tasting menus at similar fine dining restaurants. Also you should know that gratuity is included, to allow the restaurant to offer living wages to its staff. Before I get into the food, let's talk location and ambiance. The restaurant is right in the Pearl District, and honestly, I always find street parking right around this area, so it's never been a problem for me. The Max also stops right out front. The restaurant is a large, mostly open space, with a wide open kitchen so you can see the chefs at work. I actually really enjoyed watching their interactions with each other throughout the dinner. Tables are well spaced apart, which is perfect for a date night out, especially if you are at one of the smaller tables closer to the open kitchen. Now let's talk about the food: it's exquisite. Each course is presented with a short explanation of the ingredients and a little history thrown in, which I love. Many of the ingredients I had never heard of or never tried, and the combinations were exciting and interesting. They also did an amazing job making changes to the dishes based on my milk protein sensitivity. Wine lovers will appreciate the wine list, which is well curated and focused on LGBTQ+ and women winemakers. We had two different wines which were suggested to pair well with our meal, and they both delivered. The service here is one of the best in the city. The wonderful people who work here clearly care about the work that they do, and they deliver the dishes with such warmth, kindness, and respect. This is food as art, as history, as storytelling, as celebration - at its finest. Yet they also make it all approachable, not stuffy; it could easily be pretentious, but it's not. And I think it's because the people make the whole experience so FUN. This might be my favorite restaurant in Portland right now. And that's saying A LOT! I'm so grateful dining experiences like this still exist, and I'm glad it's so close to home. My husband and I cannot wait to go back!!!

Went back for our wedding anniversary and have more pictures to share! We did the 10 course menu and were pretty full by the end. Everyone working there was so knowledgeable about all the new dishes we ate and the interior of the restaurant is still very chic.

I finally got to try Republica when out of curiosity I checked on reservations a couple of months ago and found some availability. I dined on a Saturday night and went with the 7-course tasting menu. You let them know after you reserve whether you want to do the 7 course or 10 course. I opted for the 7 course because I wanted to get home early, but have to say the kitchen is so efficient the 7 courses just flew by. So now I regret not doing the 10. (They budget 1.5 hours for the 7 course and 2 hours for the 10, but I was done in an hour.) The ambiance and service is what you would expect from a high-end restaurant with tasting menus, and the food actually matches that standard. The quality and creativity reminded me of tasting menus in San Francisco and New York. Everything was refined and perfectly cooked, and I appreciated the Mexican infusion into the creations. They're great with explaining the concept of the dishes, which can't really be traced to any particular Mexican dish because these are all new creations, but pieces of it have memories of a particular Mexican ingredient or flavor. It's a great dining experience.

Alright here we go. I have waited many months to write this review as I knew it was going to be a long winded one and needed to be in the right moment to put it all down. Allow me to begin at the point of reservations. Reservations were seamless and they were willing to accommodate the dietary needs of those in our party so we were off on a great start! We came in for dinner on a weekday and nearly had the place to ourselves so it was a very peaceful vibe throughout. The dishes served to us were great. Flavors were excellent and the story behind each dish enhanced the experience that much more. Service was incredibly attentive as they joked around with us and ensured every need we had was met, just as any fine dining restaurant would. Now we get to the ugly part. Our service took a hard dip once we complained about a dish in our meal. The duck, which was set to be the main course, was so insanely dry that it could basically be categorized as jerky. All 5 of us at the table couldn't finish it because of how dry it was. It was slathered in sauce so we couldn't see the color but we were fairly confident it was burnt. Since it was just one course of the 10, we didn't pay too much attention to it assuming that the quality was intentional and that we just weren't fans of the preparation. The table beside us was one dish behind us in the tasting menu and when they got their duck, the meat was practically glistening and a different color than ours. The sauce wasn't dumped over the meat but rather beside it. This prompted us to think that the duck they served us was actually overcooked and not intended to be how it was served. We brought this to the attention of the waitress and all of a sudden, service completely went downhill. No more back story on the coming dishes, no jokes, no smile when coming to our table. This is an expensive meal and we didn't even get to eat the main course so we were hoping they would rectify the situation. Instead, they brought us shots as an apology... main course is ruined soooo how does shots of alcohol rectify? Also, 2 people in our party were not drinking alcohol so how thoughtless. We left the restaurant hungry since the dish with the most amount of sustenance was inedible. I wanted to give the management the benefit of the doubt so I emailed them directly that I wanted to speak with someone over the phone. I'm in the hospitality industry so I understand oversights and just wanted to give them the opportunity to correct it. I was told that the manager would reach out to me directly the next day. No contact. A week later, I reached out again and was met with no response. So yes the other dishes of the night were good but not nearly enough to justify the high price point. Service is excellent until you have anything to say that's not a glowing review. They also don't care about your feedback. Not only will I never come here again, but I'll also be spreading the word about the lack of professionalism here. Such a shame.

