Alma is such a special Culinary Gem 💎 in Uvita, located near the Marina Park. We were sold on a combination of a friends recommendation to go to Sebas, as their favorite restaurant in the whole country! And this restaurant being by Sebas. They had ample parking, which was nice and were seated right away.The ambiance here was unique and felt very Costa Rican ( the spirit of Pura Vida and the worlds friendliest and most hospitable people was radiating!) with the darkness of the jungle lit away by beautiful candlelight. It was so cozy! Our waitress came and we were amazed by the menu. I’ve never seen a restaurant take allergies so seriously; which was really appreciated. So much so Chef himself came out after we ordered to tell me exactly what he did and how he prepared it and that I was in good hands. I was really impressed by that and other small details of service… we were met with some slight availability problems being later in the day to order and be served , but were assured we wouldn’t be disappointed. Once the tapas started coming… boy, oh boy! were we enchanted and encouraged! The food was divine! I’ve never had a roasted red pepper, taste that good with sea salt and high quality EVOO! If they could transform that and our other plates we’re sure we would love our entrees! You know when you start to eat somewhere, and the first bite has you hooked because it tasted so good and prepared so well, the way food should be and always?! It just puts you at ease and you truly enjoy your meal and company? Yeah… it’s that sort of place and that level of good!
On top of that, our waitress was really great! She was attentive and warm and before our entrees came, she had came back with some news that they “found” enough chicken in the back to plate an entree for us, since we shared how we set out to try their chicken 🍗 🐓.I don’t imagine this happens often where they can make this happen (though I wholeheartedly believe that if they can, they 100% will!) so I don’t want to mislead anyone reading this, that this will be possible in the same scenario. But like I write above, I believe fully that if it, or anything is within their power; they will do so for you, their esteemed guest! Which is how they treated everyone! The kindness the entire staff and chef showed this night, really made an impact on me and my wife , on our honeymoon. Unexpected… they didn’t have to do that but they heard that and “went the extra mile” (if you don’t know this phrase it means: to put in extra effort when one isn’t obligated to) which really was so heartfelt. It actually took me back to my culinary school days and why I myself wanted to be a chef and the chefs I admired. The chefs that when they hear you came from any distance to try THEIR food, THEIR DISH, where they sell out but will (properly) procure one more dish out of this sacred relationship between food, the one who prepares it and the one who savors it… and to that I totally respect, honestly. Now, how did it taste? Well I asked chef to do a pop up in NYC! I’m sure he’d sell out and do very well! It was heavenly! One of the most tasty chickens of my life! I wish he bottled his jerk sauce , it was so fresh and unique! Spiced, hot to wake up your tongue but not so hot you’re grasping for water or air. Just flavor! The special of Filet Milanese was delicious too! My wife and I cleaned our plates and I have to say this place is truly 10/10! You’d be grateful to dine here and experience them, as they’re culinary memory makers! Truly masters of the craft and working from a deep knowledge of the culinary arts! Don’t sleep on this place, it’d be one of the biggest mistakes of your life to not have this experience! So good! Thank you Chef and thank all the staff! Shout out to (and look for ) Vicky, Josafath, Rebecca, & Jose! You guys are great! Thanks for being such a special memory for us and for also being such awesome people!
