"Flan tends to be the local dessert of choice while tourists typically go for the crema catalana. So what’s the difference? Both are custard-based desserts with a caramel topping, but flan is denser and eggier than crema. More importantly, flan is served cold, giving it the edge in the hot summer months, as it slips down easily, cooling you from the inside. The €5 flan at Varmuteo is as smooth and creamy as any freshly churned artisanal gelato, and jiggles satisfyingly on the plate.
