Yelp
I have not tried the food truck, but the brick-and-mortar hole-in-the-wall location in JP works well as a mostly-take-out/delivery place with a few seats for those who want to dine in. The staff is personable, and the food is great! The owner is proudly vegan, and they offer vegan chorizo (yes!), chicken, and tofu for meats, as well as vegan sour cream and vegan cheeze. I am from TX, and this is the first casual place I have been to in MA that knows how to do nachos! And they make them large enough for 2-3 people. Just be clear about what you want on them. If you say "vegetarian", they may put peppers and onions on if you don't specify otherwise. They are right next door to a bar, and plenty of folks at the bar like to get their food from there. They also offer options for gringos who don't like Mexican food: burgers, fries (including cheese fries with cheese sauce, the way God intended), chicken tenders, all with vegan versions.
