Sip Coffee at These Charming Cafes in Portland and Beyond

"One of Portland’s newer additions to the cafe scene, Adapt serves top-notch coffee from famed roasters around the globe. While coffee is the focus here, the minimalist furniture and design give it a modern feel that’s uniquely Adapt. Find coffee from rotating world-class roasters such as Black & White, Denmark’s La Cabra, or British roaster Colonna on batch brew, espresso, cold brew, or Aeropress. Visitors looking for something with a twist should check the specials menu for drinks like a hibiscus rose cold brew or a honey cardamom latte." - Levi Rogers

The Best Non-Alcoholic Iced Drinks in Portland | Eater Portland

"This Brooklyn neighborhood coffee shop quietly serves some of the most interesting coffees in town. The same is true of the cafe’s specialty drinks, boasting two different show-stopping summer specials. The first drink is the matcha watermelon, a summery twist on an iced matcha with watermelon juice and garnished with sour watermelon gummies. The second is a peach mint espresso soda made with peach syrup, club soda, fresh mint, and single-origin espresso from Manhattan Coffee Roasters. Take either to the waterfront, or sip them within the minimalist cafe." - Seiji Nanbu

Google
Another great place for our latte fix. AdaptCafe has a nice place with open spaces and nice seating areas. The barista is super nice and friendly. Both the matcha and cafe lattes tasted delicious. Will definitely be back again.

MUST VISIT! The clean white aesthetic made the space feel even bigger. Plenty of seating for a neighborhood coffee shop. Our 9 year old loved the brownie and home made pop tart! Pastry program is top tier, also loving their support in hosting local pop ups. Noticed the barista is a local latte art winner, and the matcha was elite and so delicious! Espresso and drip were incredible. They are currently using beans from a coffee roaster in the UK. Highly recommend picking up a bag before they run out. Will be back!

Love coming here! I love their specials and how they offer a wide variety of syrups to choose from. It's a great vibe and has bike racks right out front.

This cute little spot is very hip (in the black metal seating and minimalism decor sort of way), very cute. I got the famed marionberry poptart which lived up to the hype. I got a season pistachio drink that ended up being a little too sweet for my taste (I was told it was slightly sweet but was surprised when it was full blown). Latte art was beautiful. The barista was wonderfully helpful and gave a full rundown of the offerings. This is not a work in a coffee shop sort of cafe. The tables are small yet cute. Better to plan for a short visit.

Very calm atmosphere, courteous workers, DELICIOUS buttery and flakey pastries. And of course the coffee was amazing. I had a lavender honey latte and prosciutto/Gruyère crossaint with Dijon seeds and topped with flakey salt. Quality eats here!

Fantastic coffeehouse in the Brooklyn neighborhood. The barista was incredibly nice and made my cappuccino perfectly! A very clean white vibe that was cozy enough to stay and chill for a bit.

Nick really put his heart and soul into this shop and it shows. As the owner and the barista for the day, you know he was giving his best. The coffee was phenomenal. Highly recommend this coffee spot!

Great coffee! $4.75 for a shot of espresso without bubbly water tho?

Yelp
Adapt gets a star for interesting concept. Rotating coffee beans from all over the world with minimalist art house vibes. Adapt gets a star for serving really out of this world coffee, even if it is for a short while, you can sample flavors not typically found in the PNW. Another star for exceptionally well made coffee drinks no matter what I have ordered. 4th star is for reliable service. 5th star is because Adapt presents a calm atmosphere that is much different than the cafeteria vibes down the street at Rose City. Adapt is probably best suited for those who want a coffee on the go. There isn't much seating, but I kind of like that. If you manage to get a seat, you will be rewarded with a quiet, minimal art house to sip some delicious espresso. Adapt is just really nice.

Yelp
I've come to Adapt Cafe a couple times now and haven't gotten around to writing a review. The cafe is located in a nice neighborhood and is a small, minimalist shop. There aren't many seats but there's definitely working space for studying! They have a pretty standard menu, but I especially love their rotating seasonal menu. All of the items are very unique (I mean, watermelon matcha in the summer or gingerbread matcha in the winter??) A while ago, I placed a large order for an event here and the baristas were super sweet and patient with the large order. Everyone said the drinks were delicious and the syrups/flavors of the lattes were strong, without overpowering the coffee. One of my favorite coffeeshops in Portland and I highly recommend.