Its funny how I thought República was so popular before I dined with them ,and now that I have visited them, I feel that they are not popular enough because they need more hype than a cat video on the internet! Everyone needs to go and experience the gastronomical delight that this place is . I made reservations a couple months in advance for the 10-course menu and so glad for that since I got the exact time and date I wanted. Sitting down to a tasting menu at República, each course is introduced with a story: An explanation of an ingredient's origin, a history of a dish and its influences. The restaurant is big and spacious but it does look a little barren .. like lots of open space which kind of takes away from the place being a little more intimate . They started us off with some drinks and proceeded to introduce one course after the other. Every dish comes with a story and the way the staff narrates it adds to the whole experience. What we truly loved was that the restaurant is based on a collaborative model where no single chef is the star, and dishes from various regions of Mexico make an appearance. I wouldn't go into the details of each course because honestly you can't pick and choose anyways and secondly because almost everything we had was fantastic . The Desserts sealed the deal and knocked our socks off. Hell, they even sent us back with a small take-home dessert . It was so fun to unwrap and have it the next day. We didn't get the wine pairing but ordered a few high end Mezcals to taste as well as wines. The drinks went very well with the food. The waitstaff are incredibly attentive and kind. The food was wonderfully inventive while also hitting a niche that doesn't get hit a lot in Portland: fine dining Mexican.

This isn't just good food -- this is an experience. Tasty and well - executed dishes is only one aspect of this dinner. They teach history through ingredients and techniques brought from different cultures. The entire staff is knowledgeable, helpful, and approachable. Ask them questions about anything on the drink menu or the plate and they'll give you a surprising amount of depth that highlights how much thought has gone into sourcing and preparing each item that hits your table. Pacing is great, so the meal doesn't go overly long. Because we were afraid of the 10 course being a long, drawn out affair with too much food, we opted for the 7. Having seen the pacing and portions, I'd 100% choose the 10 course next time.

Having a dinner experience at Republica is unlike any other. You experience the food of Chef Jose Camerena through storytelling, with each dish curated and inspired by Mexican history. Given that it is tasting menu, each dish builds on the last dish, and the intention of flavors is deeply routed in Mexican ingredients. On a recent trip to Portland, I surprised my partner with a birthday dinner to Republica. Given that we had reservations, we were seated at a table, and we were quick to notice that all of the tables and chairs faced the kitchen, giving the feel that you were experiencing your own chef's table. Watching the kitchen, it was clear that all of the chefs were working in tandem, and it was a beautiful thing to see. The restaurant offers a wide range of unique cocktails and wine selections. On the night that we were dining, they had an option to participate in a wine pairing with dinner that featured Mexican vineyards that also were women-owned. Given that we wanted to try some of the cocktails, we opted out of the wine pairing, but it was amazing to hear that they were featuring women-owned vineyards. The staff are extremely knowledgeable and were able to guide us to cocktail selections that we would like, and they were amazing! As for the food, I don't think my partner and I have experienced anything like it. Everything was elevated, intentional, and again, rooted in Mexican history storytelling. As our server brought out a dish, they would indicate the inspiration behind it through Mexican history, and they delivered each dish with such passion and excitement. Some of my highlights were the stuffed quail with a tomatillo and leek salsa, a cured salmon with hibiscus water, and the puffed blue corn tortilla with vegetables and goat cheese. There was also a salsa verde to begin the dinner that I wish they sold because I would have purchased 10 cans of it. Overall, this was an incredible experience with a unique flair to it. If you are in the Portland area, I highly suggest you try it out!

