"My favorite lunch pit stop, though, is Ali Pacha, one of the most progressive restaurants in South America. After training at London’s Cordon Bleu and working at Gustu, owner Sebastián Quiroga saw a film about animal welfare and had an epiphany: La Paz needed a vegan restaurant. The menu at Ali Pacha features roots and shoots, flowers and fruits: all exquisite to look at and thrilling to taste. I have crispy palm hearts, freshly whipped coconut butter, an “ash” made from beet, sweet quinoa, and ice cream made with cupuaçu from the rain forest. 'It’s not unrealistic to think of our native cuisine as largely vegan,' he says. 'Before cattle and sheep were introduced, the Aymara ate a diet of vegetables, pulses, and grains.'"

This was a very welcome stop on my La Paz trip. I ate here twice. The service was competent. I was very glad the menu featured Bolivian food and wine. Most of the dishes on my 5-course meals were very good. Only one was great: a tomato sorbet with burnt cinnamon. On my second visit (Friday night,) they said they couldn’t open a bottle of wine, since the restaurant is closed on weekends.

Beautiful restaurant & wonderful service! Waiters spoke English and explained each dish very well. All food was vegetarian and we chose the extended menu and had 11 different plates! A few were incredible and really wowed us! And others weren’t so special. We had a wonderful experience otherwise and had a really interesting wine as well!

I was looking forward to discovering this restaurant for christmas night, drawn in by the enthusiastic reviews and recommendations, but I left quite disappointed, perhaps because I'm not a vegetarian. Although the chef’s creativity and his desire to combine flavors were evident, I found that almost all the dishes lacked depth in terms of taste. There was a clear intention to innovate, but something seemed to be missing in every plate, with the notable exception of the vegetable tartare, which was truly perfect. My companion also particularly enjoyed the last dessert. We opted for the 10-course surprise menu with wine pairings, for a total of $170 USD ( obviously very expensive compared to the wine pairing) for two people. At this price, and after dining in restaurants offering impeccable gastronomic quality for less than $35 (2 entrances + 2 plate + 2 cocktails) for two like Manqu’a Restaurant. I expected a top-tier culinary experience. Perhaps my expectations were too high, after enjoying excellent meals elsewhere in La Paz. However, it’s worth mentioning that the service was impeccable: attentive, professional, and pleasant, which certainly made our meal more enjoyable.

Fully vegetarian restaurant with a set menu and drink pairing. Food options with 3-5-7 courses menu and drink options of 5-7 pairing to food. We had 5 courses paired with 5 drinks and it was very interesting how the food elevated the flavour of the drinks!
