Ad Astra

"An alumnus of several world-renowned restaurants in New York City, the head chef recounts his eclectic journey with a 10- or 14-course tasting menu in omakase style. Dishes are precisely executed with Asian ingredients and a Japanese culinary ethos, especially in the kamameshi course that melds Japanese and European techniques. Also try his non-alcoholic temperance flight with an ingenious mix of Nordic fermented fruits and veggies." - Michelin Inspector

Nice~~~ Really enjoy the experience. When I first arrive I didn’t expect much. However, when I have a taste of the first dish it really opened up my appetite for craving more of what’s coming. After a long day, waiting for dinner this dish plays an important roll of opening my appetite. My second favorite is the proteins. Well all I can say is “Outstanding”. Overall not only the food was good but also the vibe. Have no idea this fine dining experience will play my song “Where is My Mined” by Pixies and other alternative rock. The music reminds us of dining in a fusion style place. Puts some Taiwan three stars to shame. Great work!

We’ve been coming to Ad Astra since before it got its Michelin star. The food is always beautifully presented and full of flavor. Every dish works so well together, you can tell how much thought goes into each one. Still one of our favorite spots, and it never disappoints.

The chef expertly incorporates Japanese and Taiwanese ingredients into his own distinctive, Western-influenced style. One of today’s most remarkable dishes was 皮蛋豆腐 paired with black truffle—an unexpected yet brilliant combination that was absolutely delicious. The menu evolves regularly, with a dish changing every one to two weeks, making it a great spot to revisit. The chef is also highly receptive to feedback, which makes me even more excited for future visits to this already outstanding restaurant.

Absolutely sublime. The combination of flavors are very inventive, often contrasting yet balanced. Service is impeccable. Take your time with the 14 course chef’s menu and you will be rewarded with an exquisite culinary journey. We are fortunate to have such a talented chef as Kevin in Taiwan.

At Ad Astra, the true essence of simplicity is celebrated, yet simplicity is always the hardest to master. Every dish here is a testament to that philosophy, where the focus remains on allowing the ingredients to shine in their natural form, complemented by skillfully balanced seasoning. Each bite lets you taste the purity of the produce, enhanced by delicate and thoughtful pairings. The balance of flavors is impeccable, allowing the natural taste of the ingredients to come through while still offering a delightful complexity in the seasoning. It’s an experience where less is more, and where simplicity becomes the highest form of sophistication. If you’re a fan of clean, precise, and flavorful cuisine, Ad Astra is a must-try.

I have been lucky enough to eat at this restaurant many times now and still each time you can experience something new. On the most recent visit there were many new dishes and also an expansion of the dessert menu. Not only was this an increase of the quantity, you can feel they have been thinking about the overall experience. I have always thought the dessert menu was one of their weaknesses. Now I am looking forward to the next visit and see what interesting things chef Kevin and his team have in store for us.

Chef Kevin never fails to bring his A+ game to the table. Their cocktail pairing is also a huge rec, it’s obvious that they really put thoughts and matching flavors to create new possibilities and sparks! Bravo! Every single visit have been full of jaw dropping goodness. From his ingredients selections and variation of flavors, top notch. Service team is also incredible; attentive to details, very considerate and friendly! Always looking forward to my next visit!!!

An amazing 1 Michelin Star restaurant that uses local ingredients and gives it a special style of the chef. All the dishes are extremely tasteful and not too strong. They’ve all got a unique style I’ve never experienced before. The restaurant itself is very well lit inside and very clean. The place has an open kitchen concept yet it is not very loud. The head chef, an American from New York, came to talk to my party at the end and was a very nice and humble person. He shared with us his inspirations and story.
