Today, I had the pleasure of dining at Amarantos. From the moment I stepped into the newly designed place, I was struck by the elegant blend of modern sophistication and classical warmth—a nod to the restaurant’s name, derived from the Greek word for the amaranthus flower, symbolizing renewal and permanence.
The intimate setting, with its cozy counter seating for eight, creates a welcoming yet exclusive atmosphere. The interior, a harmonious fusion of French elegance and Japanese sensibility, set the stage for an unforgettable dining experience. The staff, fluent in English and exceptionally attentive, made me feel right at home, with Chef himself occasionally greeting guests, adding a personal touch to the evening.
I opted for the tasting menu, which showcased Chef’s mastery. Each dish was a work of art, balancing carefully selected seasonal ingredients with innovative techniques.
The wine pairing, featuring a curated selection of red / white / orange / rose wines and champagnes, complemented each course beautifully, with the staff accommodating special requests with ease.