Absolutely delicious and that's coming from the vegetarian in the party too! My husband and I decided to check out this place for our wedding anniversary and didn't regret it even one bit. We were able to note dietary preferences during the reservation and the staff reached out to confirm that as well as whether we wanted the 7 course or 10 course tasting menu. Opted for the 10 because why not~ Now the restaurant itself is so cozy and quiet inside; I love that it is more of an open kitchen so you can peek a bit at what's being prepared. The staff and their level of service is seamless and honestly every single person was so kind. My husband grabbed a non-alcoholic drink while I decided to the wine pairing -- we both enjoyed our choices and would do it again. Foodwise, gosh where do I begin? I am always so cautious with tasting menus because the vegetarian version will either stand up to the meat or be a complete afterthought. I honestly say that my omnivore husband and my leaf eating self both loved our food to death. Every dish was delicious and I have 0 complaints. Every single ingredient was treated with care and it was honestly humbling to learn about the origin and history of the food and the wine. Yes the portions are on the smaller side but with the 10 course menu, we both left full and didn't feel like things were too pricey for the sheer quality of the food. I will say that this spot made our anniversary feel special and memorable and we would recommend it to any of our friends in a heartbeat.

Our 7 course dinner was really enjoyable. We loved the history and informative explanations of each dish. The wine pairing was fantastic and very interesting, it really added to the experience. The service was phenomenal, everyone was very attentive. The food was really good, some unique flavors and preparations. The plating was done very thoughtfully. Our only complaint is that the portions were too small. Granted it is nice to leave a dinner not feeling so full that you can barely walk, but it's disappointing to leave still feeling hungry, which all three of us did. Especially for the amount we paid. The whole meal would have been perfect if each dish had a slightly larger portion. Otherwise, a truly memorable night.

I love the ambience and the staff. Customer service was amazing. The drinks were really good as was the wine selection. I really loved the story telling for each course about where the recipes originated from and how they came up with the dishes. Truly awesome. However, for 4 people for the 10 course meal and about 2 drinks each it was $1000. It was not worth $1000. The double whisky was $30. I only enjoyed one plate, the fish. The rest were not good at all. Also it was not enough food. One tablespoon plates so 1-2 bites per dish. I am adventurous. I like sushi and food from all over the world. This food is not good here. They are trying too hard to be different but the creations just don't work. I'm sorry to write this review as I was so looking forward to this place being amazing.

Also, I would just like to say that I would eat an entire plate of these little pancakes and little fish nachos that was on this dish. The menu is ever changing so I weep that I may never try them again but they were so good and I'm glad I got to experience them once in my lifetime.

The food, mixed drinks, and service were all fantastic. I really enjoyed what they did with the dishes (some were very small however not unexpected) and some of the best mixed drinks I've had. All the flavors were very well balanced and nice transition from dish to dish as going through the meal. The space is also really nice with the taller ceilings and open plan yet still a cozy intimate feel. (Loved their table lamps) Unfortunately I would have a quite difficult time recommending someone head here as it is about a 3 hr experience so you never really get satisfied due to the smaller dish size and such a long timing between them. If they reduced the overall timeframe to 1.5 or possibly 2hrs (could just do two seatings per night if that helps with efficiency) then would highly recommend. I don't think you should go to a place like this where everything is great and expensive but then the experience is brought down by needing a burrito or pizza slice after. Would also be awesome if they had a few bar seats at this location for anyone to come in and just enjoy the mixed drink offerings while in the pearl.

The good: Services were top notch. The space is very open but inviting and intimate. Overall, a great culinary experience where we got to not only try an array of dishes and flavors that were new to us but also we got to learn about the food culture. Cocktails were AMAZING! The not so good: The entire dinner was 3 hours for 10 courses (7 savory, 3 sweet). It felt unnecessarily drawn out and with each dish that got brought out, I got more hungry; on top of that, the portions were extremely small for the price. Overall, while it was great to try it out, I don't expect to return.

What a great experience. Not just the meal. The staff is engaging and fun. If you're lucky to catch them on a slow night you'll learn a lot more about what you're eating. The tasting menu is a commitment. It's worth your while if you have the time. We literally licked sauce off plates and kept leftover macha for the next course. These are beautiful, time consuming dishes to make, and they are delicious. Having the bartender recommend cocktails was the right choice for me. Friends had the wine pairing and felt they'd been "on a journey". Anyway, if you drink, the Mexican wines & spirits are a wonderful compliment to the meal. It's obvious that passions run deep here. For food, wine, spirits, conversation, and the mission (see their home page). I'd gladly return to spend another three or four hours with these people and their unique food. We went here with friends. We ate outside and it was a perfect and lovely experience. And that's from someone who doesn't typically like eating outside. First the negative... the service was off. They totally forgot one of our courses... Sometimes the person really explained the food, sometimes they knew next to nothing. Like a see-saw- so up-and-down.... But the food and the concept were actually pretty amazing. So the food was 5 stars. Just need to train those servers a bit better.

