Al Kumah is hands-down my favorite spot in Paterson for Arabic/Syrian food. It's not fancy, but the food, service and prices can't be beaten. The first thing you notice upon entering the restaurant is two enormous sizzling shawarmas (chicken and beef) rotating on their spits as they get crispy and delicious. You're also hit by the wonderful, enticing smell of roasting meat. I promise you, even if you just finished a five-course meal, you'll suddenly be hungry again. It's this beef shawarma, that makes me drive 30 minutes and spend another 30 minutes searching for an elusive parking spot nearby. It's that good, and incredibly inexpensive. At just $6 for a shawarma wrap, I always get two (and you should too. Trust me!) You get a choice of pita or lavash bread for the wrap. Go with the lavash. It's fresh and soft and holds up to the extremely juicy ingredients very well. They slice the shawarma of your choice off the spit freshly for each order (no hot trays here!), add sliced onions, pickles and tahini (and hot sauce if you ask for it), and then wrap it tightly. Then after a quick dip in the drippings from the spit, they give the wrap a quick bit of flame from the rotisserie and crisp it all up on the griddle. The combination of the simple ingredients, the incredibly flavorful shawarma meat with those crispy charred bits, and the freshly grilled bread make it one of the truly great sandwiches you will eat. I should also mention that the two brothers running the store are a couple of the nicest guys you will ever meet. They're clearly proud of their family restaurant and the food they make, and they should be. Definitely try Al Kumah if you're in the area, but remember... get two!
