Ristorante Alle Corone - world-class mastery of flavor and cooking technique for all
Recently (29/6/2023), my wife and I and two other couples dined at Ristorante Alle Carone, located in the exclusive Hotel Ai Reali in Castello. The ambience is contemporary, relaxed, and intimate, limited to about 6 tables. We savored the six-course tasting menu. Highlights included an eclectic collection of cicchetti (dabs of whipped pecorino and fig on crunchy polenta chips; tasty cheese sculpted as a bright red tomato on a bed of polenta; cuttlefish crudo); tender, seared swordfish marinated in spices, sour cream, and pomegranate; fresh, whole squid stuffed with cod, creamed potatoes, and carletti (sweet, mild and fruity); hearty spaghetti with octopus ragù, garlic and chili pepper; delectable steamed turbot fillet, covered in a Cantabrian anchovy mayonnaise (dreamy umami flavor), garnished with radish and tatsoi; and tender, roasted pork belly with snow peas, kumquats and chives mayonnaise, which lent a sweet, salty, and citrusy flavor. Kudos to Chef Mauro Catiello, who graciously visited our table, and his dedicated staff. With his culinary artistry, mastery of flavor and cooking technique, I envision a Michelin star in his future. We look forward to our next visit.
