I have to start saying that I am not a fan of super expensive food as sometimes it can be just pretentious without any context but this place is totally worth the price. The team is focused on providing a real experience and real insights on the food you are receiving. I was really impressed on how they used one of the simplest products to create one of the best dishes I have ever tasted. The staff was super nice and very easy going but keeping the experience level to what the restaurant represents. I really enjoyed my dinner and will happily return.

The amount of thoughts that the chef had put into the dishes are insane ✨💯 the ambience, little details were 10/10 We have had good conversations with the waiter and he recommended some really good wine. We cannot be more pleased with this experience. 💚 Our stomache is full but heart is fuller ☺️

Incredible place, feel like home again with their food. This just more than food, is nostalgia, memories, passion, pure flavor in every bite. I will be back for sure. Wine list maybe not large but impressive bottles and knowledge from staff that also are really welcoming and lovely.

A well deserved Michelin star for Javi and his team! Highly recommend to have lunch or dinner here and spend the night in Tolosa. The tasting menu is spectacular and very much focused on local products from small producers close to Tolosa. The wine list is extensive and has some funky wines as well as the traditional ones. Our favorite dishes were the Hake and the Leek.

This was a fascinating, if flawed at times, meal. A few notes. We arrived a few minutes before our reservation to find the door locked, and no one answered the phone when we tried to call. They did eventually open a few minutes late. Not a big deal, this is Spain after all, but don't be nervous if the restaurant appears closed when you arrive. The food on the whole was excellent. Hyper local, well executed, with some fascinating flavors and intricate compositions. The young horse dishes were well made and interesting. Several sea food courses were well done, and there was a corn biscuit what was fresh and crunchy. They also served several house made, non alcoholic, drinks to pair with a few of the courses that were excellent, including a onion drink that smelled like it would be undrinkable, but was actually balanced and excellent. Having said that, the interesting platings were often difficult to eat off of, with swooping sides or flatware that was too thick. We both commented on the difficulty of eating several of the dishes. They also focused maybe a little too much on foams and technique's that didn't add a lot of flavor. One dish in particular had a foam that disapated the second you touched it. I still have no idea what it was. On the whole this was an excellent lunch and felt like a decent value. The space is quite small, and there were only two other diners there with us that day, so it felt intimate and service was excellent. Best of luck to Ama!

A great place for a Modern/traditional very good basque tasting menu . Not a Michelin star yet but surely on its way. It’s a small place (6 or 7 tables in total) and either the chef or a friendly waiter will explain every dish and the concept behind it in Spanish English or basque (and a little French), whatever your language of choice is. Supper easy to get to with a 35 minutes ride on the cercanías train from San Sebastián. Really recommended for foodies and everyone who would like a tasty, intriguing culinary experience.

Exceptional, faultless, well cooked food. Modern twists on classic basque food, what a treat! Sourcing from local producers, Ama taberna has a flexible menu to what is in season. With a emphasis on basque, we had a lovely waiter explain everything on the menu who then amended the portions to allow us to taste every dish we wanted to; a flexible degustation menu! The wines were well paired, and every bite a joy! The local mushrooms are confited, grilled and served with a yolk sauce...Amazing. Best chocolate soufflé with chocolate ice cream drizzled with olive oil and the pollen ice cream and burnt milk ice cream were all sensational! This place is highly highly recommended!

Fantastic foodie experience 🙌 I took the train to Tolosa specifically to try the sweetbreads here. My friends in San Sebastian told me AMA makes them best. I got here just a few days before the world went sideways...I was able to walk this lovely town and enjoy a leisurely break at this Taberna. It is a tiny place, locals book it as they know the quality, but it is worth finding your way in. I had the sweetbreads and the taste was sublime. My only regret was not ordering the larger plate lol. Then I ordered the lobster salad, again recommend by friends ...it was great... not what I expected though...I forget the Spanish love of mayo ... the base is a mayo and lobster laden delight which is then topped with a delicate lobster crudo. $$$ but a special ingredient, served with finesse. The owners are incredibly friendly and professional. Once this world rights itself again, I hope Ama Taberna is still here sharing their wonderful food
