The tasting menu aka Aji Experience is quite a good start for Peruvian Japanese Cuisine, the presentation is terrific, the taste is great except for the slow stew beef. Service is impeccable. Although most seats are open to the Spectacle plaza of MGM Cotai, but it’s still quiet at a Saturday lunch, perhaps due to fewer visitor to the property compared with other resorts. Price is a bit steep, but you could get discount from Alipay or register the MGM membership (15% off for the latter).

This restaurant features Peruvian-Japanese fusion cuisine. The dishes are very special but taste a bit rich for me. Service was excellent. I was particularly fascinated by the views over the animated LED displays surrounding the atrium.

Food: 4 stars, service 3 stars, environment 4 stars, price 3 stars. Overall 3.5 if I'm given the choice. A Peruvian x Japanese restaurant with a lean towards Peru than Japan. Menu also includes raw French oysters and a type of fusion sushi that's seared with a fire torch. It is located at the floor MG, half way between the walkway M and ground floor G, overlooking the massive area of the hotel, a pleasant scenery albeit missing some background music (only ambient background noise). Restaurant itself consist of a sushi bar type seating as well as mostly square table for 4 person. Decorated with sun type resort umbrella to complete the look as if it's outdoor because of its location under the impressive glass roof of MGM Cotai. Food are beautifully prepared like fine dining gastronomic restaurants, inspired from Peruvian Street food in some case. Taste were very good, well balanced seasoning and mixture of spices, use of secret ingredients such as "Tiger's Mother", a pale red colour sauce made from fresh fish, lemon and chilly pepper (see pic of the scallop White fish sashimi mix with crispy sweetcorn). Services were unfortunately poor overall, for a 5 star establishment the staff were friendly but unprofessional, the receptionist failed to read my friend's English first name and mix up with a male name (Michelle became Michael) and challenge us for being the correct persons who booked the table (restaurant is small and popular thus not easy to make reservations, lunch requires a week in advance at least, longer for dinner). Reservation was made using online system with emails so the names were clearly stated, that was a first for me even in Macau for failing to read. That was a bad first impression. Then none of the staff confirmed or check with us for any food allergies, which is a big No No for any high class restaurant (by location and price). Then comes the Peruvian Street food raw fish scallop dish, prepared by the chef right in front of you mixing ingredients and spices, only to show me mosquitos lingers around the raw ingredients - quite off putting even though it's hard to prevent this in an open air restaurant, dish was prepared with the secret ingredient "Tiger's mother", as shown below pic it's white colour sauce, different to my description above, as only half way through the dish the chef reappeared stating he forgot to add the chilly pepper sauce in the mix... That was terrible and embarrassing for any high class restaurant. No apology were given for this. Dishes were well explained by the staff and were friendly overall, despite the lacking in experience. Price are on the high side, the lunch set appears great in value (MOP 488) given you get to try a number of their signature dishes with the price of their one signature main dish (MOP 480), but they don't say how small they downsize them making decision making slightly more difficult, when enquired they could not describe either, saying contradicting statement of "similar but half in size" which is odd. Pictures attached were Al la carte, as we were sharing with one other. I try to add price per my memory in MOP in the description below. Will I visit again? Probably, but lunch only, the menu is the same lunch and dinner but without the lunch set, the main course selection menu is large in comparison to anything else, at the time of visit it had 3 types of starters, 4 sushi, 3 types of marinated raw fish in chilly sauce, a few salads, but about 12 main dishes. 4 distinctively different deserts were also very attractive. The menu regularly changes per my understanding. Despite the lacking in staff experience that is typical in Macau.

A Peruvian-Japanese fusion cuisine restaurant in the MGM. Personally being a Japanese myself, I found the dishes here quite interesting. Maybe its “Peruvian” style is stronger than the “Japanese” essence, so to me most of the dishes were quite new stuff. Overall, good restaurant. A bit pricey but consider it’s located in a town full of casinos, why not you earn it back after having a drink or two?

Aji is one of the feature restaurants at the recently opened MGM Cotai, beautifully located on the second level overlooking the unique Spectacle attraction area of this new hotel. Opening hours are 11am to 3pm and 6-11pm daily (Closed on Mondays). The new restaurant is the creation of Chef Mitsuharu Tsumura from the world-famous Maido restaurant in Lima, Peru. It specialises in Nikkei cuisine, a fusion of Japanese and Peruvian ingredients, for which Maido takes it fame. As such, it is a rather unique restaurant to try during visits to Macau. We dined at Aji on the first weekend they were open and feel it has the potential to become a great restaurant here in Macau. During our meal, we found the execution from the kitchen to be very good. In fact, we later discovered that Chef Mitsuharu Tsumura himself is overseeing all matters in the kitchen at this point in time. Not sure if he will remain in Macau or depart once the restaurant is fully settled in. However, if you dine there now, there is a good chance Chef Tsumura himself will be preparing your dishes. During our meal we tried the Wild Salmon Nigiri that was just fine. This was a safe order and something that can be enjoyed by anyone who likes sushi. We then tried two of their Maido Signature dishes. The first was the Nikkei Cebiche. Seafood and other ingredients were fresh and tasty. We found this ceviche to be quite sophisticated, strongly-flavoured. It packed a real punch taste-wise. Perhaps not something everyone will enjoy, but if you like ceviche and strong flavours, this is one to try. We also tried the signature Short Rib 50 Hours that was exquisite. The beef is so soft, tender and evenly cooked, a result of sous-vide method of preparation. Coated in a slightly sweet glaze, this tasted fantastic. The rib was served with crispy, garlic potato and rice naan, which we found to perfectly complement the rib. A pricey and small dish but very memorable as well. We will definitely order the Short Rib 50 Hours the next time we dine at Aji. For desserts we tried the Amador and the Tofo Cheesecake. The Amador is a safe order for chocolate lovers and tasted very good. However, we were more impressed with the Tofo cheesecake, which had a surprising amount of preparation put into its construction. This was beautiful and delicious dessert, another memorable dish at Aji. As much as liked the food and give praise for the execution in the kitchen, much less can be said for the waitstaff service who clearly remain in need of much training. During our meal, we found staff unable to communicate much about the dishes and lacking important knowledge of Nikkei cuisine. They were also lacking coordination in how they served tables, creating an uneven experience for dinners. In short, problems a plenty in this department, something they need to work hard at in order to get right, especially given the calibre of restaurant they are trying to emulate in Maido. In the end, we loved the food but had to endure noticeable teething problems when it came to the service at Aji. If they can sort out the latter, dining here will be a great overall experience and something one can look forward to in Macau.

Worse restaurant experience ever. I was refused entry by the staff because of the “dress code,” even though I was wearing decent shorts — nothing inappropriate or sloppy. The sign clearly states that guests should not wear bathrobes, swimwear, flip-flops, sleeveless tops, or open-toe shoes. I wore none of those. It felt like the staff just made up their own rules and used “dress code” as an excuse to turn me away. Completely unacceptable and unprofessional. Never coming back, and I don’t recommend anyone else to eithe

I celebrated anniversary with my boyfriend here. The food and the teste is very special. You will find different teste that you don’t try before. The service also very good and the waiter is nice.