Yelp
One of my favorite cafes, and partly because they're always nice to my dog. But it's also a very cool, tranquil spot in the Sellwood area with fun seasonal drinks and pastries. My favorite pastry is the everything bagel galette. The barista and servers are always friendly and everyone's really chill.

Yelp
The staff are incredibly friendly and quick! The quality of the coffee and syrups are top notch. I appreciate having them nearby.

Yelp
We drove out from Portland to get to Adapt Cafe, which is more in the suburbs. My friend saw aesthetic pictures online, so we decided to try it out. The pro of being in the suburb: free parking all around and no lines! We parked right across from the shop and went in to order. I decided on the Lavender White Chocolate Latte immediately and also was interested in food. They had a Lingonberry Pop Tart which looked enticing but was a little expensive, as well as some other options, so I decided to settle on the drink. One note is that they do not heat up any of their pastries, unlike other cafes, so you will have to be okay with room temp food. The drink came out really quickly due to no line and was SO pretty! I love the latte art and the lavender seeds on the side. I will say that the lavender definitely overpowered the white chocolate; it seemed more like a lavender latte. My friends liked their drinks and food as well. I am a huge fan of the minimal style of this space. I love that they had some books and magazinies out; like the HONY Humans of the World book! We all liked the decor and vibes so much that we took a group Polaroid here. I don't know if I would drive all the way out for this place again, but it was a good experience.

Yelp
Super friendly barista, beautiful minimalist space with a simple menu. Only thing I wish was that they had more breakfast/lunch options like sandwiches or something. Will be back for sure!

Yelp
Trendy new spot! This cafe may have somewhat minimalist decor but no lack of ~vibes.~ New to the neighborhood, they've got coffee and pastries in an open concept space. Window bar seating and two cafe tables make it mostly to-go but some space to sit and sip. Prices right in line with what you'd expect (~$3-4 drip coffee small to large, ~$3-5 pastries). I think the pastries are from Farina Bakery, not sure where they're sourcing the coffee beans. The coffee was a bit acidic for my liking. Friendly and helpful staff make it great. A great addition to the neighborhood, especially for the folks living in the attached apartments I would imagine.

Yelp
Dropped by a little after their grand opening and the place looked great. I love the simplicity of the aesthetic. Very minimalistic and brutalist. The coffee was amazing: ordered an espresso, cortado, and an oat mocha. There's just street parking but it wasn't difficult to find a spot. Definitely will be visiting again soon :)

Yelp
New cafe with a modern, minimalist vibe. The size of the cafe is quite small so not great for large groups. They only have two small tables and a window bar. Their coffee is delicious, and they also offer fresh parties.

Yelp
Great coffee! I was working at the construction site right in front of the shop and the owner would open his doors a bit earlier for us to get our coffees. The service was fast and the ambience was welcoming as well as relaxed. I would highly recommend this place. I recommend the lavender white chocolate mocha latte.

Yelp
Cute cute minimalist cafe with great design. Fun for people watching. Super high quality coffee, nice pastry selection, and in an up and coming section of Portland. The owner is really kind, too. Space for about 8 inside, with a window with 4 stools, and two small tables with a bench on one side and a couple of chairs on the other. Some cute bench seating outside, too!

Yelp
I went to this place two days in a row while staying in Portland before heading to Corvallis to start college. This is the best coffee place I've ever been to and the staff is super friendly. I felt cared for in the small talk that created a connection. As someone who loves interior design, the minimalistic aesthetic creates a comforting vibe. I had the brown sugar pumpkin spice latte and the maple cardamom cold brew with oat milk and it was a perfect balance that was not to overly sweet or bitter. The Brune cookies were delicious in the flavors chocolate fudge and gingersnap, vegan too and was happy to find since I know they are sold at Erewhon in California which a little far away. I'll be back on the weekends taking the Beaver Bus just to get a coffee and a snack. My father got a cappuccino and a sun dried tomato Galette. Shoutout to Nick for being the best barista ever!

Went here for the first time today. Perfect coffee and delicious pastries. And beautiful, modern interior. Excited for this new coffee shop!

Yelp
Fantastic all around! Great beverages and the savory galette was maybe the best thing I've ever eaten. Exceptional service and pleasant space. We will return!

Yelp
Bright beautiful space, well priced, delicious specialty drinks; what more could you ask for?

Yelp
Beautiful neighborhood coffee shop, owner is super friendly, delicious coffee, and really tasty pastries. Highly recommend!
