From the very first bite to the last, this was an absolutely phenomenal dining experience. Every dish we tried was not only beautifully presented but bursting with flavor and creativity. For mains, the lamb rack and filet were cooked to perfection — juicy and tender with a gorgeous crust, served over a bed of couscous and paired with a silky sauce that brought everything together. Fifty Nine Republic is a must-visit for anyone, prices are affordable and the atmosphere and service amazing! Thank you!

The food is delicious, well presented. I only didn't like the grilled vegetable side dishes because they were like steamed, not grilled, and the blanched french fries. Everything else was delicious. The service is friendly.

This lovely restaurant is located on the main square in front of the palace. It looks incredibly elegant and the food is mind blowing. Not for nothing the chef was named “best Maltese chef” and the menu and creative dishes definitely prove that.

The staff are not only professional and attentive, but genuinely passionate about what they do. From start to finish, they made us feel like royalty, catering to every detail with grace and enthusiasm. They were knowledgeable about the menu, offering excellent recommendations that enhanced our dining experience. As for the food—wow! Each dish was a masterpiece, crafted with creativity and precision. We started with the freshest seafood appetizers, which were an explosion of flavors and beautifully presented. For the mains, we had the Beef Wellington and the Argentinian steak, and both were exceptional. The Beef Wellington was perfectly cooked, with tender beef encased in a flaky, golden crust, while the Argentinian steak was juicy and bursting with flavor, cooked to perfection. Every bite was a delight. We finished off with decadent desserts that were almost too pretty to eat—almost. 59 Republic offers the complete package: impeccable service, exquisite food, and a captivating atmosphere. It’s the kind of place where you can tell that every detail has been thought out to create an unforgettable dining experience. A true culinary treasure in Valletta!

Beautiful decor both inside and on the terrace. Very good service, staff was quite attentive as well. The wine selection was beautiful, they also made the best espresso martini! When it come to food, oh my god, the fillet was cooked to perfection and the mashed potatoes were sublime. Highly recommended. Can definitely see why they are Michelin recommended.

I used to really enjoy 59 Republic, but my recent visit was a major disappointment—especially for a Michelin guide restaurant. While the service was the only redeeming part—friendly, professional, and responsive—the food quality has declined to shockingly low standards. The chicken schnitzel tasted and looked like an afterthought, more fitting for a cheap takeaway than fine dining. The “frozen yogurt” dessert? Just a cup of melted plain yogurt with random fruits tossed in. I could make a better breakfast bowl at home. The ambiance didn’t help either—tables were crammed so close together that it felt awkward to have a conversation, while also involuntarily eavesdropping on the tables around us. As for the drinks: fine, drinkable, but absolutely nothing memorable. We paid over €140 and ended up having a proper meal elsewhere. Sad to see how far this place has fallen.

Arrived a little early for our booking but immediately seated. Very attentive service by Abhi. Ordered cocktail first , Bangkok Mule and G& T both served beautifully. We then ordered our meal after being told all the specials. Served a lovely selection of bread. Ordered a Pinot gringo Italian wine at reasonable price. The wine selection was extensive! Our meal was Duck tacos to share...very tasty , then we both had beef wellington with grilled veg and truffle mash and pepper sauce. The beef was amazing, just melted in mouth mine served medium rare and my husband's medium. Great portions. Couldn't do justice to a dessert. Only down points were hand dryer in ladies not working and the next table were offered digestive drinks and we were not! The bill for 2 came to €171 which was ok for a Michelin restaurant. A very pleasant evening.

Food was very delicious! Location of the restaurant beautiful! I wish I can say the same for the service… Place was overcrowded, with both booked guests and walk - ins. For a restaurant at this level, guests should be served much better, detailed. Instead of seeing the staff running around, speaking foreign language between each other, we weren’t even asked for a drink refills, or how the meals were… Im sorry but for the price we paid there for a dinner, this was under expectations. Price of a fine dining, but service of a local grill. At least we enjoyed the food! Thank you for that.