Maybe the onliest tasting menu featuring Latin American cooking from the historical approach. For that, it was a unique and enjoyable experience learning the cultural background to each tasting presentation. Wine pairing was interesting to enjoy from areas we would have never thought of trying. Service ~ every tasting was explained in extravagant detail from parts unknown to us which made it a bit complicated to follow. The wine pairing was presented in more of an easier to follow tone. Ambience? Looked like a pop-up bar setup. For the money, the use of plywood alternative OSB counter and walls did not match their mission to share about the culture. The open kitchen was a hectic distraction of employees stocking supplies and moving equipment, not the art of cooking. Unfortunately the server was unable to find out how the restaurant name came to be. Nevertheless a nice date nite downtown.

The scam of the century. They took my cloths and car on the way out. What a rip off. We had the seven-course meal that consisted of 7 tablespoons of food. The 7 tablespoons tasted ok, but you will leave still hungry and wondering if you need to get another job to cover the bill. We left the restaurant and my wife said, "let's go somewhere else to eat, I'm starving." I said, we can make something at home because we just got robbed. Almost stopped by the police station on the way home. 2 of us with 4 total drinks cost $442. Remember, it was 7 tablespoons of food or about 6 ounces. Would never recommend!!

We went to República for our anniversary dinner. It's always hard to review fine dining and tasting menus, because it's so far beyond what's experienced at a typical restaurant. So, in comparison to other tasting menus I've experienced, I'd give it 4 stars. We did the 10 course menu. Out of that, I'd say 3 were exceptional, 4 were good, and 3 were a miss. I consider these pretty standard numbers for a good tasting menu. Oddly, the first course is apparently one they keep on the menu, and it was one that both my husband and I considered a miss. The other dish they keep on the menu was a flash fried puffed tortilla filled with all manner of deliciousness. It was one of the standouts for us - my favorite dish, and my husband's second favorite. The ambience was fine, fairly standard for Portland fine dining. The music was incredibly loud, which made it hard to hear servers explaining the courses, and meant that all the patrons were talking very loudly to hear each other over the music. That part was a big miss for me. It definitely took away from the experience. I'll also add that if you're in a bigger body, they have a variety of seating, and not all of them are friendly to us, though at least one looked like it was. The servers were incredibly nice, and the level of attentive that I consider an essential part of fine dining. Absolutely on point. Lastly, they are extremely good with providing a gluten free menu. The only thing that needed to be changed for me were a crumble that was on one of the sweet courses, and the final sweet course, which was entirely different from my husband's. All in all, I definitely recommend going to Republica. Be prepared to taste some beautiful food, and have attentive service from friendly staff. But maybe bring earplugs. I'm editing to add: As we did the 10 course tasting menu, we were full when we left and didn't require pizza as many other patrons experienced. It's also important to note that a tasting menu isn't meant to be shared. It's one menu per person. If shared it would be very little food, as each course, expect the main and largest (more like 8 bites at Republica), is only meant to be 2-4 bites.

This is really difficult for me to write purely because we made reservations 2 months in advance and were so excited to try this place. Each of us got to enjoy a different dish, and each dish had its own story. Hubs and I enjoyed the story telling. We enjoyed the service and special care and attention the waiters and waitress' took. The food was displayed like a Michelin-star place (we've been to our fair share just for comparison, not for bragging), but the food felt like it fell short in terms of taste. Nothing stood out to us, like "wow, this is Amazing," and we would have def left hungry had we not been half-filled from pizza we had at home an hour earlier. There were a number of spicy dishes, so if you are not a fan, would def recommend mentioning to them. We did see their lunch menu and felt like that would've called to us more. So sorry- Maybe I'm the oddball out?

Each of the seven people who helped me this evening offered sincere kindness and a gentle, dedicated concern for the experience of all diners. The stories told of each dish were recounted well and sparingly, with enough substance to carry the message, but sufficient brevity to make them a pleasant addition to the experience. I have been meaning to try Republica for a couple of years now and finally made reservations. Luck was on my side, because the night of my reservation had guest celebrity Chef Carlo Lamagna (Food & Wine just named him Best New Chef of 2021). Yay! I was in for a treat. There's a little parking lot right next to the restaurant where we grabbed a spot. Stepped inside and we were immediately seated. They had all the doors open to insure good air flow. 5 course tasting menu of Filipino fusion dishes. 1. Goat, shrimp, red onion, sinigang 2. Squash, cilantro, pepitas, mushroom 3. Tamarind, pork, radish, mustard greens 4. Rice, lobster, chili, chicharron 5. Duck, blood, ramps 6. Sticky rice, cured yolk, chocolate, potato chips All the dishes were unique twists of some of my favorite filipino dishes. I was excited to try each item and was taken by surprise how something so little could change some of the traditional tastes for the better. In addition, I opted for wine pairings and these were all new blends for myself. Attentive, friendly and they took the time to tell us the names of the filipino farms that some of the ingredients were grown. An excellent dinner date night.

