"Set to open in spring 2022 at 6553 Rue St-Hubert, this day-to-night Vietnamese haunt from Michelle Vo evolves her online Pasthyme into a narrow, elongated 1,300-square-foot restaurant where she imagines waved wooden ceiling panels, an imposing concrete bar and plenty of greenery for a look that sits between industrial chic and warm organic. The name roughly translates to “eat and have fun” (and cheekily echoes the French word for anchovy, a nod to fermented Vietnamese fish sauces) and doubles as an homage to the mother who taught Vo to cook and helped make the project possible. Lunch service will focus on deeply flavoured, often fiery bowls of noodle soups and Vietnamese coffee made with beans Vo plans to source from growers in Vietnam; evenings will shift to dim lighting, louder music and intricate spreads meant for sharing — menu items will depend on season and local produce but may include bánh bèo and bánh bột lọc — alongside natural wines and cocktails (soup will still be available for anyone who missed it at lunch).
