Finally, a legit hủ tiếu spot!
Ever since I moved to Washington, I've been on a mission to find a place that does hủ tiếu right and lets me swap in mì. Three years later--boom, here we are. 3 Bros, you have my heart (and my stomach).
Food:
Straight-up solid. The broth? Chef's kiss. Flavorful, not too heavy, and just the right balance of savory goodness. The noodles were on point, and they don't skimp on the toppings (I even asked for extra limes and chives with no extra charge). And can we talk about the pickled jalapeños? If you know, you know. Bonus points for that. I got full halfway through, but the food was so good I forced myself to finish everything--including the soup. No regrets.
My wife got the phở tái bò viên and loved it. She even said the broth was better than our other go-to spot in Kent, and that's a huge compliment. We got our son the bún thịt nướng chả giò, and he cleared his bowl--which, if you have a toddler, you know is basically the ultimate stamp of approval. We ended up taking the rest home since we both got full from our bowls of soup.
Service:
Trâm took care of us, and she was amazing--super sweet and thoughtful. She even made sure our 2-year-old was comfortable, which is a big deal because dining with a toddler is basically a sport.
Ambience:
Clean. Like, actually clean. No sticky tables, no questionable condiment bottles (actually labeled properly)--just a well-kept, inviting spot. It's a decent size too, so you're not elbow-to-elbow with strangers while slurping your noodles.
Bottom line: If you're craving a solid bowl of hủ tiếu (or mì, or both), 3 Bros is where it's at. I'm just mad I didn't find it sooner as we're moving back to California next month T_T