Some of the best authentic tacos I've ever had! I went here after my friend who lives in Portland recommended it. The tortillas are freshly made; you can even watch them employees making them right in the open kitchen. I ordered tacos - I tried the mushroom in adobo sauce & cochinita pibil. Both tasted so fresh and definitely left me wanting for more! 100% recommend coming here. I went for lunch but I hear the menu is even better for dinner.

The best tasting menu I've had in Portland... and I've had all of them. Honestly, some of the bites and dishes were perfect. Definitely the best food I've eaten this year. I would say some of the descriptions were extremely depressing and I think I heard the phrase "colonizer" more times in this dinner than I have ever heard prior but it's their story to tell, not mine. 10 courses took 3 hours so make sure you are prepared for that.

The most magical evening outside under the arbor on the walkway. The service--every person--so kind and knowledgeable. Each dish surprising and strung together with a POV. All the food was tremendous!! Can't wait to take my family since I went with a friend.

A friend was in from out of town and had been wanting to do the Chef's tasting menu here for a long while. You need to make your reservation way in advance which she failed to do on her last visit. This time she made her reservation way in advance and I jumped into her last free spot that opened up the day before. With all that said, I messed up but yet didn't. I just said yes without looking at what I signed up for. Thankfully I did look at the price tag and menu before just showing up but seriously, this is a luxury item and the price reflects that. The will do mescal or wine pairings which are another pricey item but their regular cocktails are also a lot and your bill will have 21% added for gratuity automatically. This is VERY much a tasting, not an eating so if you are expecting to get your monies worth in food - this is not your spot. This is a food experience and I would recommend you eat before you go. I already had lunch plans which ran far later than intended so I happened to eat before and I was still hungry. I would have eaten far more at the late lunch had I known but I think I enjoyed the experience more because I wasn't starving. I'm allergic to agave which doesn't come up often but the staff were amazing. Thankfully it is not a horrific allergy so trace amounts are ok - I just cannot pour agave syrup over everything or start pounding tequila. Three of our group had some food allergies and it was so great how mindful the staff were to all of us. I do not have a great deal of experience with genuine Mexican food and when brought items containing items like Yuzu I immediately started asking questions since I have been eating a lot of Japanese food my whole life. I had no idea what an influence the Japanese have had in Mexican cuisine so having the staff explaining and really going into different things we would ask about was neat. Each ingredient used is so thoughtfully prepared and respected. So many flavors are unexpected and unique. Our main was venison on a smear of two day cooked mole. That was genuinely one of the most amazing things I have ever eaten. Our tasting was five course standard and also came with a "surprise" from the chef versus an amuse-bouche, some amazing lemon pear sorbet to cleanse our palettes before the dessert course and a rock hard candy with our bill.

It is abundantly clear this restaurant takes painstaking care in their operations top to bottom. For dinner, there is a 5 course tasting menu ($70/person). There are 2 menus that they will bring out for sharing. All of the dishes are beautifully presented along with a story of the history behind the components of each carefully crafted dish. The food was innovative and unique-- a true culinary adventure incorporating elements like grasshopper and wagyu beef fat "snow!" The portions were not huge, but the meal was filling. They are respectful of food allergies. They have a nice covered outdoor patio with tall heating lamps enclosed on 2 sides. Proof of vaccination is required for outdoor seating as well. I can't wait to see what the creative minds at Repùblica come up with next!

One of the best meals I had on my Portland trip! The staff was so friendly, explained at detail each dish, and were so kind to me as a solo diner. I will dream of the Wagyu snow forever. Seriously bottle that stuff up! Food was top notch and such an amazing value for the tasting menu. I recommend Republica to every friend traveling to Portland. Can't wait to come back on my next trip and see how the menu changes with the seasons.

