Dining at 59 Republic was a wonderful experience. The food was excellent — refined, flavorful, and beautifully presented, just as you'd expect from a Michelin-rated restaurant. The cocktails were very good as well. The staff was outstanding: attentive, professional, and genuinely warm. They took great care to ensure we felt comfortable and well looked after throughout the evening. It’s definitely on the expensive side, but absolutely worth it for the quality of food, service, and overall experience. If you're in Valletta and looking for a special dinner spot, this place should be at the top of your list.

From the very first bite to the last, this was an absolutely phenomenal dining experience. Every dish we tried was not only beautifully presented but bursting with flavor and creativity. For mains, the lamb rack and filet were cooked to perfection — juicy and tender with a gorgeous crust, served over a bed of couscous and paired with a silky sauce that brought everything together. Fifty Nine Republic is a must-visit for anyone, prices are affordable and the atmosphere and service amazing! Thank you!

Pleasantly surprised. Very nice athmoshere oppposite Grandmasters Palace. Very attentative service. Good menu with good choices. Food well executed. Mains were very good. Beef Wellington very good. Fish filet very good. For a change a chef that is a real chef with propery training. Only regarding desserts room for improvement. This is just for the kitchen so they can improve: frozen joghurt was not frozen at all. brownie was texture too fudgy. This is going to be my new local eatery in Malta from now on. We used to go to Phoenicia hotel which is simar price level. But their quality has gone down beyond believe. Another case where I do not understand google ratings. This should have solid 5 stars. Whilst other places with 5 stars should not have them.

The atmosphere was based on the fact the restaurant was empty. However the service and food more than made up the difference hence 5⭐. I wanted to try various things so the gang at 67 Kapitali got the rest.

The food is delicious, well presented. I only didn't like the grilled vegetable side dishes because they were like steamed, not grilled, and the blanched french fries. Everything else was delicious. The service is friendly.

3-word summary: Attention to Detail Full summary: The interior is stunning, which I only noticed on my way to the toilet. I was seated on the outside terrace by the outstandingly professional staff. We ordered the prawn taco (2), lobster spring rolls (1), prawn salad (4), and the sweet potato tart (3). The ingredients were fresh, and the flavours were unique and refreshing. My wife had a rose, which she said was the best she had in a while. If I had to make a suggestion, it would be to add a little less sauce in the Prawn Salad, it was slightly overwhelming and masked the flavours of the other ingredients. (Numbers in brackets are my ratings of each in order, 1 is best).

Delicious food. The atmosphere is perfect and the service was even better, our waiter- Cavi was so sweet and kind. Definitely recommend.

This lovely restaurant is located on the main square in front of the palace. It looks incredibly elegant and the food is mind blowing. Not for nothing the chef was named “best Maltese chef” and the menu and creative dishes definitely prove that.
