Inside the Meticulous Process of Making Bonito Flakes in Japan | Eater

"A Tokyo restaurant where chef Kanchan Adhikari steeps katsuobushi to make a dashi that he uses in a green curry with golden-eye snapper, combining the broth with spinach, dill, cilantro and Nepalese spices such as white coriander and cumin. Adhikari says witnessing the months-long production and building close relationships with suppliers deepened his respect for the ingredient and made him more thoughtful about how he sources and uses katsuobushi." - Jess Mayhugh

Tiny restaurant in Nakamuguro. Very cozy, natural and creative Nepalese cuisine with touch of Japanese essence. A great combination spices flavor and those ingredients. They were attentive and friendly. Small seatings in a relaxing atmosphere. I love it.

Some of the best dinners of my life have been in this restaurant. Kanchan is the real deal. Each meal is thoughtfully prepared. Menus created with what is grown by the farmers he works with. Curries, fish, soups, dessert. These words do not come close to describing what were were eating. A few of us cried during our meal together. I have eaten here at least 5 times, and this time decided to bring my closest friends with me. Kanchan and his team cooked for us like we were visiting his home. He mentioned to us that his mother even stopped by in the kitchen a night prior, so he decided to cook us one of her recipes. We all were drooling. If you drink alcohol- GET the pairings. If you don't (like me), he and his team will serve you a spirit free option as well. My favorite was the chai tonic... that he bottles and sells. Get that and thank me later. My entire dinner table purchased a bottle to go. Just go. Please. And when you do, tell him Aisha sent you!

Came here with my girl friends for my bday dinner. I've always wanted to come here but never had the chance so when my friend surprised me I was so excited to try! You can have high expectations before coming, because rest assured everything was perfect: dishes that are so creative and depth in taste, atmosphere, friendly chef and staff, plates and utensils, and even the bathroom soap! I can tell the owner and his wife put so much effort into every single details which I really enjoyed. Love how the menu changes everyday depending on what they get. Wanna go back asap!!!

I had the pleasure of dining at ADI, a fantastic Lebanese restaurant in Nakameguro, Tokyo, with my partner. We had the course menu, and it was an absolute delight from start to finish. Each dish was thoughtfully prepared with a refined presentation that showcased the chef's attention to detail. The warm and inviting ambiance made our evening even more special, and the staff's attentiveness added a personal touch to the experience. The flavours of the food transported us on a journey from Nepal through Japan, blending tradition and creativity in every bite. For anyone looking to enjoy an exceptional dining experience that celebrates Lebanese flavors in Tokyo, ADI is a must-visit.

Wonderful true authentic Indian Nepal restaurant in Tokyo, in my 22 years in Japan I have never had the opportunity to have such an elevated Indian cuisine. You can access from Nakameguro which is very developed and trendy station.