I've been wanting to stop in here for a while and finely made it in this morning. The staff was super friendly, explained the menu. Since I was dining inside they checked my vaccination card. I ordered the Huevo en Salsa. When it arrived it was beautifully plated and it tasted even better. The hard scrambled eggs were bathed in a flavorsome salsa verde. The black bean purée was smooth and nicely seasoned, with a sprinkle of cotija cheese. It was accompanied by two house made corn tortillas. Both had a good texture, the purple corn was really good, but the yellow was amazing! I would be happy with a plate of these. The price is really reasonable, so you can leave satisfied and feeling you received a great value.

Extraordinary cuisine event! Exceeded my expect-taste-in's! I booked a reservation for the 5 course tasting menu which features ingredients delivered direct to the restaurant from Mexico and from plenty of local sources. It is beyond delicious! The plated dishes appeared so artistic you want to admire the food and at the same time the food is inviting you to take a bite. The dishes were so unique to my tasting pallet, rather than attempt to describe them - I suggest looking at my pics. What else is amazing is the food servers give you a story of the Mexican food culture in the dishes they serve up one by one through 5-courses. And go for the wine paring definitely for the taste of wines, but also you'll be delighted and entertained by the wine stewards knowledge and stories of the wine culture. Wines are Mexican or Mexican American. And we tasted some biodynamic wine. The ambiance is convivial and busy as all the tables were full. Plates of Mexican dishes seem to be flying constantly around the place inside and the outside patio. When a plate landed at our table, my eyes bugged out their cranial sockets - and my jaw dropped so many times - all I could say was - WOW! My wife and I are foodies. We are former members of the Slow Food movement. Slow Food is a global organization supporting and preserving local food cultures and traditions, counteracting the fast-food fast-lane, and focusing on where food comes from and how our food choices affect the world around us. Thus, we have attended many mouth watering and lip smacking farm to table events and food feasts with Slow - and around the western USA. Like Slow Food - Republica represents and presents food worth every penny and more to taste. Be amazed! Enjoy their tasting event! Be educated about their chef-owners vision for their style of presenting Mexican food history on a plate with modern innovation. Wow!

This was an amazing experience for me. Growing up with Mexican food, this place made me feel like the critic in Ratatouille, getting transported back to core childhood memories. The entire menu was a love letter to Mexican food and especially masa. Each course came with a bit of a history lesson of Mexico. It added a lot to the experience for me as it was nice to see the history and culture so honored. Now the food though. Amazing. Even if you didn't grow up with your abuelita making fresh corn tortillas, you will appreciate this food. Each dish was well composed and thought out. My favorite was the lengua(and usually I hate lengua tbh). It had a salsa verde that I've been dreaming about ever since. My husband's favorite was a masa puff that they had filled with goat cheese, onions, and brussel sprouts. He hasn't stopped talking about it. Also, the dessert was amazing. Potato Ice Cream has no right being that delicious. Service was wonderful, and each person who talked to us was very personable and passionate about the food. The drinks were also good, the mezcal's they used were very tasty and I liked the different flavor profiles they achieved. The Aqui y Ahora was my favorite with mezcal, rhubarb and egg white foam. Thank you so much for the experience! We will be coming back when we can!

A haiku for you: Lie to you I won't Tasty, but left unfulfilled Had pizza after A major pet peeve of mine is leaving hungry after enjoying a tasting menu. While the food and service was amazing, and was some of the best food we've had, having to share what were already small plates was a major disappointment that left me feeling rather famished throughout the meal. I wish this expectation was made a bit more clear when we started our meal with our waiter. And as a kicker, we did ask about this to another waiter, and they later mentioned we were to share and that we could re-try other menu items at the the end. And when we inquired with another waiter at the end to try more, they seemed surprised of the ask, but was happily able to oblige and did not forget to charge us extra for it. I, like the majority of patrons that night, ordered pizza from the shop next door (we actually called ahead to Life of Pie for 2 pizzas to go).

It sounds like the evening tasting menu here would be really interesting. We stopped for lunch on our way through town, and the offerings were somewhat limited. The most interesting item was the plate of two tacos, one pibil, and one chicken, which were both excellent. Their take on a Margarita is interesting. Access is off the parking lot. You order at the counter. Plenty of outdoor seating, but only a couple of tables inside.

OVERALL: PICTURE PERFECT & DELICIOUS-NESS I couldn't decide & I had an appetite - so i ordered two dishes to give myself the most variety. I formulated the perfect trinity of proteins with the [2 Tacoes: CHICKEN Tinga & BISTEC] & light [PORK Pozole] . It was heaven! The two tacos were made on these long HOUSE MADE TORTILLAS that were super fresh with a light crispy/chewy texture. The body of the soup was flavorful in seasoning & full of tender chunks of pork - IT WAS PERFECTION IN A BOWL. I shamelessly double-hand-tipped my bowl back to drink all of the broth because i COULDN'T/WOULDN'T want any of it to go to waste - NO REGRETS I HIGHLY SUGGEST YOU DO THE SAME. It's a [5 rating] for meeee - YUM!

