"Chef Álex Quessep created the original Zaitún in neighboring city Barranquilla in order to honor his Colombian-Lebanese roots, placing equal weight on kibbehs and carimañolas. Mary Stella Zapa and her husband Fabián Cerro opened a franchise outpost to bring the unique flavor and warmth of Quessep’s fusion to Cartagena. The menu, orchestrated with Quessep, features seafood, falafel, hummus, stuffed cabbage and stuffed grape leaves, and their take on Cartagena-style sirloin cooked in a sauce of beef stock, cane sugar, vegetables, and clover.
