"This food truck located off of Silverton Road NE in north Salem is a gem of Laotian and Mien cuisine. Owner Sherry Saetern and her husband Lee Keomorakoth opened 3lephant Noodle Shack (you can say it “threelephant”) to share and represent their backgrounds. The name is a play off of the logo, which features three cartoon elephants, each with a bowl of noodles: kapoon, kaopiek, and kaosoy. These dishes are the stars of the cart, all made with vermicelli noodles and different soup bases. Kasoy is a Mien dish similar to pho with a beef broth, meatballs, and herbs, but also quail eggs and ground pork. Kapoon has a red coconut curry base and chicken; kaopiek is a chicken noodle soup. The only downside to visiting the food truck is the gravel parking lot and very limited seating, but a little strategizing can help: Take your food to-go, or call in and pick-up your orders. If I could give this more than 5 stars, I would. Who would have known that this little food truck was gonna serve me the best food I've ever had in my life! My only complaint is that they won't move down to Grants Pass. If you are looking for some fresh amazing flavors, give them a try. You'll never be the same. Now I'm gonna have to go all the way up north just to get my new favorite soup. Kudos to this gentleman and his beautiful wife! If I'm in the Beaverton area any time after March, I'll come back! Thank you!

Came out 1st time on a date; 10/10 I ate the whole kasoy soup so good! For days and weeks still craving it and want to go back. Will be back soon! I recommend it to my co workers friends and families.

If you haven't had Lao food your missing out. I'm from Portland went to Eugene for a job on the way back found this spot. And it's fire! The owners are super nice. There's a eating area 3 that's covered. And TVs if you're trying to watch a game.

The food is always delicious and the portions are very generous for a great price. I can always get at least 2 meals out of all of their dishes, which is great because that means I get to eat their food for even longer each time I visit. All of their noodle soups are fresh and delicious with plenty of herbs and veggies available to add in. Their stir fried noodles (ex. pad thai) and meat dishes (ex. Larb, pad krapao) are always flavorful, and their chicken wings are out of this world! And it isn't just their food that's amazing, Lee and Sherry are always welcoming with a laugh and warm smile even on a rainy day.

Absolutely amazed by this place, my only complaint is that I didn’t know about it sooner! Food is some of the most authentic you can get in the Salem area. Fresh, big portions, and bursting with complex flavors. Owners are incredibly thoughtful and their passion comes through in every dish. We ordered the papaya salad, kapoon, and pork pad krapao- can’t wait to go back to try more!

We drove all the way from Eugene to try this place. There’s not much Lao food outside of Portland soo when I found out there was a place in Salem, only 1 hour away, I had to go. This place is the real deal if you want Authentic Thai/Lao food. From Kaffir Lime leaves to the Mats in the seating area. It’s like someone invited you over for dinner and made you home cooked food. I got Khao Poon, which is my favorite Noodle Soup above Pho and Khao Piak, it’s Curry Chicken Noodle Soup. Soo flavorful and you know it’s made right when you get that subtle kick of spice. My sisters got the Pad Kra Pao and they were blown away. I’ve had many of this dish but this is the best one soo far. Definitely worth the drive and We’ll be back with more people. Also, Owners are very Down to Earth and Hardworking people. Support this small business, you’re not gonna come across a lot of food like this here in Oregon. I’ll Update with some Better Photos.

We love this place! Very authentic flavor, price is good . Best cucumber salad we ever taste, wings are amazing, omelette is wonderful, generous portion. I came with 3 friends and ordered 5 meals , everything just perfect! Highly recommended! Plus the owner is very nice person.We definitely will comeback!

Best Lao/Mien food in Salem. Tried their BBH and now their Kaopoon! Awesome flavor! Definitely will be visiting them at their new location! Worth the drive!
