"A native of Mersin, Chef Deniz Temel’s culinary journey began at the age of 13 apprenticing alongside his dad’s friend, a fisherman, while attending the tourism vocational high school. He’s been a chef for 11 years now. He describes his own gastronomic repertoire in two ways. First: discovering the ingredients and then combining them using techniques known only to him. The whole notion of creating something new enthralls him. Second: deconstructing, strengthening, and recombining traditional dishes – that is, learning a classical recipe and re-making it from the best possible ingredients. He doesn’t reinterpret it; rather, he makes it sing. What he enjoys the most when developing his repertoire is discovering what he can do with ingredients with the potential to generate income for an entire region or city apart from making local dishes. However, his true magic lies in using just the right techniques and timing to combine and present the ingredients perfectly, without altering them in any way. He also likes to turn food into a game that plays out through the texture of the food or a hidden message concealed within. But his two biggest sources of inspiration are travel and ingredients. He employs what he’s learned from other restaurants both here in Türkiye and around the world to highlight his ingredients, and – more importantly – preserve them. He’s always seeking new ways to add value to and elevate the ingredients in his kitchen. Firmly believing that his restaurant ought to foster sustainability, he pours tons of research from books, the Internet, and other sources into everything he does. He focuses not on the goals at the end of the road but also the road itself and he conjures up food stories for himself in which the road is his goal. Visited from NYC. I soled dined here. Amazing food & service. My server Oscar did a great job explaining everything. Really enjoyed how they spaced out the food. The rooftop seating was also amazing. Highly recommend getting the Anatolian tasting menu.

This could be my favorite restaurant yet in Istanbul,I don’t have words to describe the food and service this place offers,it was very unplanned going here as I just searched on google 😃 but glad I went. It is expensive (6000tl a person) but so so so worth it,just sit down,tell your waiter what you can/can not eat. And you will be more than amazed. There are bars and clubs in the same area as this restaurant so in case you want to continue your evening after a scrumptious meal you will find one right downstairs. I am definitely going back here again and I can’t wait,the service is really good and if it’s busy just be a bit patient and you will be attended to. Like I said just sit and enjoy yourself, if you don’t like the food here sorry but nothing can ever please you! Because YES EVERYTHING IS REALLY REALLY SO SO SO SO DELICIOUS

Definitely one of the good fine dining spots in Istanbul. We choose Alaf among many other alternatives and it did not disappoint. From service to the freshness and uniqueness of the food, everything was top notch. We selected Anatolian tasting menu and create your own menu options. The well known Anatolian dishes were served with the creativity of the chef. The main dish I choose was sakarat and didnt have such well done sakarat for a long time. The appetizers, desserts and surprise dish they brought over were all so delicious. Having these unique restaurants in Istanbul definitely added memorable experiences to our Istanbul trip. Servers were extremely kind and knowledgeable and first thing they asked was any dietary restrictions and they followed through our dietary choices. Many of the items in menu can cater to vegetarians

Went here last night and it is arguably the best meal I’ve had all year. Absolutely fascinating, so many new flavours and things I’ve never eaten before. The staff were incredibly welcoming including the Chef who explained some of the key dishes to us. All of this set by the water in a beautiful old house. Would definitely recommend this place.