I had high hopes for República after hearing so many great things, but I couldn't get over an awkward tasting menu setup/leaving hungry. I give it four stars compared to all other restaurants, but I would only give only 3 stars compared to other tasting menus in Portland. The pros: the ambience is wonderful. The servers were all very attentive and friendly to us. They provided a great history into each dish, and oftentimes they were the longest descriptions of dishes we'd ever had a restaurant before. We ordered some cocktails and mocktails, and they were great. Also, the sauces in each dish were incredible, and it's so clear that a ton of effort goes into each dish. The con: Their tasting menu approach. I went with my boyfriend, and we were served different 7 different dishes (14 total), and and we had to share each dish. Although it was great that--in theory--we got to try more dishes than a traditional 6-8 course tasting menu, we couldn't enjoy the dishes as much as a traditional tasting menu because we had to constantly keep in mind that we were sharing. Further, some dishes weren't plated in easily shareable ways, so it created some tension when we were wanted to create an equal split of a great dish. Sharing a tasting menu (with smaller, tasting menu portions) felt a bit like we were being cheated, and the fact that we left hungry seemed to only reinforce that. Instead, for $84 per tasting, we would have liked to each have our own dish, or at least have had the chance to opt for that. Or, if family style sharing is the goal, the portions should instead be family style portions rather than tasting menu portions. Overall, it felt that they were trying to blend a family style meal with a tasting menu, and it really missed the mark. They should pick one option and run with it. Overall, as two Latinos in Portland, we loved the opportunity to try out a Latino tasting menu. The food, service, and ambience were great; however, we really disliked the tasting menu setup.

República...A "Mexico Forward" Chef's 10 Course Tasting Experience, By Executive Chef Jose "Lalo" Camarena When Chef Jose "Lalo" Camarena dreams up a plate, he does it understanding the intentionality of the restaurant. República aims to create original dishes and present them with historical roots in an etymology which oftentimes has very little to do with what we now call Mexico. That is a lot to ask of a Chef. But the all the chefs and all the staff bring it home! Or actually, they bring it to the table! There are rules that each course offering must pay respect to the food from the country that is now Mexico. They as themselves: Is there a meaningful historical connection between this dish and the culture? Are the components of the dish currently in season? Can they sourced locally? Is it beautiful when plated? Does the taste match the beautiful aesthetics of the plating? They made us feel like family and that they were celebrating with us! The food was beautiful, well thought out and amazing! And we extend special thanks to wait staff extraordinaire: Mia - who gracefully glides around the tables offering tasty tidbits of knowledge on what we are eating, ensuring all is perfect. Andres - in charge of our beverage pairings for each course, excellent at knowing his audience, making you feel at ease, while pouring our drinks and educating us on the significance of each winery and offering delectable descriptions of what we are about to drink. Lizz & Juan - Both a wealth of knowledge not only about the restaurant & the food, but also the cultural heritage of each course. From the expert team of chef's rallying in the viewable kitchen, to the dishwasher who must have been frantically cleaning each plate, glass and all 2,300 pieces of silverware just our table alone used - we couldn't have celebrated without them!!! We booked this 4 months ago to celebrate 2 birthdays and a half-birthday! República did not disappoint! A must do experience!

