"Diners are faced with a dilemma in the restaurant of this magnificent hotel. You can opt to dine in the inside space, with its Second Empire glass roof, crystal chandeliers and imposing china cabinet, or on the gorgeous terrace, with the gentle sound of water tinkling in the pools and fountains and the scent of typical Mediterranean fragrances hanging in the air. The Chef cooks up gourmet cuisine with Provençal overtones and a backdrop of original and striking associations." - Michelin Inspector

The tuna carpaccio appetizer was excellent! Fresh and flavorful. In fact, the tuna dishes at this restaurant seem to be a strong point. We also really enjoyed the tuna tartare we had as a snack earlier. The tuna tartare lunch came with perfectly fried French fries, which we enjoyed very much! However, the main courses we had for dinner were a bit underwhelming. My friend found the côte de veau en croûte de sel quite unpleasant(?). We feel bad about it because it seemed that they put a lot of effort in making it. Maybe the sauce was the problem? The fish dish I ordered was okay though. Btw I really liked the extra dessert they offered at the end (a choux pastry). The service was excellent and professional! One more thing, be aware of mosquitos !! So many of them.. I got bitten 5 times. You need to apply mosquito repellent ahead of time.

We visited for a celebration of my 50th birthday. The place is amazing and beautiful, and the food was excellent, however the service continued to deteriorate during the night. We ordered 5 really good wines, and at the last order they just looked tired at us, that we really wanted another one? We ordered the big lobster menu plus the cheese selection, so our dinner took hours, but in the end most of the waiter were gone, and the remaining ones looked and acted utterly tired and unengaged. The knowledge of the so-called sommelier was limited, and one of them even got angry and irritated, when we told him more about a wine than he knew. Not acceptable for a restaurant at this level, not to mention we used a lot of money and also gave a large tip, without even getting a thank you? That was a mistake and waste of money. Such a shame for a very nice place, that the service does not live up to the ambition of the place.

Not worth it. Food and service don’t worth the cost. We had to wait 20 minutes for them to get our order as it seems only one waiter takes orders, and an hour for the main dish. The first dishes were disappointing, with the red tuna missing a good sauce and the lobster first dish simply with disappointing tastes. The bread is served cold, without butter and salt, which is a shame as it has potential. Main dishes and Deserts were good, but I guess the rest damaged the experience.

Good restaurant in one of the best Hotel of Aix-en-Provence. The place is very smart and elegant. The personnel is nice. The chef is good and cooks traditional dishes in a good way. Very good selection of cheese. I probably would have loved a bit more fantasy in a restaurant which clearly targets a Michelin stars.

Stopped here for a latte and a snack on our drive to Avignon. Amazing surprise to find such immaculate atmosphere and wonderful service.

If I could give this place negative stars, I would. TERRIBLE. Not just the worst meal in France, but the worst service I’ve ever had in my life. We bonded with other tables about how bad the service was. No one came to take a drink order for 45 min. Once they did, we thought we’d do the wine pairing. I’m sure it was great, but we wouldn’t know since they never came to bring the wines pairings!!! We nicely brought it to the staffs’ attention, but no one apologized or cared. They did nothing. We were never poured anything - not even water. The table next to us had a bug in their wine glass, no one said we’ll replace it. The staff was miserable … the whole restaurant felt it. Everyone was sitting at their tables staring at each other laughing over their own bad experience. We ended with an honest mistake of dessert falling upside down onto the table, which was the best part of the meal because we all at least got a good laugh and we’re smiling. I felt bad for our server because none of the other staff tried to help him clean it up. He was the only friendly waiter too. For such an extremely expensive meal, you’d expect great service and for the cheese to be included in the price. We dine in Michelin starred restaurants all the time, so we are accustomed to pricey meals, but the price here was actually insulting. The restaurant should be ashamed.
