Unbelievable, dream-like, art-in-fine-dining experience. Aldolfo is not only a must-do in Toledo, it is a reason to visit Toledo. Exquisite food and wine pairings created by a small, dedicated, exceptional team. We were transported, starting with the invitation to see the 9th century labertine wine cellar in a separate building, blocks away, under the bustling crowd in the streets. Then by a progression of courses and wines that was decedant, balanced, beautiful interpretations of the best Spain offers, from the rich glass eels to the thin, impossibly crisp skin suckling pig. We started with wonderful oysters from a small producer in the North, topped with caviar and a few drops of lime juice. A dish of sweet parsnip puree was lavishly topped with black truffles table side by our wonderful server, Cecilia. The final dessert was a gorgeous blown sugar pomegranate. Stunning. The somolier Michelangelo made each wine an experience for the senses, not with wordy explanations, but with perfect presentation, and thoughtful, meaningful pairings. Make a reservation and go before their likely Michelin star arrives and it becomes impossible to get a reservation. If you are in Toledo overnight, definitely go to dinner, which is much quieter and easier to reserve. Thank you Adolfo!