Ordered food to go and was happy with my meal What I ate: - Quesadilla: Fresh thick tortilla filled with delicious cheese. You can really appreciate the flavor of the tortilla and cheese. Also really pretty to look at with the different colors. My only gripe was that the tortilla was definitely on the thicker side, but it really let that fresh masa taste come through - Roasted Veggie salad: This hit the spot. Filled with roasted veggies, a sharp slightly spicy dressing, and fresh bitter frisee really rounded out a flavor packed salad. Great on it's own for the vegetarians, and definitely enough to share. - Memelitas: Again you were able to really a delicious way to get another taste of that flavorful masa. These were surprisingly spicy, but no complaints. - Tacos (pork and mushroom): I really loved the super tender and flavorful pork. The mushroom taco was also flavorful and perfect for the vegetarian, full of earthy mushroom umami Pros: - This is probably some of the best Mexican food I've had outside of LA/Mexico. The tortillas were soooooo delicious - Super cute spot, the entrance was in a courtyard - Online ordering was pretty seamless - Menu constantly changing to match seasonal items. I only went a few months ago and it seems like the menu has changed since then - Price was right - Plenty of street parking within a block of the restaurant during lunch time on a weekday - Indoor dining Cons: - None that I can think of Would I go again? What an amazing dining experience! We got to journey through a variety of Latin American influenced dishes while learning more about the origins of each dish and its ingredients. Staff were knowledgeable and took the time to explain the cultural significance or influence that led to each dish's creation and were more than happy to answer any questions we had around the food or ingredients. While not every dish was amazing or perfect everything was at least an absolute joy or surprise to eat. For example the delicious Kanpachi dish utilizes the insect chicatana in its sauce but if the staff didn't had told us not we would be none the wiser. For those less adventurous eaters we didn't really see or taste it. Or the melon salad was a fun take on snacks found in Mexican or socal snack stands. The quesadilla had a surprisingly delicious sweet chili sauce reminiscent of Chinese chili crisp. The only dish that felt lacking was mushroom dish that was texturally similar throughout. While different dishes shared similar ingredients and looks, each was seemingly crafted to highlight different tastes and textures that was a treat to experience and eat. We ended up trying three different kinds of moles, though similar in color each with its own unique taste. Highly recommend coming here with at least one other person so that you can share and experience both the protein and vegetarian tasting options at the same time.

My friend took me to Republica for my birthday. I like being surprised; so I did zero research and read nothing about Republica beforehand. I just showed up hungry. And overall, it was a delightfully atypical dining experience. We arrived for our reservation ten minutes early and were told, rather bluntly I must say, that we're too early and we should take a short walk and come back. My date found it rude, I figured I was just hungry and didn't like being told to wait. Later, the staff did a few wonderful things that demonstrated they really do care about the customers and all was forgiven in my mind. But we ended up having to take 3 short walks and were seated about 15 minutes late because every time we went back, the table still wasn't ready. We sat outside at a small Ikea table on uncomfortable Ikea chairs lit by a cheesy LED light in a dark corner. By the time we sat down, we were absolutely starving and couldn't wait to get started on the tasting menu. The staff went over the drinks and the mechanics of the tasting menu. My date had some dietary restrictions which we talked about with the woman who sat us. She was cool and validating while my date explained that she doesn't eat pork. During the tasting courses, you're waited on by about five or six different servers. No matter the course, no matter the server, they always explained what had pork and what didn't. I was really impressed by that level of attention to detail and commitment to customer service where it counts most of all. Furthermore, every server knows an amazing amount about each dish and happily talks to you about how it relates to culture, history, etc. That made us feel very welcomed and appreciated. After the first few courses, I realized what Republica is all about. Mexican food in America is quite formulaic. Some do the formula better than others. But nearly all Mexican food is designed to be filling, flavored for American pallets, and simply prepared to provide a great value. Republica takes every opportunity to buck that formula. The portions are achingly small and intricate. The flavors are delicate, painstakingly prepared, and perfectly presented like sushi. And, like sushi, the price is up there. Each dish is a labyrinthine showcase of ingredients and a celebration of Mesoamerican culture and cuisine. The dining experience felt like a loud proclamation that Mesoamerican cuisine isn't just cheap tacos: it's as delicate and beautifully complex as French cuisine, sushi, etc. I found myself agreeing. I was delighted by the food and what it represented. Combine the food with a knowledgeable staff very proud to be a part of this culinary proclamation, and you get a wonderful, yet atypical, dining experience that I would recommend. Okay the gripes. I noticed a few reviewers complained that the portions were too small; and I can see that. We left feeling full. But the first few portions are so small that, if you come ravenous, like we did, it's hard to relax for the first hour because you're so hungry and wondering if this dinner is going to fill you up. Being that hungry also makes sharing with your anxiously hungry date a *bit* awkward. I see why they do it that way--bucking the formula and all--but I wish there was a bit more food at the beginning of the meal. Because we spent an hour hungry, we noticed the uncomfortable Ikea furniture and the badly lit patio. For the price, I think they should have nice chairs and real candles. Conclusion Overall, the dining experience was an amazing birthday present I'll cherish for a long time. The food was amazing--clearly cooked with pride by a skilled perfectionist. The staff brought it to life with their explanations. We left feeling full and glad we went. When I recommend Republica to friends, I will tell them to make their reservation for an hour before you get really hungry so you can relax and enjoy the entire experience. And bring a seat cushion...
